½ cup unsalted butter, melted
2 cups whole milk, warm to the touch
½ cup granulated sugar
2 ¼ teaspoons active dry yeast
5 cups flour, divided
1 teaspoon baking powder
2 teaspoons salt
¾ cup butter, softened
¾ cup light brown sugar
2 tablespoons ground cinnamon
4 oz cream cheese, softened
2 tablespoons butter, melted
2 tablespoons whole milk
1 teaspoon vanilla extract
1 cup powdered sugar

Steps:

  • Generously butter two disposable foil pie/cake pans.
  • In a large bowl, whisk together warm milk, melted butter, and granulated sugar. The mixture should be just warm, registering between 100-110˚F (37-43˚C). If it is hotter, allow to cool slightly.
  • Sprinkle the yeast evenly over the warm mixture and let set for 1 minute.
  • Add 4 cups (500g) of all-purpose flour to the milk mixture and mix with a wooden spoon until just combined.
  • Cover the bowl with a towel or plastic wrap and set in a warm place to rise for 1 hour.
  • After 1 hour, the dough should have nearly doubled in size.
  • Remove the towel and add an additional ¾ cup (95g) of flour, the baking powder, and salt. Stir well, then turn out onto a well-floured surface.
  • Knead the dough lightly, adding additional flour as necessary, until the dough just loses its stickiness and does not stick to the surface.
  • Roll the dough out into a large rectangle, about ½-inch (1 cm) thick. Fix corners to make sure they are sharp and even.
  • Spread the softened butter evenly over the dough.
  • Sprinkle evenly with brown sugar and a generous sprinkling of cinnamon.
  • Press the mixture into the butter.
  • Roll up the dough, forming a log, and pinch the seam closed. Place seam-side down. Trim off any unevenness on either end.
  • Cut the log in half, then divide each half into 7 evenly sized pieces. About 1½ inches (8cm) thick each.
  • Place 7 cinnamon rolls in each cake pan, one in the center, six around the sides. Cover with plastic wrap and place in a warm place to rise for 30 minutes.
  • Preheat oven to 350˚F (180˚C).
  • To prepare the frosting. In a medium-size mixing bowl, whisk together cream cheese, butter, whole milk, vanilla, and powdered sugar, until smooth.
  • Remove plastic wrap. Bake the cinnamon rolls in a preheated oven for 25-30 minutes, until golden brown.
  • While still warm, drizzle evenly with frosting.

1 cup milk
⅓ cup butter
2 eggs, room temperature
4 cups bread flour, divided
½ cup white sugar
2 ½ teaspoons rapid-rise yeast
1 teaspoon salt
1 tablespoon vegetable oil
¾ cup packed brown sugar
2 ½ tablespoons ground cinnamon
⅓ cup butter, softened

Steps:

  • Heat milk and 1/3 cup butter together in a microwave-safe container in a microwave on high power for 30 seconds. Stir and repeat until mixture reaches 120 to 130 degrees F (49 to 54 degrees C). If too cool, microwave for 15 seconds more; if too hot, let cool to proper temperature.
  • Whisk eggs lightly in a small bowl, adding a small amount of milk mixture at a time to temper eggs until thoroughly combined. Pour mixture into the bowl of an electric stand mixer.
  • Mix 3 cups flour, sugar, yeast, and salt together in a large mixing bowl. Add to milk mixture and beat on low speed using a dough hook, scraping down the sides of the bowl using a rubber spatula as needed.
  • Add remaining flour slowly, 1 tablespoon at a time, until dough begins to pull away from the sides of the bowl. Continue to knead on low speed until dough looks smooth, 7 to 10 minutes; dough will be sticky and the bottom will remain stuck to the bowl.
  • Pour vegetable oil over dough and turn to coat. Cover and let rest for 10 minutes.

  • Place rolls, cut-side down and almost touching, into a greased 9x13-inch pan. Cover loosely with plastic wrap and let rise until doubled in size, 30 to 40 minutes.
  • Preheat the oven to 400 degrees F (200 degrees C).
  • Bake in the preheated oven until golden, 15 to 20 minutes. Remove from the oven and immediately turn out onto a tray or plate to cool; this allows the inside mixture to drip back into the rolls as they cool.

2 ¼ teaspoons quick-rise yeast
1 ¾ cups gluten-free all-purpose flour
2 ½ teaspoons baking powder
1 ½ teaspoons xanthan gum
½ teaspoon baking soda

⅔ cup milk
1 tablespoon unsalted butter
¼ cup olive oil
1 large egg
½ teaspoon vanilla extract
2 tablespoons gluten-free all-purpose flour, or as needed
½ cup brown sugar
1 tablespoon ground cinnamon
⅓ cup unsalted butter, melted
2 tablespoons unsalted butter, softened
2 tablespoons cream cheese, softened
¾ cup powdered sugar
½ tablespoon lemon juice
½ teaspoon vanilla extract
1 dash salt

Steps:

  • Combine sugar and yeast for dough in a small bowl. Mix 1 3/4 cups flour, baking powder, xanthan gum, baking soda, and salt together in a second bowl.
  • Place milk and butter in a microwave-safe bowl and microwave on high, stirring every 15 seconds, until 110 to 115 degrees F (43 to 46 degrees C), about 45 seconds. Whisk into the yeast mixture and set aside to proof, about 5 minutes.
  • Combine proofed yeast with olive oil, egg, and vanilla extract in a large bowl; mix for a moment and then slowly add in the flour mixture. Mix with an electric mixer on medium-high speed until dough thickens and loses some of its stickiness, about 1 1/2 minutes.

  • While rolls are baking, beat butter and cream cheese for frosting in a mixing bowl until smooth. Add powdered sugar; mix until smooth. Mix in lemon juice, vanilla extract, and salt.

½ cup water
¼ cup butter
3 cups unbleached all-purpose flour
½ cup white sugar
½ teaspoon salt
1 (.25 ounce) package rapid-rise yeast
1 egg
¼ cup butter, softened
1 cup light brown sugar
1 tablespoon ground cinnamon
3 ounces cream cheese, softened
1 tablespoon butter, softened
1 tablespoon milk
½ teaspoon vanilla extract
2 cups confectioners' sugar

Steps:

  • Heat milk, water, and 1/4 cup butter together in a saucepan over medium heat until bubbling, about 5 minutes. Let cool to 120 to 130 degrees F (49 to 54 degrees C), 1 to 2 minutes.

3/4 cup water
1 teaspoon salt
1/4 cup shortening
4 tablespoons sugar
1 egg
1 package yeast
1/4 cup water
3 1/2-4 cups flour

Steps:

  • 1/2 stick melted butter for center of rolls and a mixtuer of about 1 cup sugar and some cinnamon for sprinkling in center Melt shortening with sugar and salt in microwave about 3 minutes or until shortening is melted.
  • While microwave is running, put yeast in the warm water and stir to dissolve.
  • Slowly add flour to shortening mixture but not too much.
  • When yeast is dissolved stir completely and add to flour mixture.
  • Add eggs and flour alternately and mix as much as you can with mixer, then take rest of flour and knead on counter until no longer tacky.
  • Grease bowl with oil and place dough in bowl and add more oil to coat top.
  • Place a towel over bowl and let rise until double in bulk.
  • In small bowl, mix 1 cup or so of sugar and add cinnamon to taste.
  • After dough rises, roll out on counter to about 1/4" thick.
  • Melt butter and spread over dough.
  • Sprinkle cinnamon sugar over entire rolled out dough.
  • Roll up dough into jelly roll style and take knife and cut into about 1" to 1 1/2" slices.
  • Put in glass pan that has been sprayed with pam spray.
  • Cover with towel and let rise until double.
  • Bake at 375 for about 20 minutes or so.
  • You can frost the cooled rolls with powder sugar frosting.

  • Do not knead the dough.

  • Preheat oven to 375 degrees F and bake for 20-25 minutes or until golden brown.
  • In a bowl, mix together frosting ingredients and spread over baked rolls.

  • OVERNIGHT INSTRUCTIONS: After you've rolled and cut your cinnamon rolls and placed them into your lightly greased baking pan, cover with plastic wrap and place in your refrigerator. The next day, remove them from the fridge and allow them to come to room temperature (about 45 minutes to an hour depending on the temperature of your house) before baking.
  • FREEZER INSTRUCTIONS: Roll and cut your cinnamon rolls and place several inches apart on a baking sheet to freeze rolls individually. Once frozen, transfer to a resealable plastic freezer bag. When ready to bake, place in a lightly greased baking dish and allow to come to room temperature before baking.
  • 1. In the bowl of a stand mixer, combine warm milk, yeast, sugar, salt, butter, and eggs. Add in flour. Using a dough hook, turn the mixer on to a low speed.
  • 2. Once the flour starts to incorporate into the dough, increase the speed to a medium range. Add more flour as necessary so that the dough pulls away from the sides of the bowl. The dough mixture should be tacky, but not stick to your hands. It should be soft. Add more or less flour until the dough reaches the desired consistency. The amount of flour you add in bread making is always an approximation and you should go by feel.
  • 3. Transfer the dough to a lightly greased mixing bowl. Cover with a towel and let rise until double in size, about 1 hour.
  • 4. Lightly grease a baking sheet. Punch down the dough and roll into a 12inch by 18inch rectangle.
  • 5. Brush the dough with 1/2 cup melted butter. In a small bowl, combine the brown sugar and cinnamon. Sprinkle on top of the melted butter. Roll up tightly lengthwise so you have one long roll. Use plain dental floss or a sharp knife to cut the dough into 12 one-inch slices.
  • 6. Place the slices onto a lightly 9x13 pan. Cover and let rise 30 to 45 minutes.
  • 7. Preheat oven to 325 degrees. Bake the rolls for about 14 minutes, until just kissed with brown on top.
  • 8. While the cinnamon rolls are baking, make the cream cheese glaze by using a hand mixer to whip together cream cheese and butter in a bowl until light and fluffy. Whip in powdered sugar and vanilla extract. Add enough milk to achieve a drizzle-like consistency.
  • 9. Frost the rolls while still warm. Serve immediately or cool and store. Stays good for 4 to 5 days.
  • ***Some have reported undercooked rolls. Cooking time is dependent on the size of your rolls. You should cook the rolls until they have just a kiss of brown on the top. If they don't have a kiss of brown, they probably aren't done. Cooking time may be upwards of 18-20 minutes.

4 1/2 c all purpose flour
1 pkg active dry yeast
1 1/4 c milk
1/4 c granulated sugar
1/4 c butter, unsalted
1 tsp salt
2 eggs
6 Tbsp butter, softened
1/2 c brown sugar
2 tsp ground cinnamon
1 recipe maple nut glaze

Steps:

  • 1. In a large mixer bowl combine 1 1/2 cups of all purpose flour and yeast. Heat the milk, granulated sugar, the 1/4 cup butter and salt just until mixture is warm (120 - 130 degrees) and the butter is almost melted, stirring constantly.
  • 2. Add milk mixture to flour mixture; add eggs. Beat with an electric mixer on low speed for 30 seconds; scraping sides of bowl constantly. Beat on high speed for 3 minutes. Using a big, strong spoon stir in as much of the remaining flour as possible. Dough will be soft. Turn dough out on to a lightly floured surface. Knead in enough of the remaining flour to make a moderately soft dough (3 to 5 minutes total). Shape dough into a ball.
  • 3. Place ball of dough into a lightly greased bowl; turn once. COVER; let rise in a warm place until doubled in size (this should take about 1 to 1 1/2 hours). The dough is ready for shaping when you can lightly and quickly press 2 fingers 1/2 inch into dough and indention remains.
  • 4. Punch dough down. On a lightly floured surface, divide dough in half; shape each half into a smooth ball. Cover and let rest 10 minutes.
  • 5. On light floured surface roll half the dough to 12x8 inches. Spread with 3 Tablespoons of butter. Combine brown sugar and cinnamon; sprinkle half over rectangle. Roll up from the short side. Seal edges. Make a second roll with remaining dough, butter and sugar mixture.
  • 6. Slice each roll into 8 pieces. It's easier if you begin slicing from the center of the roll, the slices will be more uniform. Arrange slices, cut side down, in a greased 13x9x2 inch baking pan. Cover, let rise until nearly doubled in size, about 30 minutes.
  • 7. Bake rolls in a 350 degree pre heated oven for 25 to 30 minutes or until light brown. Drizzle with Maple Nut Glaze.
  • 8. MAPLE NUT GLAZE: In a small bowl combine 1 cup sifted powdered sugar, 2 Tablespoons maple syrup. Stir in 1/4 cup coarsely chopped pecans.
  • 9. FOR FREEZING AND REHEATING: BAKE AND COOL ROLLS AS DIRECTED, DO NOT GLAZE. WRAP IN MOISTURE AND VAPOR PROOF WRAP. SEAL, LABEL, AND FREEZE UP TO 3 MONTHS. TO REHEAT IN A CONVENTIONAL OVEN, WRAP FROZEN ROLLS IN FOIL. PLACE INTO A 350 DEGREE OVEN FOR 20 TO 25 MINUTES. DRIZZLE WITH GLAZE.

1 (1/4 ounce) package dry yeast (2 and a half tspns)
3/4 cup whole milk
1/4 cup granulated sugar
1/4 cup water, warmed up to 115 degrees
1/4 teaspoon vanilla extract
1 egg
1 teaspoon salt
1/4 cup unsalted butter, melted
4 cups all-purpose flour
1/4 cup of melted butter, to brush over the top before baking
1/3 cup unsalted butter, at room temperature
3/4 cup brown sugar
1/4 cup granulated sugar
1 1/2 tablespoons ground cinnamon
1/4 cup cream cheese, at room temperature
1 tablespoon butter, at room temperature
1 1/4 cups powdered sugar
1/2 teaspoon vanilla extract
3 -4 tablespoons of warm milk

Steps:

  • In a small bowl, combine the warm water and 1 tsp of the granulated sugar, sprinkle the yeast over the top and let it sit for about 4-5 minutes.
  • In the bowl of a standing mixer fitted with a dough hook, mix the egg, milk, salt, sugar and melted butter. Add 2 cups of the flour and the water, vanilla and yeast mixture, mix until its all incorporated and slowly add about 2 more cups of flour. Turn the speed up to medium and let it mix for about 5 to 7 minutes or until you have a smooth dough.
  • Oil a large bowl with some vegetable oil and set aside. Take the dough out of the mixer and pull it together with your hands to form a ball. Place it in the oiled bowl and oil the top of the dough with a little vegetable oil. Cover with plastic wrap and place it in a warm spot to rise for about 2 hours.
  • In a small bow, mix together the brown sugar, granulated sugar and cinnamon for the filling, set aside.
  • When doubled in size, punch the dough down and roll it out onto a floured surface into a 15x9" rectangle. Spread the soft butter over the top and sprinkle evenly over the sugar and cinnamon mixture. Cut into 14 to 16 slices (make sure they are even) and place them cut side down in a well buttered 9x13 baking pan. Cover with plastic wrap and let put them back into a warm spot to rise for another 1 ½ hours.
  • Meanwhile preheat your oven to 350 degrees.
  • Once risen, brush them with some melted butter and bake them for about 30 or until golden brown.
  • While the cinnamon rolls cool for a few minutes make the glaze. Mix all the ingredients of the glaze in a bowl except for the milk, once the cream cheese is all mixed, slowly add the milk until you get a runny glaze consistency. Immediately pour the glaze over the cinnamon rolls and enjoy!

This is my second posting for cinnamon rolls. We are in the middle of the winter storm that hit southeast Texas and had time on my hands and needed to get the house and myself warmed up...enjoy! =)

DOUGH...
1 Tbsp yeast, heaping
1 c warm milk, 115 degrees
1/3 c sugar
1 tsp salt
4 c flour, all purpose
1/2 c butter, slightly softened
2 eggs, room temperature, beaten
FILLING...
1/2 c butter, slightly melted, spreadable
2 Tbsp ground cinnamon
3/4 c brown sugar
ICING...
4 oz cream cheese, softened
1/2 stick butter, softened
1 c powdered sugar
1 tsp vanilla
1/4 c milk of choice

Steps:

  • 1. Activate the yeast by whisking into the warm milk and let set for 5 minutes. While waiting, mix your dry ingredients in a stand mixer.
  • 2. Pour the yeast milk mixture into the flour/sugar/salt mix in the bowl. Add the beaten eggs, melted butter and mix with dough hook until it pulls away into a ball. It will be slightly sticky, do NOT add more flour.
  • 3. Make into a ball and return to greased bowl, covering with plastic wrap tightly to rise until doubled in size. I put this in the oven with the oven light on and this works nicely!
  • 4. After risen, take out and roll until large rectangle. Slather the slightly softened butter onto the rectangles. Mix the cinnamon and sugar and sprinkle over the butter and gently press into the dough/butter. Tightly roll beginning with one long side and pinch together. Depending on the size pan you are using cut the rolls using a serrated knife or using unflavored plain dental floss. When I use a 9x13 pan, I usually make 15. Grease your pan and place the rolls into the pan, covering with the plastic wrap and let rise again until double, about an hour.
  • 5. Bake at 350 for 20 to 25 minutes until slightly brown. Make the icing by creaming ingredients together, using only enough milk for desired consistency. Slather over warmed cinnamon rolls and enjoy!
