One of our family favorites for the ice cream machine. Prep time does not include the time for freezing.

2 cups nonfat milk or 2 cups low-fat milk
2 cups heavy cream
1 cup sugar
1/2 teaspoon salt
1 teaspoon vanilla extract
1 teaspoon peppermint extract
3 drops green food coloring (optional)
1 cup miniature semisweet chocolate chips

Steps:

  • In a large bowl, stir together the milk, cream, sugar, salt, vanilla extract and peppermint extract until the sugar has dissolved.
  • Color to your liking with the green food coloring.
  • Pour the mixture into an ice cream maker, and freeze according to the manufacturer's instructions.
  • About 10 minutes into the freezing, add the chocolate chips.
  • About 30 minutes later, after the ice cream has thickened, spoon into a container and freeze for 2 hours.

2 ½ cups semisweet chocolate chips, divided
½ cup heavy cream
½ cup coconut oil
6 ice cream sugar cones
1 gal vanilla ice cream, softened
1 cup chopped peanut

Steps:

  • In a small bowl, combine ½ cup (85 G) chocolate chips and the heavy cream. Microwave in 30-second intervals, stirring in between, until melted and smooth, about 1 minute total. Cover with plastic wrap and refrigerate until set, about 20 minutes.
  • In a large bowl, combine the remaining chocolate chips and coconut oil. Microwave in 30-second intervals, stirring in between, until melted and smooth, about 1 minute total.
  • Wrap a 9x5-inch (22x12 cm) loaf pan in foil, keeping the foil taut across the top. Set nearby.
  • Spoon about 2 tablespoons of the melted chocolate-coconut oil mixture into a cone, flip upside-down, and spin to coat the inside, letting excess chocolate drip back into the bowl. Poke the cone through the foil to prop upright, and repeat with the remaining cones. Chill in fridge until set, about 2 minutes.
  • Once set, spoon some of the softened ice cream into the cones to fill, and smooth the tops. Place the cones in the freezer for 10 minutes, or until set.
  • Scoop about a teaspoon of the ganache onto a spoon. Fill an ice cream scooper with the ice cream and create a hole in the middle with the end of a spoon. Place the ganache in the hole and place on top of a cone. Repeat with remaining cones.
  • Set the cones on a baking sheet and freeze again for 30 minutes, or until solid.
  • Using the remaining melted chocolate, dip the cones, turning to coat the ice cream.
  • While the chocolate is still wet, quickly dip the cones in the chopped peanuts to coat.

2/3 cup evaporated milk
2/3 cup sugar

Steps:

  • Mix oreos and butter together.
  • Pat into a 9 by 13 pan.
  • Spread 1/2 gallon of vanilla icecream over the cookie crust.
  • Freeze hard (overnight or for several hours).
  • Melt the chocolate, butter, salt, evaporated milk, and sugar.
  • Cook until thick.

1 pkg. (4 oz.) BAKER'S Semi-Sweet Chocolate
1 Tbsp. vegetable oil
6 ice cream sugar cones
3 cups vanilla ice cream
3/4 cup chopped PLANTERS Dry Roasted Peanuts

Steps:

  • In a medium bowl, microwave chocolate and vegetable oil for about 1 minute. Stir every 20 seconds until smooth.
  • Place ice cream cones on a small lined baking sheet. (Make sure you have cleared space in your freezer for the sheet.). Drizzle about 1 teaspoon melted chocolate into the bottom of each ice cream cone. Place in the freezer for 10 minutes, to set chocolate.
  • Remove vanilla ice cream from freezer to let thaw a few minutes before filling cones. Scoop ice cream into cones. Place filled cones into short glasses and onto baking sheet. Freeze for 10 minutes to set ice cream.
  • One at a time, dip tops of cones in melted chocolate mixture (you may need to warm in your microwave for 15-20 more seconds to thin slightly).
  • Immediately roll into chopped nuts. If necessary, sprinkle nuts over top to coat evenly.
  • Place the cones back into the short glasses, onto the baking sheet, and into your freezer.
  • Repeat process until all sugar cones are filled, dipped and sprinkled with nuts.

2 cups skim milk

  • In a medium saucepan, off heat, whisk together egg yolks, sugar, and salt until blended. Stir cocoa powder into egg-yolk mixture. Gradually whisk in milk.

my kids' great grandmother shared this recipe for homemade chocolate ice cream on a family visit to her out in Lewis, Kansas. We have used it for every occasion and never have found anyone that doesn't love it!!

1 gallon favorite brand chocolate milk
2 cup(s) granulated sugar (may use 1 c for less kcals)
1 pint(s) heavy whipping cream
1 package(s) large box of chocolate instant pudding
1 can(s) chocolate syrup or hot fudge
1 teaspoon(s) vanilla extract
- any favorite candy bars/cookies for toppings
2 large bags crushed/cubed ice
1 package(s) large box or bag of rock salt

Steps:

  • make instant pudding per package instructions then in a large mixing bowl, combine all other ingredients starting with sugar and moving on to other ingredients from there. NOTE: any flavor instant pudding may be used in place of chocolate, such as french vanilla. If other flavors are used, substitute regular milk for the chocolate milk!
  • Add small amounts of chocolate syrup topping or hot fudge until desired chocolate taste is achieved.
  • place in 5 to 6 quart ice cream freezer and freeze using the cubed/crushed ice and rock salt layered as freezer container directs. DO NOT ADD ICE AND SALT TO ICE CREAM! (some have tried this at home and it does not work well! lol)
  • after freezing to desired consistency, remove the paddle from inside and leave ice cream container inside the ice freezer for about 20 min to cure for more firm ice cream. Ice cream may be removed from container for soft serve use.
  • At our house, we make a favorite ice cream buffet using crushed cookies, candy bars, fruits, and other favorite toppings. Makes a great birthday party or other get together even more fun!

  • Pour whipping cream, and chocolate syrup into a bowl and mix until soft peaks form when beater is lifted (takes a few minutes.
  • Line a loaf pan with plastic wrap, overlapping on sides (this makes removing the ice cream easier). Pour half of the mixture into the pan, smooth out a bit, then add cookie wafers, mint extract (if using). Add rest of cream mixture on top, smooth out. Freeze overnight. Enjoy!
