Here's an economical meal that doesn't skimp on flavor. Hearty black beans make up for the meat, and the peppers add just the right splash of color.

1 pound dried black beans
6 cups chicken broth
4 cups water
1-1/2 cups chopped onions
1 cup thinly sliced celery
1 large carrot, chopped
1/2 cup each chopped green, sweet red and yellow peppers
2 garlic cloves, minced
3 tablespoons olive oil
1/4 cup tomato paste
3 tablespoons minced fresh parsley
3 bay leaves
1 tablespoon minced fresh thyme or 1 teaspoon dried thyme
1-1/2 teaspoons ground cumin
1 teaspoon pepper
3/4 teaspoon salt, optional
Chopped tomato, optional

Steps:

  • Place beans in a Dutch oven or soup kettle; add water to cover by 2 in. Bring to a boil; boil for 2 minutes. Remove from the heat; cover and let stand for 1 to 4 hours or until beans are softened. Drain and rinse beans, discarding liquid., Return beans to pan; add broth and water. Bring to a boil. Reduce heat; cover and simmer for 1 hour or until the beans are almost tender. , Meanwhile, in a large skillet, saute the onions, celery, carrot, peppers and garlic in oil until tender. Add the tomato paste, herbs and seasonings to the bean mixture. Add the sauteed vegetables; bring to a boil. Reduce heat; cover and simmer for 1 hour or until beans are tender. Discard bay leaves. Garnish with chopped tomato if desired.

2 cups dried lima beans
2 cups dried pinto beans
2 cups dried great northern beans
1 cup instant minced onions
1 1/2 teaspoons ground cumin

1 teaspoon onion salt
1/4 pepper

Steps:

  • 1. How to make the home made bean soup: Combine all beans in a large jar with screw top lid. Place onions and remaining ingredients in a small plastic bag and place on top of beans in jar. Seal jar and store in cool dry place. Makes enough for 6 batches of soup. To use mix: 8 cups water 1/6 Hearty Bean Soup Mix 1 cup chopped carrots 1 cup chopped celery 12 sun-dried tomatoes, chopped 1 ham bone Combine water and soup mix in large stockpot. Bring to a boil over high heat and boil for 2 minutes. Remove from heat. Cover and let stand for 1 hour. Add remaining ingredients to soup. Heat to boiling. Then cover pan, reduce heat to low, and simmer soup for 2 hours or until beans are tender. Skim fat and remove ham bone. Remove meat from bone and return to soup. Heat until hot and serve. 6 servings.

1-1/2 pounds bulk Italian sausage
4 medium carrots, thinly sliced
2 celery rib, chopped
1 small onion, chopped
1 garlic clove, minced
1/8 teaspoon crushed red pepper flakes
1 can (28 ounces) diced tomatoes, undrained
1 tablespoon Italian seasoning
3 cans (14-1/2 ounces each) beef broth
1 can (16 ounces) kidney beans, rinsed and drained
1 can (15-1/2 ounces) great northern beans, rinsed and drained
1/2 cup water
1/2 cup dry red wine or additional beef broth
1/3 cup uncooked elbow macaroni

2 cups navy beans, soaked overnight
2 smoked pork hocks or 1 ham bone
1 small diced onion
2 teaspoons salt
1/4 teaspoon pepper
2 tablespoons sugar
2 cups sliced carrots
1 cup diced celery
1 cup diced potato
enough water, to cover all ingredients in the pan

Steps:

  • Cook pork hocks or ham bone and the onion for one hour in enough water to cover the bones.
  • Add beans, salt, pepper and sugar and more water to keep all ingredients covered.
  • Cook 1 hour or till beans are soft.
  • Add carrots and celery, cook for 30 minutes.
  • Add potatoes and cook 30 more minutes.
  • Season with more salt and pepper if desired.

Its that time of year! I really like Campbell's bean and bacon soup but wanted to make a homemade version and this is it! Smells so good while cooking! One of my favorite soups! So good! *You can freeze this too.

16 oz bag of dry navy beans
9 c chicken broth, low salt
1 stick butter, unsalted
1 medium yellow onion, chopped
4 carrots, chopped
2 celery stalks, chopped small
2 dash(es) liquid smoke flavoring
1/2 lb bacon + extra for garnish

Steps:

  • 1. Soak the bag of navy beans in water for 3 hours (or overnight). Drain & rinse beans and add 9 cups of low salt chicken broth in a large pot.
  • 2. In a fry pan, melt the stick butter & saute the chopped onion, 4 chopped carrots and celery. When the onion starts to caramelize, dump it all into the pot of beans & chicken stock.
  • 3. Now, I take the pound of bacon and cut it down the middle in half. Use only half the pound, then fry the half pieces until almost crisp, drain on paper towels and throw the whole half pieces in the pot. Add 2 dashes of liquid smoke. Cover and simmer for 4 hours or so until thick and beans are tender. (the reason I do this is because I do not like the texture of bacon when cooked in a soup but I want the flavor soooo when it is done cooking, I take the half pieces out of the soup and discard) I fry up extra bacon to crispy and garnish the soup with it just before serving it so it stays crunchy while I eat it. I do stir it in at this point.
  • 4. Now, if you do not mind the texture of the bacon in the soup, just chop the bacon in small pieces and fry, drain on paper towels and add to the soup. Add 2 dashes of liquid smoke. Cover and simmer the 4 hours or so until the beans are tender and the soup is thick. Serve.
  • 5. If you double this recipe, double everything except the Chicken broth. Use 10-12 cups of broth for doubling if you like a thick soup. I promise, you won't need more. If you like it a little more soupy, add more broth.

1 (8 ounce) package fresh sliced mushrooms
3 Tablespoons butter
1 onion (diced)
1 Tablespoon fresh parsley (chopped)
2 Tablespoons flour
1/2 teaspoon salt
1/4 teaspoon pepper
1/2 cup milk
1 cup sour cream
1/2 cup shredded cheddar cheese
1 (2.8 ounce) can french fried onions

Steps:

  • Preheat oven to 350 degrees F.
  • Fill a large saucepan with water and bring to a boil over high heat.
  • Add beans to boiling water and let boil for 5 minutes.
  • Drain beans and add mushrooms then set aside.
  • Melt butter in a large skillet over medium heat.
  • Add onion and parsley and cook for a few minutes until onion is tender.
  • Whisk in flour, salt and pepper until well combined then gradually whisk in milk, stirring constantly to avoid lumps.
  • Whisk in sour cream and continue stirring over medium heat until sauce begins to bubble.
  • Fold in green beans and mushrooms until evenly coated.
  • Add half the cheese and fried onions and mix until well combined.
  • Pour green bean mixture into a 9 x 13 inch baking dish sprayed with nonstick cooking spray.
  • Sprinkle remaining cheese and onions on top.
  • Bake for 15-20 minutes or until cheese is melted.

1 (10 ounce) can ro*tel original diced tomatoes with green chilies (Use the Ro*Tel HOT Diced Tomatoes with Habaneros for a spicier soup)
1 lb andouille sausage, crosscut into 1/4 inch medallions (This is the secret to the excellent taste of the soup)
1 (16 ounce) package dried navy beans
10 beef bouillon cubes
3 large carrots, crosscut into 1/4 inch medallions
2 stalks celery, crosscut into 1/4 inch medallions
1 large onion, coarsely chopped
2 cups extra wide egg noodles, dried
1/2 head cabbage, coarsely chopped
water, to fill pot

Steps:

  • Fill 1 (5 quart) soup pot about half full of water. Stir into the water the Ro*Tel, cut sausage, beans, and boullion cubes. Bring to a rolling boil and then reduce to a simmer. Cover pot and let simmer about 3 hours until beans are soft enough to be mashed with a fork.
  • When beans are soft and done, add the cut carrots, cut celery, chopped cabbage, and chopped onion. Do NOT add the noodles at this time. Add enough water to almost fill pot to the top. Stir and cover and bring to a simmer. Let simmer for about 30 to 45 minutes or so, until veggies are soft.
  • Now turn fire off and add the noodles. Stir and cover pot and let set for about 30 to 45 minutes. Do NOT boil the noodles or they will be mushy.
  • Stir occasionally to make sure beans are not sticking. That's it. Ready to eat. This is one soup you will really enjoy!
