The taste of this spicy-sweet butter brings back so many childhood memories of eating apple butter with my cousins, the Daileys. As a team we would go through what seemed like gallons of the stuff in less than a week. I hope you love this as much as I do.

5 1/2 lb apples, peeled, cored and chopped
1 c white sugar
1/2 c brown sugar
2 tsp cinnamon
2 tsp vanilla --- optional
1/4 tsp ground cloves
1/4 tsp salt

Steps:

  • 1. Place the chopped apples in the crock pot and add the rest of the ingredients, stir to blend well.
  • 2. cover and cook on high for one hour
  • 3. reduce heat to low and cook 10-11 hours, stir occasionally. Until mixture is thickened and dark brown.
  • 4. Uncover and continue cooking on low for 1 hour. Stir with whisk if desired to increase the smoothness
  • 5. Spoon mixture into clean freezer containers, cover and refrigerate or freeze
  • 6. **** You can add more sugar (up to 4 cups) but I like mine just a little tart but still sweet. I don't think I would ever use more than 2 cups even if the Apples are tart.

6 large red apples (peeled and thinly sliced)
1 1/2 cups sugar
1 teaspoon cinnamon

Steps:

  • In a large stock pot, boil apples in about 6 cups of water. Boil on medium high without the lid for 20 minutes. Stir frequently to prevent apples from sticking to the bottom of the pot.
  • When the water level starts to boil down and the apples have just enough water to even out, add the sugar and cinnamon. Stir and boil for another 20 minutes.
  • The apples should darken and caramelize in texture. Using a potato masher, mash in the apples to preferred consistency.
  • Turn off the burner and allow the apples to cool for a while. Once they have cooled, you can store them in air tight containers and use it as a topping for ice cream, cakes, on toast, or even with fresh yogurt. They will stay fresh for about a week in the refrigerator or can be stored longer in the freezer.

My daughter Joanna loves this spread on graham crackers. It tends to separate if left too long, so use it within a day or two.

2 tablespoons honey
4 tablespoons peanut butter

Steps:

  • Mix all ingredients.
  • Refrigerate about 30 minutes to blend flavours.
  • Spread on toast, graham crackers, etc.
