Break out a family favorite: tuna casserole. The traditional comfort food is great for serving large groups. In our tuna casserole recipe, we cut the sauce with chicken broth, but there's enough milk to make this casserole feel indulgent.

Coarse salt and ground pepper
3/4 pound tubetti or elbow macaroni
1 cup panko (Japanese breadcrumbs)
1/2 ounce Parmesan, grated (2 tablespoons)
2 tablespoons plus 2 teaspoons extra-virgin olive oil
1 yellow onion, diced small
3 tablespoons all-purpose flour
2 1/2 cups low-sodium chicken broth
1 1/2 cups whole milk
2 cans (6 ounces each) solid light tuna packed in water, drained and flaked
1 cup frozen peas, thawed

Steps:

  • Preheat oven to 425 degrees. In a large pot of boiling salted water, cook pasta 2 minutes less than package instructions (it will be undercooked). Drain. In a small bowl, toss together panko, Parmesan, and 2 teaspoons oil.
  • In pot, heat 2 tablespoons oil over medium-high. Add onion, season with salt and pepper, and cook until softened, 8 minutes. Add flour and whisk to coat onion with flour. Slowly whisk in broth, then milk.
  • Cook, stirring constantly, until sauce comes to a boil. Reduce heat and simmer, stirring frequently, until sauce is thickened, about 8 minutes. Stir in pasta, tuna, and peas and season to taste with salt and pepper.
  • Transfer tuna mixture to a 9-by-13-inch baking dish and top with panko mixture. Bake until sauce is bubbling and crust is golden, 17 to 20 minutes. Let cool 10 minutes before serving.

So I bought some Kraft Deluxe Macaroni and Cheese Dinner on sale thinking it would be a comfort food like the regular mac 'n cheese when you don't have time to cook. I conjured up childhood memories of those "special occasions" when Mom let us eat food from a box. When I actually tried it the fake cheese was the most disgusting thing I ever tasted, and I realized your tastebuds grow up too. This recipe does a good job of covering up that boxed food taste, but it's simple enough you don't have to spend all day in the kitchen. I used cream of mushroom soup and doubled the tuna and the vegetable (green beans in place of peas) to get rid of the macaroni and cheese flavor. I did skip the bread crumbs and butter, but I have to say it's pretty impressive for an instant tuna casserole. If you love Kraft Deluxe Macaroni and Cheese Dinner, you should try this. 10 3/4 ounces condensed cream of celery soup
6 ounces tuna, drained and flaked
1 cup peas, frozen
1/2 cup milk
2 tablespoons onions, finely chopped
2 cups breadcrumbs, fresh
1/4 cup butter, melted

Steps:

  • Prepare dinner as directed on package.
  • Add soup, tuna, peas, milk, and onion and mix lightly.

1 (12 ounce) package egg noodles
¼ cup chopped onion
2 cups shredded Cheddar cheese
1 cup frozen green peas
2 (5 ounce) cans tuna, drained
2 (10.75 ounce) cans condensed cream of mushroom soup
½ (4.5 ounce) can sliced mushrooms
1 cup crushed potato chips

Steps:

  • Bring a large pot of lightly salted water to a boil. Cook pasta in boiling water for 8 to 10 minutes, or until al dente; drain.
  • Preheat oven to 425 degrees F (220 degrees C).
  • In a large bowl, thoroughly mix noodles, onion, 1 cup cheese, peas, tuna, soup and mushrooms. Transfer to a 9x13 inch baking dish, and top with potato chip crumbs and remaining 1 cup cheese.

1 1/3 cups bow tie pasta or 1 cup macaroni
1 cup chopped celery
1/3 cup chopped onion
1 (10 ounce) can 98% fat-free cream of mushroom soup
3/4 cup evaporated skim milk
1 (9 ounce) can tuna in water, drained
1/4 cup drained and chopped pimiento
2 tablespoons grated reduced-fat parmesan cheese
snipped fresh parsley

Steps:

  • Cook the pasta according to package directions. Drain and set aside.
  • Meanwhile, preheat the oven to 375 degrees. Lightly spray and unheated medium saucepan with no-stick spray. Add the celery and onions. Cook and stir over medium heat until tender.
  • Stir in the condensed soup and milk. Then gently stir in the pasta, tuna and pimiento. Transfer the mixture to a 1 1/2 quart casserole. Sprinkle with the parmesan cheese. Bake for 25 to 30 minutes or until heated through. Sprinkle with the parsley to garnish.
