CHICKEN AND HAM TORTILLA SOUP

As both noodles and a garnish, corn-tortilla strips do double duty in this flavorful chicken, ham, and vegetable soup.

Number Of Ingredients 10

2 tablespoons vegetable oil
6 corn tortillas, (6 inches in diameter) cut into 1/3-inch-wide strips
1 small onion, finely chopped
2 medium carrots, halved lengthwise and sliced into thin half-moons
2 stalks celery, sliced into thin half-moons
1 chicken breast half, (5 to 6 ounces) cut into 1/4-inch dice
2 slices (about 2 ounces) baked ham, cut into 1/4-inch dice, or 2 ounces ham steak, thinly sliced and cut into 1/4-inch dice
1 bay leaf
2 cans (14 1/2 ounces each) low-sodium chicken broth
Salt and freshly ground pepper

Steps:

  • Heat oil in a large pot over medium-high heat. Add half the tortilla strips; cook, stirring, until golden and crisp, about 3 minutes. Transfer strips with a slotted spoon to a paper towel-lined plate to drain; season with salt. Set aside.
  • Add vegetables to pot; cook, stirring occasionally, until onion is translucent, 3 to 5 minutes (do not brown).
  • Stir in chicken; cook until opaque, about 5 to 6 minutes. Add ham, bay leaf, broth, and 2 cups water. Bring to a boil; reduce heat, and simmer until vegetables are tender, about 15 minutes. Discard bay leaf; season with salt and pepper. Divide remaining tortilla strips among bowls, and ladle soup on top. Garnish with fried tortilla strips, and serve immediately.

1 can (14-1/2 ounces) reduced-sodium chicken broth
1 can (14-1/2 ounces) diced tomatoes, undrained
1 cup cubed cooked chicken
1 can (8 ounces) mushroom stems and pieces, drained
1/4 cup sliced fresh carrot
1/4 cup sliced celery
1 bay leaf
1/8 teaspoon dried thyme
3/4 cup uncooked egg noodles

Steps:

  • In a 1-1/2-qt. slow cooker, combine the first eight ingredients. Cover and cook on low for 6 hours. Stir in noodles; cover and cook on high for 15-20 minutes or until tender. Discard bay leaf.

1 (14.5 ounce) can chicken broth
1 ½ cups diced leftover cooked ham
1 (15 ounce) can corn, drained
1 (15 ounce) can navy beans, undrained
¼ cup chopped onion
½ teaspoon dried parsley
1 pinch ground thyme
salt to taste
1 pinch crushed red pepper flakes, or to taste
2 dashes hot pepper sauce (such as Tabasco®)
1 sprig fresh parsley, chopped

Steps:

  • Heat broth in a saucepan over high heat. Add ham, corn, navy beans, and onion. Add dried parsley, thyme, salt, red pepper flakes, and hot sauce. Cook over high heat for 5 minutes. Reduce heat to low and cook about 5 minutes more. Finish with fresh parsley before serving.

2 Onions chopped
3/4 pt Chicken stock made with
1 ts Corn flour.
2 ts Light soy sauce
1 1/2 oz Ham chopped
1 1/2 oz Mushrooms
1 Chicken breast fillet

Steps:

  • Place chicken courgettes, mushrooms ham onions and stock in a pan. Bring to the boil. Reduce heat and simmer uncovered for 5 minutes. Blend soy sauce with the corn flour and add to the pan stirring constantly until the soup thickens. Serve immediately.

1 onion
6 carrots
6 celery ribs
3 garlic cloves
2 tablespoons thyme leaves
2 tablespoons rosemary
2 bay leaves
1 tablespoon peppercorn
1 whole chicken
1/4 cup diced onion
salt and pepper

Steps:

  • Add to a large stock pot 3 carrots chopped, 3 celery stalks chopped, garlic, herbs, and chicken.
  • Fill the pot with water just until it covers the chicken.
  • Bring water to a boil and let simmer for 45 minute or until chicken is cooked through.
  • Remove chicken and let cool.
  • Strain veggies and discard reserving the chicken stock.
  • To the stock add remaining veggies chopped, onion, and salt and pepper to taste.
  • Simmer until veggies are tender.
  • Shred cooled chicken and add to pot.
  • Heat through and serve.

1 tbsp sunflower oil
2 leeks , thinly sliced
3 medium potatoes , cut into small cubes
1 tbsp plain flour
700ml skimmed milk
2 ready roasted chicken breasts, skin removed and cut into chunks
2 thick slices ham , chopped
175g each frozen sweetcorn and frozen peas

Steps:

  • Heat the oil in a large pan and fry the leeks over a low heat for 3 mins until softened. Stir in the potatoes and flour, then slowly blend in the milk, stirring with a wooden spoon. Bring to the boil and simmer, uncovered, for 10-12 mins until the potatoes are soft.
  • Add the chicken, ham, sweetcorn and peas, then stir over a medium heat for 5 mins or until hot and bubbling. Season to taste and serve with crusty bread.
