1 package (8 ounces) cream cheese, softened
2 cups shredded Colby cheese
2 cups shredded Monterey Jack cheese
1/4 cup mayonnaise
1 teaspoon garlic powder
1 teaspoon onion powder
1/4 teaspoon Worcestershire sauce
2 cups chopped pecans, toasted
Butter-flavored crackers

Steps:

  • In a large bowl, beat cream cheese until smooth. Stir in the shredded cheeses, mayonnaise, garlic powder, onion powder and Worcestershire sauce. Shape mixture into two logs, about 6 in. long. Roll in pecans, pressing down gently., Wrap each in plastic wrap; refrigerate for at least 2 hours or overnight. Serve with crackers.

Number Of Ingredients 10

Three 8-ounce packages cream cheese, at room temperature
1 teaspoon minced garlic
1/2 teaspoon ground white pepper
1 1/2 cups shredded pizza blend cheese
1/4 cup smoked paprika
2 cups shredded Cheddar Jack cheese
1/3 cup dried parsley
2 cups shredded extra-sharp Cheddar
6 whole pecans plus 1/3 cup chopped pecans
Crackers, for serving

Steps:

  • Put the cream cheese in the bowl of a stand mixer fitted with the paddle attachment. Add the garlic and white pepper and mix until well combined. Divide the mixture into 3 even portions; return one portion to the mixer.
  • For the pizza cheese log: Add the pizza blend cheese to the cream cheese mixture and mix well until combined. Remove to a work surface and roll into a log with your palms. (The mixture should be slightly sticky but thick enough to easily roll.) Put the smoked paprika on a shallow dish; roll the log in the paprika until completely coated. Roll the cheese log in a sheet of plastic wrap and refrigerate until firm, about 1 hour. Clean the mixer bowl and paddle.
  • For the Cheddar Jack and parsley cheese log: Put a second portion of the cream cheese mixture in the mixer bowl. Add the Cheddar Jack cheese and mix well. Remove to a work surface and roll into a log with your palms. Put the dried parsley on a shallow dish and roll the cheese log in the parsley until completely coated. Roll the cheese log in a sheet of plastic wrap and refrigerate until firm, about 1 hour. Clean the mixer bowl and paddle.
  • For the sharp Cheddar pecan cheese log: Put the last portion of the cream cheese mixture in the mixer bowl and add the extra-sharp Cheddar. Mix well. Remove to a work surface and roll into a log with your palms. Place the whole pecans down the length of the cheese log. Put the chopped pecans on a shallow dish, then roll the log in the pecans. Use your fingers to press the pecans more firmly into the cheese. Roll the cheese log in a sheet of plastic wrap and refrigerate until firm, about 1 hour.
  • Unwrap the cheese logs and present on a large platter surrounded by plenty of crackers and cheese knives for easy self-service.

This started as a Christmas treat, but was so popular that it's now served at all special family gatherings. The idea came from a recipe in a Colonial Williamsburg cookbook, but I modified it to get rid of peppercorns and add fruit. Garnish with parsley sprigs and serve with crackers.

½ cup smoked almonds
2 tablespoons roughly chopped fresh parsley
2 tablespoons roughly chopped fresh chives
¼ cup dried cherries
1 (8 ounce) log plain goat cheese

Steps:

  • Pulse almonds in the bowl of a food processor until chopped. Add parsley and chives; continue to pulse until incorporated. Add cherries and process until everything is finely chopped and you have a nice mixture of red and green.
  • Pour nut mixture onto a flat work surface and spread into a thin layer.
  • Roll goat cheese log in the nut mixture until fully covered. Carefully pick it up and tap the ends of the log into the nut mixture to cover. Place on a serving dish.

1 package (8 oz) cream cheese, softened
1 tablespoon Worcestershire sauce
1 teaspoon ground mustard
2 cups shredded sharp Cheddar cheese (8 oz)
1/2 cup crumbled Stilton cheese
1/2 cup chopped drained roasted red bell peppers (from 7-oz jar)
1/4 cup chopped fresh chives
1/2 cup finely chopped walnuts or pecans
1 large apple, sliced
Assorted crackers

Steps:

  • In large bowl, stir cream cheese, Worcestershire sauce and mustard until blended. Stir in Cheddar and Stilton cheeses, bell peppers and chives.
  • Divide cheese mixture in half. Shape each half into a log. Roll logs in walnuts. Wrap each log separately in plastic wrap or waxed paper. Refrigerate about 2 hours or until firm.
  • Place cheese logs on serving platter. Serve with apple slices and crackers.

This is especially pretty to serve during the Christmas holidays, as well as Valentine's day. Easy to make and tasty too! When serving, place in the center of a plate and surround with an assortment of crackers. Prep time does not include chilling time. Recipe does not say how many servings. I'm thinking I got 30 some servings. My notes say this comes from a Nursing Home older cookbook.

2 cups pecans, finely chopped
1 small garlic clove, minced
4 (3 ounce) packages cream cheese
4 ounces blue cheese
1/2 teaspoon Worcestershire sauce
1/4 teaspoon hot pepper sauce (optional)
2 tablespoons paprika

Steps:

  • In a mixing bowl, blend everything well EXCEPT paprika.
  • Shape into 2 rolls.
  • Sprinkle paprika on a large piece of wax paper.
  • Roll the cheese logs in the paprika, coating evenly.
  • Wrap each log individually in Seran Wrap.
  • Chill at least 2 hours before serving.

4 ounces feta cheese, crumbled at room temperature
4 ounces cream cheese, at room temperature
1 cup swiss cheese, shredded
2 teaspoons honey
1/2 cup pecans, finely chopped
1/2 cup dried cranberries, finely chopped
24 crackers

Steps:

  • Using an electric mixer or food processor*, mix the cream cheese, feta, Swiss and honey until combined. Transfer cheese onto a sheet of foil and roll into a 1.5" x 10" log. Close foil and refrigerate for 1 hour or until firm.
  • Mix pecans and cranberries, and spread into a rectangle on a clean sheet of foil. Roll log over the mixture to coat all sides evenly. Wrap in plastic wrap and refrigerate. (Log may be refrigerated up to 3 days.) Remove from refrigerator 15 minutes before serving. Serve with crackers.
  • You may prefer to use a food processor, so that the Swiss cheese gets chopped up really finely amongst the two softer cheeses.
