Number Of Ingredients 6

Two 16-ounce 8-count packages frozen sweet potato patties, preferably Bright Harvest or PictSweet Farms
1/2 cup light brown sugar
Freshly grated nutmeg, for dusting
Cinnamon sugar, for dusting
Zest of 1 lemon plus lemon wedges, for spritzing
Kosher salt and freshly ground black pepper

Steps:

  • Preheat the oven to 350 degrees F. Line a baking sheet with nonstick aluminum foil.
  • Break the frozen patties apart and place on the prepared baking sheet. Divide the brown sugar evenly over each patty. Sprinkle with nutmeg, cinnamon sugar, lemon zest, a pinch of salt and a grind or two of black pepper. Bake until golden around the edges, 20 to 25 minutes. Serve with a spritz of lemon juice.

3 c sweet potatoes, cooked
1 c white sugar
1/2 c melted butter
3 eggs, large
1/3 c milk
1 1/2 tsp vanilla extract
1 jar(s) marshmallow cream or regular mini-marshmallows

Steps:

  • 1. Preheat oven to 350 degrees
  • 2. Grease an 8x8 baking dish
  • 3. Run the 3 cups of cooked sweet potatoes through a ricer, food mill or fine mesh sieve or colander.
  • 4. Stir in the rest of the ingredients by hand.
  • 5. Pour into baking dish.
  • 6. Top with Marshmallow cream or mini marshmallow. * The marshmallow cream will come out of the jar easier if you microwave it for just a couple of seconds. NO longer or you will have a marshmallow volcano ! lol
  • 7. Bake until puffy. Serve immediately
  • 8. I always double this recipe so we will have leftovers for the next day. You can make this up the night before and then just pop it in the oven with foil to warm and THEN add the marshmallow.

6 large sweet potatoes (about 4-1/2 pounds)
1 can (20 ounces) pineapple chunks
1 tablespoon plus 2 teaspoons cornstarch
2 tablespoons dark brown sugar
1 cup orange juice
1 can (11 ounces) mandarin oranges, drained
1 cup dried cranberries

Steps:

  • Scrub and pierce sweet potatoes. Bake at 400° for 45-50 minutes or just until tender. Reduce heat to 350°. When cool enough to handle, peel and cut into 1/2-in. slices. Place in a greased 13-in. x 9-in. baking dish., Drain pineapple, reserving juices. In a small saucepan, combine cornstarch and brown sugar. Gradually stir in orange juice and reserved pineapple juice. Bring to a boil; cook and stir for 2 minutes or until thickened. Add the pineapple, oranges and cranberries; heat through., Pour sauce over sweet potatoes. Bake, uncovered, at 350° for 35-40 minutes or until bubbly.

The sweet potatoes, apples and pecans used in this dish are all grown here in southern Arizona. In the fall, we like to visit the pecan groves and pick up the "leavings" after the pickers have gone through.

6 large sweet potatoes, cooked, peeled and sliced, divided
3 large apples, peeled and sliced, divided
3/4 cup packed brown sugar
2 teaspoons ground nutmeg
1/4 cup butter
1 cup apple cider
1 cup chopped pecans, toasted

Steps:

  • Layer half of the sweet potatoes and half of the apples in a greased 13-in. x 9-in. baking dish. Repeat layers. Combine brown sugar and nutmeg; sprinkle on top. Dot with butter. Pour cider over all. Cover and bake at 350° for 45-50 minutes. Sprinkle with pecans just before serving.

Thought it was about time I shared this luscious sweet potato dish. It makes the house smell wonderful. These do take a bit of time, but it's worth it! We've been having these for about 40 years. Hope you enjoy them as much as we do. Leftovers, if you have any, may be frozen for later enjoyment.

3 (28 ounce) cans yams or 3 (28 ounce) cans sweet potatoes in syrup
1 cup brown sugar
3/4 cup sweet butter
1 navel orange, sliced thin
1 (20 ounce) can pineapple rings, divided
1/4 cup prepared mincemeat (optional)
6 ounces frozen orange juice
1/4 teaspoon allspice
1/4 teaspoon nutmeg
1/4 teaspoon cinnamon

Steps:

  • Combine all ingredients, except pineapple rings, in large Dutch oven .Remove 6 pineapple rings from can and set aside. Mince remaining rings and add to sweet potatoes, including juice.
  • Stirring frequently, on high heat, bring mixture to a boil. Immediately reduce to med-high and cover. Cook for 30 minutes.
  • Stir mixture and place pineapple rings on top, cover and bake at 250F for 1-1 1/2 hours.
  • Check periodically and add additional orange juice if needed.

5 medium sweet potatoes
1 peeled and chopped granny smith apple
1/2 cp. red raisins
1/2 cp. butter
1/4 cp. cream
1/2 cp. brown sugar + 1/4 cup for topping
3TB. maple syrup
1 cp. chopped pecans
1 tsp. nutmeg
1 tsp.salt
1/2 tsp. pepper

Steps:

  • Boil potatoes until tender, or pricked easily with a fork. Peel under cool running water. Chop potatoes.To the potatoes, add 4 TB. butter, maple syrup, 3/4 cp. brown sugar,cream, and nutmeg. Gently mash with a fork. Add raisins and apple. Season with the salt and pepper. Place mixture into a buttered Pyrex. For the topping: Mix together the remaining butter, 1/4 cp. brown sugar,and pecans. Sprinkle over the potatoe mixture, and bake in a preheated oven at 350 for 30 minutes. Enjoy!
