HOLIDAY SNACK MIX AKA "ELF FOOD"
I received this snack mix in a tin for Christmas last year. Boy! was it good. The ingredients can easily be substituted to suit your tastes. I have also made it using M&Ms or frosted mini wheats cereal instead of the marshmallows.

Steps:
- Place the chocolate morsels in freezer to chill.
- Mix cereal, peanuts, pretzels& marshmallows in large bowl; set aside.
- Microwave candy coating in large microwavable bowl uncovered on High 90 seconds; stir to break up large chunks and then microwave about 30 seconds longer or until coating can be stirred smooth.
- Quickly fold cereal mixture into coating with rubber spatula, stirring gently until evenly coated.
- Stir in chilled chocolate morsels.
- Spread on waxed paper and cool completely and break into chunks.
- Store in air-tight container in a cool place.

I'm not much of a cook, but my friend insisted that even I could make this awesome mix. She was right! People rave over it whenever I give it as a gift or share it at a gathering.

- Grease two 15x10x1-in. baking pans; set aside. In a large bowl, combine cereals, coconut and almonds; set aside. , In a heavy saucepan, combine the butter, sugar and corn syrup. Bring to a boil over medium heat, stirring constantly. Boil for 10 minutes, stirring occasionally. , Pour over cereal mixture and stir until well coated. Spread onto prepared pans. Cool, stirring occasionally. Store in an airtight containers.

Steps:
- Pre-heat oven to 250. Spray 2 large baking sheets with PAM.
- Mix cereal, popcorn, and peanuts in a large bowl or pan.
- In a heavy saucepan, combine margarine, brown sugar and corn syrup. Bring to a boil over medium heat, stirring constantly. Boil for 5 minutes without stirring.
- Remove from heat and stir in the vanilla and baking soda. Mix will get frothy as you stir.
- Pour over cereal mix and stir to coat evenly. Turn onto 2 large baking sheets.
- Bake for 45 minutes, stirring every 15 minutes. Cool completely. Break apart and add your desired mix-in's. Store in airtight containers.
- Mix-In's -- Make your mix-in's fit the holiday. Use as few or as many as you like. Don't choose anything that would make the cereal mix absorb moisture and become soggy, e.g., mini cream filled cookies.
- Suggestions for mix-in's - mini Hershey Kisses, mini peanut butter cups, nonpareils, malted milk balls, other small chocolate candies, M&M's, chocolate and white covered pretzels, mini cookies (not sandwich-type), animal crackers, grammy bears, goldfish cookies, candy corn, etc.

- Preheat oven to 300°F. Mix cereal, popcorn and pretzels in 15x10x1-inch baking pan.
- Mix butter, Worcestershire sauce and salt until well blended. Drizzle evenly over cereal mixture; toss to coat.
- Bake 30 minutes, stirring after 15 minutes. Cool completely. Store in airtight container at room temperature.
