4 x 75g/3oz herring fillets or 4 x 225g/8oz herrings, gutted
4 tbsp extra-virgin olive oil
2 tbsp wholegrain mustard
large bunch basil , roughly torn
1 tsp clear honey
1 lemon , grated zest and juice

Steps:

  • Heat grill to its highest setting. Rinse the fish under running cold water to dislodge any loose scales. Brush with a little of the oil and season lightly. Grill for 6-8 mins, or until cooked; the eye should be white, the skin well browned and the flesh firm and opaque.
  • Meanwhile, make the dressing: whisk the mustard, basil, honey, lemon zest and juice and remaining oil together in a small bowl, and season. Once the fish is cooked, spoon the dressing over and serve.

4 herrings, cleaned, boned and heads and tails removed
1 small onion, sliced
1 tablespoon mixed pickling sauce
2 bay leaves
Salt and freshly ground black pepper
1/4 pint (1/2 cup) dry white wine
1/4 pint (1/2 cup) good wine vinegar

Steps:

  • Preheat the oven to 300 degrees F.
  • Lay the herrings in a fireproof dish, cover with the sliced onion, sprinkle with the pickling spice and add bay leaves, salt and pepper. Mix the wine and wine vinegar and pour over. Cook in the oven for about 1 1/2 hours. Allow to get cold before serving.

Steps:

  • Add the smoked herring filets to a sauce pan with water, cover and bring to a boil. Boil for 5 minutes and drain thoroughly. When cool enough to handle, chop fish into tiny pieces and set aside.
  • Add oil to a skillet and heat
  • Toss in onions and saute until translucent.
  • Add tomatoes, pepper, garlic and thyme and continue to saute for a minute.
  • Add fish and toss to mix, cook for 5 minutes. Stir in lemon juice and green onions; remove from heat. Serve immediately or at room temperature.
