1 boneless pork loin roast (1 1/2 lb), trimmed of fat
1/2 teaspoon olive oil
3 tablespoons chopped fresh sage leaves
2 tablespoons chopped fresh parsley
2 tablespoons chopped fresh oregano leaves
4 1/2 teaspoons chopped fresh chives
1/2 teaspoon salt
1/2 teaspoon freshly ground pepper

Steps:

  • Heat oven to 375°F. Spray broiler pan with cooking spray.
  • Rub pork with oil. In small bowl, mix remaining ingredients. Rub mixture over pork. Place pork on rack in pan. Insert ovenproof meat thermometer so tip is in thickest part of pork and does not rest in fat.
  • Roast uncovered 1 hour or until thermometer reads 145°F. Cover loosely with foil; let stand at least 3 minutes.

8 tablespoons unsalted butter, softened (1 stick)
1 tablespoon stone-ground mustard
1 tablespoon minced fresh garlic
1 tablespoon minced fresh thyme
1 tablespoon minced fresh sage
2 teaspoons minced fresh rosemary
1 (4 lb) boneless pork loin roast
kosher salt
black pepper
6 large yukon gold potatoes, quartered
6 carrots, cut into 2-inch pieces
6 whole shallots, peeled

Steps:

  • Preheat oven to 400°.
  • Stir together the butter, mustard, garlic, thyme, sage, and rosemary in a small bowl.
  • Dry outside of pork roast with paper towels, then rub top and sides with the butter mixture.
  • Season roast with salt and pepper; place buttered side up in a roasting pan.
  • Pat vegetables dry; scatter vegetables in the roasting pan around the pork.
  • Roast meat and vegetables until pork reaches an internal temperature of 145° on an instant read thermometer, about 1 hour and 45 minutes.
  • After cooking roast 50 minutes, stir vegetables to coat with pan drippings.
  • If pork starts to overbrown near end of roasting time, tent it with foil.

1 - (3 lb.) boneless pork loin roast
HERBED PEPPER RUB:
1 tablespoon(s) cracked black pepper
2 tablespoon(s) grated parmesan cheese
2 teaspoon(s) dried basil
2 teaspoon(s) dried rosemary
2 teaspoon(s) dried thyme
1/4 teaspoon(s) garlic powder
1/4 teaspoon(s) salt

Steps:

  • Pat pork dry with paper towel. In small bowl, combine all rub ingredients well and apply to all surfaces of the pork roast. Place roast in a shallow pan and roast in a 350 degrees F. oven for 1 to 1-1/4 hours (18 to 20 minutes per pound), until internal temperature, measured with a meat thermometer, registers 155 degrees F.
  • Remove roast from oven and let rest for 5 to 10 minutes before slicing to serve.

3 -4 lbs pork loin roast, bone in
4 tablespoons wholegrain Dijon mustard
2 1/2 tablespoons fresh thyme, chopped
2 1/2 tablespoons fresh sage, chopped
3 teaspoons garlic, minced
1 teaspoon kosher salt
1 teaspoon cracked black pepper
1 cup barbecue sauce (use a light bbq or grill sauce, I used Stonewall Kitchens Roasted Apple Grill Sauce)

Steps:

  • Season pork roast with salt & pepper.
  • Make a paste with mustard, thyme, sage and garlic. Cover the roast with the herb mixture.
  • Bake at 400 deg or cook on grill over indirect heat until internal temperature reaches 150 deg. (indirect heat - put one side of grill on high - place the roast on the other side with no heat or very low heat enough to keep the temp inside the bbq at 350-400 deg.
  • Turn at least once during cooking time.
  • Brush with Stonewall Kitchen Roasted Apple Grill Sauce during last 15 minutes of cooking. Approx time 1 1/2 - 2 hours for 3-4 lb. roast.
  • Cover loosely with foil and let rest for at least 10-15 minutes. You want the internal temp to rise to 155-160.
