This cauliflower rice is packed with flavor, but won't weigh you down!

Number Of Ingredients 8

1 head cauliflower
3 garlic cloves
1 tablespoon olive oil
1 lemon (juiced)
2 shallots
1/2 tablespoon Italian herbs (or 1 teaspoon oregano and 1 teaspoon parsley)
1/2 teaspoon salt
1/2 teaspoon ground black pepper

Steps:

  • Grate cauliflower in a box grater or in a food processor. Chop out the harder steams and the leaves. Set cauliflower rice aside.
  • Chop garlic cloves into small pieces. Heat a big skillet with a tablespoon of olive oil. Add garlic and sauté until fragrant.
  • Then chop the shallots and separate the whites from the green part. Add white parts to the skillet.
  • Add cauliflower rice and stir continuously for 5 minutes or until cauliflower starts to reduce. Add the green part of the shallots and stir for one more minute. By the end, the cauliflower will turn yellow and tender.
  • Add herbs, ground pepper, and salt.
  • Serve immediately with a drizzle of olive oil and lemon juice.

Cauliflower is a cruciferous vegetable loaded with vitamins, mineral and phytonutrients. Cruciferous vegetables like cauliflower contain glucosinolates, a group of plant compounds which reduce inflammation and have cancer-fighting properties.

Number Of Ingredients 8

1 Tablespoon of olive oil
4-5 cloves of garlic (minced)
¼ tsp of cayenne
½ tsp salt
¼ tsp of pepper
¼ cup of your favorite herbs roughly chopped: basil (parsley, cilantro)
1, 16 oz bag frozen cauliflower rice or about 4 cups fresh riced cauliflower
Salt and pepper to taste

Steps:

  • Heat oil in a large non-stick skillet over medium heat.
  • Add the garlic and saute for 1-2 minutes until fragrant.
  • Add frozen cauliflower, salt, pepper and cayenne stirring to combine. Continue to cook for another 3-4 minutes or more until cauliflower is tender.
  • Add herbs and remove from heat and adjust seasonings
  • Enjoy!

Number Of Ingredients 7

1 small head cauliflower
2 to 3 tablespoons unsalted ghee
2 cloves garlic, grated
Kosher salt and freshly ground black pepper
3 tablespoons chopped dill, plus more for garnish
2 tablespoons minced chives, plus more for garnish
1 tablespoon finely chopped flat-leaf parsley, plus more for garnish

Steps:

  • Cut the cauliflower into large florets. Transfer to a food processor, in batches if necessary, and pulse until the cauliflower resembles rice. Pour into a medium bowl. You should have 3 1/2 to 4 cups of cauliflower rice.
  • Heat a large nonstick skillet over medium heat. Add the ghee and garlic; cook, stirring, until the garlic is golden and fragrant, 1 to 2 minutes. Next, add the cauliflower rice. Cook, stirring often, for 5 minutes. Once the cauliflower rice has softened and is lightly golden, remove from the heat and season with salt and pepper. Stir in the 3 tablespoons dill, 2 tablespoons chives, and 1 tablespoon parsley. Taste and add more salt and pepper, if desired.
  • To serve, scoop the cauliflower rice into a shallow bowl and garnish with more herbs and black pepper.
