Steps:
- Cut the cheese crosswise into 1/2-inch slices, and arrange on a serving platter.
- Sprinkle with onion, herbs, and red-pepper flakes. Drizzle with olive oil and vinegar. Season with salt and pepper.
- Let sit at room temperature for about 30 minutes. Serve with sliced bread.

- 1. Cut cheeses into 1/4 inch squares then in half again Arrange slices on their ends, alternating one piece cheddar then one piece cream cheese. Make sure cheese is very cold before slicing or it may be necessary to spread the cream cheese over the cheddar with a knife.
- 2. Mince garlic and dice pimentos (red peppers), finely chop fresh herbs. Combine herbs, and peppers in a small bowl, add all remaining ingredients, blend well to combine Salt and pepper to taste
- 3. Pour marinade over arranged cheese, cover and refrigerate overnight. There will be a lot of liquid at first but it will absorb into the cheese during the marinating process. Serve with crackers and french bread slices

- Stir together the goat cheese and scallions. Separate the chicken wings at the small joint and save the wing tips for another purpose, like stock. Loosen the skin over the top of the remaining portions, making a pocket between the skin and meat. Fill each pocket with about 1 teaspoon of the goat cheese mixture; do not overfill.
- Combine the garlic, rosemary, salt, pepper and oil in a large bowl. Add the chicken wings and turn to coat well. Refrigerate for several hours.
- Preheat the broiler. Place the chicken wings on a broiler pan with a drip tray and broil until the skin is browned and chicken is cooked through, about 8 minutes.

- 1. Mix the yogurt, salt, and pepper and let drain, refrigerated, for 3 days in a cheesecloth-lined colander or a cheesecloth or muslin bag set over a bowl. There must be space underneath the sack to allow the whey to drain.
- 2. Divide the cheese into 2-ounce portions and place on parchment-lined trays. Allow to drain and dry uncovered overnight, refrigerated.
- 3. Combine the remaining ingredients to make marinade. Add the cheese, and marinate 12 to 24 hours before serving.
