Steps:
- Preheat oven to 425 degrees F.
- Melt the butter in a heavy small skillet over medium heat. Add the anchovies and stir until they dissolve, about 3 minutes. Stir in the herbs, garlic, lemon zest, and crushed red pepper.
- Arrange the bread slices on a large baking sheet. Brush with the anchovy mixture. Sprinkle with the cheese. Bake until the cheese melts and the bread is golden, about 10 minutes. Cut the bread slices in halves and serve.
HERB CHEESE BUTTER
This is a good herb butter, and will last about 4 days in the refrigerator. You don't have to add the cheese if you don't want to.

GARLIC CHEESE HERB BUTTER
This is a multi-use recipe we've enjoyed for years. It's great for garlic bread, on pasta, vegetables, in mashed potatoes, on grilled or baked fish ...whatever you wish! It also makes a wonderful gift (I usually place it in a fabric-lined basket with a loaf of fresh bread and the recipe). Note: Make sure you use real butter - not margarine - for this recipe.

- Blend in food processor or with mixer until it is fluffy.
- Place on plastic wrap and roll into a log. Twist ends of plastic wrap to seal butter inches Best if left in refrigerator at least overnight before using to let flavors meld.
- Store in refrigerator (or freezer), and cut off discs of butter as needed.

FILET MIGNON WITH HONEY-DIJON VINAIGRETTE, LAVENDER FINE HERB GOAT CHEESE AND BUTTER LETTUCE
Steps:
- For the filet mignon: Remove the filet from the refrigerator 30 minutes before grilling. Heat a charcoal or gas grill to high for direct grilling.
- For the fine herb goat cheese: Mash together the cheese, parsley, chives, tarragon, lavender and black pepper in a small bowl.
- For the vinaigrette: Whisk together the honey, vinegar, mustard and salt and pepper to taste in a bowl until combined. Slowly whisk in the olive oil until emulsified.
- Brush the filet mignon with the canola oil and sprinkle with salt. Press the pepper onto the entire surface.
- Grill until golden brown and slightly charred on both sides and cooked to medium-rare doneness, about 6 minutes per side. Remove from the grill and let rest on a cutting board for 5 minutes before thinly slicing
- Fill the lettuce leaves with a few thin slices of the filet, a small dollop of the goat cheese and a drizzle of the vinaigrette.

TOASTED HAM AND CHEESE SANDWICH WITH HERB BUTTER
This is the most delicious sandwich! All ingredients can be adjusted to suit taste, and the herbed butter can be frozen if you have any leftover. I make this sandwich on my George Formean grill. This recipe makes 4 sandwiches. I use Velveeta cheese for this, I find it melts faster, but any thinly sliced cheddar will do.

- In a small bowl combine the softened butter, Dijon mustard, thyme, parsley and just a pinch salt; mix well until smooth and thoroughly combined.
- Arrange 4 slices of bread on a cutting board and top with a slice of cheese.
- Then top with sliced ham, then tomato, then onions and remaining cheese.
- Top with a slice of bread.
- Butter the outside of 4 slices of bread with herbed butter (I like to lightly butter the inside also, but that is up to you).
- Heat a non-stick skillet with a bit of herbed or regular butter (if you buttered the outside of the bread, then you might not want to add in any butter to the skillet).
- Add in the sandwiches, and cook until cheese melts and the bread is golden brown (about 3 minutes on each side).
- Delicious!
