1 cup all-purpose flour
1/2 cup butter or 1/2 cup margarine
4 ounces cream cheese
1 (8 ounce) jar pineapple preserves, well drained
1/4 cup powdered sugar, for rolling (or more)

Steps:

  • Mix all ingredients except preserves.
  • Knead into dough, roll out and cut with biscuit cutter, making a round circle.
  • Place slightly less than a teaspoon of preserves in each cut shape.
  • Fold and crimp edges together with fork.
  • Bake on a cookie sheet at 350 degrees F until light beige, about 12 minutes.
  • After baking, roll in confectioners' sugar.

1 big fresh pineapple, ripe
2 cups ice cubes
1 1/2 cups sugar
1 teaspoon lemon juice (optional)

Steps:

  • Peel the pineapple.
  • Remove the heart.
  • Cut the rest of the pineapple in small pcs.
  • Crush the ice.
  • Use the blender to puree the chopped ice, the pineapple, sugar, and lemon juice.
  • Freeze.
  • For best results, the pineapple should be very cold.

The light granular texture of this tasty ice cream is what makes me love it so much. Swirl in some cajeta toward the end of the churning or top it with some berries if you want to add a complementary flavor, though I think it is perfect just as it is.

Yield makes about 3 cups

Number Of Ingredients 6

1 1/2 cups whole milk
1/4 teaspoon pure vanilla extract
2/3 cup sugar
1/4 teaspoon salt
6 egg yolks
8 ounces requesón, queso fresco, or pot cheese, crumbled

Steps:

  • Combine the milk, vanilla, sugar, and salt in a small pot and bring to a boil over medium heat.
  • Whisk the egg yolks in a large heatproof bowl. Slowly whisk about half of the hot milk mixture into the yolks and stir rapidly. Return the mixture to the pot and cook over low heat, stirring continuously with a wooden spoon or heatproof spatula, until it is thickened and coats the back of a spoon, 10 to 15 minutes. Add the cheese and stir with a whisk until blended (you can use a hand or standing blender if you want it a little less grainy).
  • Chill over an ice bath, stirring, until cool. Refrigerate, covered, until completely cool, about 3 hours, and freeze in an ice cream maker according to the manufacturer's instructions.

2 cups crushed ice

Steps:

  • Process the pineapples, juice and all, in the blender until pureed. Add the ice and process until smooth. Add sugar if desired.
  • Note: If you don't have a refrigerator with a crushed ice dispenser; first process ice cubes in your blender until you have 2 cups' worth.
