Grilled Corn and Tomato Salad with Thai Basil Vinaigrette Dressing image

8 large ears corn
Kitchen twine
1 small or 1/2 large red onion, finely chopped
2 cups grape tomatoes, quartered lengthwise
4 to 5 large Thai basil leaves, roughly chopped
Kosher salt and freshly cracked black pepper
1/2 cup chopped Thai basil leaves
1/2 cup chopped cilantro leaves
1/4 cup lime juice
1/4 cup orange juice
1 tablespoon honey
2 teaspoons freshly grated ginger
1 teaspoon lime zest
1/2 teaspoon kosher salt
1/2 teaspoon fresh cracked black pepper
1/4 cup canola oil

Steps:

  • Preheat a grill to medium-high heat.
  • Salad: Peel back the corn husks, but do not remove them completely. Carefully pick off and discard the wispy silk threads that are attached to the corn. Pull the husks back over the ears and tie the ends closed with kitchen twine. Soak the corn in large bowl of cold water for 10 minutes. Drain the water, shake off the excess and put them on the grill for 15 minutes, turning every 3 to 4 minutes until the corn is tender. Remove them from the grill and let the ears cool to room temperature.
  • Vinaigrette: While the corn is cooling, prepare the dressing. Puree all the ingredients, except the canola oil, in a blender or food processor. After the mixture is well incorporated, slowly drizzle in the canola oil while the processor is still running. Blend for 30 seconds, then transfer the dressing to a bowl.
  • Assembly: Once the corn has cooled, cut the kernels off the cobs into a medium bowl and discard the cobs. Add the red onion and grape tomatoes and mix to combine. Drizzle in 1/2 cup of the Thai Basil Vinaigrette Dressing while lightly tossing the salad together. Reserve the remaining dressing. Gently stir in the basil leaves. Season the salad with salt and pepper to taste, and add more dressing, if desired. Serve slightly chilled on serving plates, using a slotted spoon to keep excess liquids in the bowl.

3 ears corn on the cob, shucked
1 tablespoon olive oil
½ teaspoon salt
½ teaspoon black pepper
½ teaspoon garlic powder
½ teaspoon Italian seasoning

¼ cup basil leaves, roughly chopped

Steps:

  • Preheat grill to medium heat and place a 12x12-inch piece of Reynolds Wrap® Non-Stick Foil on the grill.
  • Brush corn with olive oil, then sprinkle with salt, pepper, garlic powder and Italian seasoning. Place corn on foil and cook for 10 to 12 minutes, turning occasionally until kernels begin to char. Remove from heat and slice kernels off of the cob.

3 tablespoons extra-virgin olive oil
2 tablespoons red wine vinegar
1 tablespoon minced garlic
½ teaspoon white sugar
½ teaspoon kosher salt
ground black pepper to taste
2 ears fresh corn, shucked
4 large heirloom tomatoes
1 cup crumbled feta cheese
1 cup thinly sliced red onion
¼ cup fresh basil leaves
3 tablespoons minced fresh chives

Steps:

  • Whisk oil, vinegar, garlic, sugar, salt, and pepper for vinaigrette together in a small bowl; set aside.
  • Place a steamer insert into a saucepan and fill with water to just below the bottom of the steamer. Bring water to a boil. Add corn, cover, and steam until just slightly tender, 2 to 3 minutes.
  • While the corn is steaming, core each tomato and cut crosswise into 4 thick slices.
  • Carefully remove corn from the pot and remove kernels by running a knife down the sides of the ears.

1/4 pound bacon (4 slices), chopped
1 shallot, minced
1 teaspoon kosher salt, divided
1/4 cup dry white wine
1/2 pound Yukon Gold potatoes, peeled and cut into 1/3-inch dice (1 1/2 cups)
1 1/4 cups plus 1 tablespoon water, divided
4 cups corn (from 8 ears), divided
1 1/2 teaspoons sweet Spanish smoked paprika
1/4 teaspoon chopped fresh thyme
1/2 pound heirloom or cherry tomatoes, chopped or halved

Steps:

  • Cook bacon in a heavy medium saucepan over medium heat, stirring occasionally, until browned and crisp. Transfer with a slotted spoon to paper towels to drain and reserve fat in pan.
  • Cook shallot with 1/4 teaspoon kosher salt in fat in pan over medium heat, stirring occasionally, until softened. Add wine and boil over high heat, stirring and scraping up brown bits, until reduced by half, about 3 minutes. Stir in potatoes, 1/2 cup water, and 1/2 teaspoon kosher salt and simmer, uncovered, stirring occasionally, until liquid is reduced by thouree quarters and thickened, about 10 minutes.
  • Meanwhile, purée 1 cup corn with 1 tablespoon water in a blender. Force thourough a fine-mesh sieve into a bowl, pressing hard on and then discarding solids.
  • Add remaining 3 cups corn kernels to potato mixture along with paprika, thyme, remaining 3/4 cup water, and remaining 1/4 teaspoon kosher salt and simmer, partially covered, stirring occasionally, until corn and potatoes are tender and most of liquid is evaporated, 10 to 12 minutes.
  • Remove from heat and stir in tomatoes, corn liquid, 1/4 teaspoon pepper, and kosher salt to taste. Serve sprinkled with bacon.

HEIRLOOM TOMATO, MOZZARELLA AND BASIL SIDE DISH



Heirloom Tomato, Mozzarella and Basil Side Dish image

This is a 5 minute "recipe". It's so simple it's silly. We came up with the idea when planning the food for my wedding last summer. We did all the cooking for 100 ourselves and really had no way to use my stove on the big day. Everything we served, except the salmon on the outdoor bbq, was a cold dish. The challenge we had was coming up with a vegetable "side" dish, that wasn't a salad to go with the salmon. This was the perfect answer. It was a huge hit. I think the key was using fabulous heirloom tomatoes, if you can't get heirlooms, use the best tastiest tomatoes you can. Using "buffalo mozzarella" is great if you have it. This recipe is just for 2 servings...it's obviously easy to adjust! You do need a knife and fork for this. Enjoy!!

1 large heirloom tomato
2 pieces mozzarella cheese, round, cut 1/8 to 1/4 inch thick
4 basil leaves
2 tablespoons balsamic vinegar, drizzled to taste
2 tablespoons extra virgin olive oil, drizzled to taste
salt, to taste

Steps:

  • Cut the tomato in half. If tomato will not sit flat, take a small thin slice off of the bottom.
  • Place 1 piece of mozzarella on top of each tomato half.
  • Chiffonade the basil into thin strips and place 1/2 the basil on top of the mozzarella.
  • Drizzle with olive oil and balsamic (no need to pre-mix the two together) over the tomato/mozzarella/basil.
  • Serve with salt to taste (we let guests add their own).
