1/2 cup extra-virgin olive oil
1 jar capote (large) capers, drained well and patted dry
1 clove garlic, grated or finely chopped
1 teaspoon anchovy paste
6 plum tomatoes, sliced 1/2-inch thick
1 small red onion or 1/2 medium, very thinly sliced
1/2 cup coarsely chopped flat-leaf parsley
A handful pitted good quality black olives
Salt and freshly ground black pepper
1 teaspoon red pepper flakes, for seasoning

Steps:

  • Heat 1/4 cup oil in small pan over medium-high heat. Add capers but be careful, they will spatter. Fry the capers 1 1/2 to 2 minutes until golden, drain on paper towels.
  • Combine remaining 1/4 cup extra-virgin olive oil with garlic and anchovy paste. Add tomatoes, onion, parsley and olives. Season with red pepper flakes and salt and pepper. Garnish with capers and serve.

4 large multi-colored heirloom tomatoes, washed and dried
Coarse sea salt
1 large ball Burrata cheese
1/2 cup fresh basil leaves, washed and dried
Extra-virgin olive oil, for garnish
Freshly ground black pepper

Steps:

  • Slice the tomatoes into 1/2-inch thick slices. Generously season the tomato slices with salt. Arrange the tomato slices on a platter, overlapping slightly. Add the Burrata on top and garnish with torn basil leaves. Drizzle with olive oil and season with salt and pepper.

1/2 cup olive oil
1/4 cup drained, dried capers
Kosher salt
15 washed, well-dried fresh basil leaves
1/2 large English hothouse cucumber, quartered, sliced 1/4" thick
1 pound heirloom tomatoes, chopped (about 3 cups)
1/4 cup thinly sliced red onion
2 tablespoons red wine vinegar
Freshly ground black pepper
6 slices sesame-seeded Italian bread or country bread, toasted
2 garlic cloves, halved

Steps:

  • Heat oil in a medium skillet over medium-high. Add capers and fry, stirring occasionally, until crisp, about 2 minutes. Using a slotted spoon, transfer capers to a paper towel-lined plate to drain and season with salt. Fry basil in batches in same skillet until crisp, about 30 seconds. Transfer to paper-towel lined plate and season with salt. Let oil in pan cool slightly.
  • Toss cucumber, tomatoes, onion, vinegar, fried capers, and 1/4 cup warm caper-basil oil in a large bowl. Season with salt and pepper. Vigorously rub one side of hot toasts with garlic, then top with tomato mixture. Top with fried basil leaves and serve warm.

This dish is all about the tomatoes! "Heirloom" refers to certain cultivars that have been nurtured and preserved for generations, and any varity will do for this dish. The capers add a nice crispy, crunchy, savory element. Adapted from The Conscious Cook by Tall Ronnen.

1/4 cup extra virgin olive oil plus 1 tsp. olive oil
1 tablespoon capers, drained
3 lbs mixed heirloom tomatoes, cut into 1/2-inch wedges
2 tablespoons fresh basil, cut into chiffonade
sea salt
fresh ground black pepper

Steps:

  • Heat 1 teaspoons of the oil in a small saute pan over medium high heat. Add the capers and cook until crisp, 1-2 minutes. Remove to a paper towel to drain.
  • Place the tomatoes in a large bowl. Drizzle with the remaining 1/4 cup olive oil, add the basil, season with salt and pepper to taste. Gently toss to coat.
  • Sprinkle the capers on the salads after they're plated so they stay crisp. Enjoy!
