MOIST, DENSE, HEAVY CREAM POUND CAKE
I don't think i will try baking another pound cake after making this one! It has the smoothest texture that is both dense and moist. This is easily put together, and it is hard to mess up! To your own flavor preference, you may add additional flavors such as butter or maple extracts, or 2 tsp. of lemon or orange juice with the zest. let eggs and butter sit out at room temp. for 45 minutes to an hour before making. cake flour is used to increase the smooth texture. Just be aware that you might have the whole thing in one sitting! A friend had this served with peanut butter, but I'm sure this would be delicious served with any icing or spread, even whipped cream.

Steps:
- Cream sugar and softened butter until smooth.
- Add eggs in 1 at a time, mixing well between each addition.
- sift in 1 1/2 cups cake flour, and combine.
- Add heavy cream to mixture, stir in well.
- sift in the remaining 1 1/2 cups cake flour and combine until smooth.
- Stir in vanilla extract and additional optional flavors.
- Pour into Greased and floured bundt pan or 2 loaf pans.
- Place in the middle of a cold oven, turn on heat to 350 degrees F.
- Bake 60-70 minutes, until a knife inserted in the middle of the cake comes out clean.
- (the smaller the pan, the less time it will take to bake.).
- Remove from oven and let cool before removing from pan.
- store in an airtight container or wrap with aluminum foil.

CORNISH HEAVY (HEVVA) CAKE
Traditional Cornish heavy cake, using the recipe handed down through my family to me. This recipe uses no eggs. Great with a cup of tea!

Steps:
- Preheat the oven to 190°C. Line a medium, square cake tin.
- Rub the butter into the flour until it's the texture of fine breadcrumbs. Add the sugar and fruit and mix well. Add the milk and mix to a soft, stiff dough.
- Press into the cake tin, pushing down firmly in the corners. Score the top of the cake with a sharp knife, making criss-cross diagonal lines.
- Place in the middle of the preheated oven and bake for 35-40 minutes, or until golden brown and a skewer inserted in the middle comes out clean.
- Remove from the oven and while still warm, brush with milk and give a generous sprinkling of granulated sugar. Allow to cool and cut generous slices.

- Preheat oven to 350°F. Grease a 15 x 10 x 1-inch jelly roll type pan. Combine all ingredients in a large bowl. Beat at medium speed for 2 minutes with an electric mixer. Pour into prepared pan, just enough to cover the bottom of the pan. Set the rest aside. Bake for 10 to 15 minutes or until it can hold the crumbs. Carefully crumble the heavy crumb topping onto the cake covering completely. Bake until toothpick inserted into center comes out clean. When cake is cool, sprinkle with confectioners sugar. Top heavy crumb topping: Mix all dry ingredients together. Drizzle butter into dry ingredients slowly, using fork to mix and form large crumbs. Add vanilla and mix. Put aside until ready to use.
