Cucumber Salad with Peppers and Onion image

This crisp and colorful salad is an ideal way to use up all that produce. "It's so good on hot summer evenings," says NanCee Maynard of Box Elder, South Dakota. "I've even added chopped zucchini for variety."

3 cups thinly sliced cucumbers
3/4 cup chopped red onion
1/2 cup each chopped green, sweet red and yellow peppers
1/2 cup cider vinegar
2 tablespoons sugar

Steps:

  • In a large serving bowl, combine the cucumbers, onion and peppers. In a small bowl, whisk vinegar and sugar. Pour over vegetables; toss to coat. Chill until serving. Serve with a slotted spoon.

This is an easy salad that is perfect for a warm summer day.

1 cup water
½ cup distilled white vinegar
¼ cup vegetable oil
¼ cup sugar
2 teaspoons salt
1 tablespoon fresh, coarsely ground black pepper
3 cucumbers, peeled and sliced 1/4-inch thick
3 tomatoes, cut into wedges
1 onion, sliced and separated into rings

Steps:

  • Whisk water, vinegar, oil, sugar, salt, and pepper together in a large bowl until smooth; add cucumbers, tomatoes, and onion and stir to coat.
  • Cover bowl with plastic wrap; refrigerate at least 2 hours.

Heavenly Cucumber Salad image

This is a nice little twist on that good old cucumber salad. I found this recipe in Gardening News. Cooking time is the standing time.

Number Of Ingredients 9

3/4 teaspoon salt
3 medium cucumbers, peeled and sliced thin
1 garlic clove, cut in half, lengthwise (optional)
1/4 cup cider vinegar
1 tablespoon olive oil
2 tablespoons water
2 teaspoons sugar
1 pinch black pepper
1/4 teaspoon paprika

Steps:

  • Add the salt to the cucumbers and let them stand in a large bowl.
  • After 30 minutes the juice will have drained from the cucumbers.
  • Drain the juice from the bowl.
  • Rub a second large bowl with the garlic halves. (optional).
  • In the second bowl mix the oil, vinegar, water, and sugar.
  • Add drained cucumbers and mix well.
  • Sprinkle with pepper and paprika.
  • Cover and chill for 30 minutes before serving.
  • Enjoy.
