BANANA BARS WITH CREAM CHEESE FROSTING
I make these banana bars with cream cheese frosting whenever I have ripe bananas on hand, then store them in the freezer to share later. With creamy frosting and big banana flavor, this treat is a real crowd-pleaser. -Debbie Knight, Marion, Iowa

- Preheat oven to 350°. In a large bowl, cream butter and sugar until light and fluffy. Add eggs, sour cream and vanilla. Combine flour, baking soda and salt; gradually add to creamed mixture. Stir in bananas. , Spread into a greased 15x10x1-in. baking pan. Bake until a toothpick inserted in the center comes out clean (do not overbake), 20-25 minutes. Cool., For frosting, in a large bowl, beat cream cheese, butter and vanilla until fluffy. Gradually beat in enough confectioners' sugar to achieve desired consistency. Frost bars. Store in the refrigerator.

- 1. Preheat oven to 350 degree F. Spray a 9 x 13 baking dish with nonstick spray. In a large bowl, cream together the butter and sugar untill fluffy. Add eggs one at a time. Beat in vanilla, sour cream and bananas. Sift together the flour, sat and soda. Add to wet ingredients and beat just until incorporated.
- 2. Spread into prepared dish. Bake for 45 minutes or until pick comes out clean. Cool on rack.
- 3. Make frosting. In a medium bowl, beat together the cream cheese and butter. Next the vanilla. Beat in sugar a little at a time until all is added and creamy.
- 4. Spread frosting over cooled bars, sprinkle with pecans if desired, cut and serve!

My sister gave me this recipe, which is always in demand with family, friends and co-workers. It's amazing how fast these tempting bars vanish when I serve them! The cream cheese frosting is heavenly.

- In a small saucepan, bring butter and water to a boil. Remove from the heat; set aside. In a large bowl, beat the sugars, bananas, buttermilk, eggs and vanilla until blended. Combine flour and baking soda; gradually add to sugar mixture. Beat in butter mixture until blended. Stir in nuts., Pour into a greased 15x10x1-in. baking pan. HEAVENLY BANANA CREAM BARS
Steps:
- 1. Combine graham crackers, 1/4 cup sugar, and melted butter. Press into a 9x13 pan and chill.
- 2. Combine cream cheese, 1/4 cup sugar, and cold milk. Beat until smooth. Fold in 1/2 tub of Cool Whip and spread over the crust.
- 3. Slice the bananas over the cream cheese layer.
- 4. Mix pudding and milk according to package directions. Pour over bananas.
- 5. Chill for several hours or overnight. Spread with remaining Cool Whip before serving.
