Spam is popular in Hawaii and is used in many different types of recipes. This one makes a great breakfast.

Number Of Ingredients 12

2 cup(s) frozen potatoes, diced or shredded
1/2 cup(s) chopped onion
1/4 medium green bell pepper, cut into 1-inch strips
1/4 medium red or yellow bell pepper, cut into 1-inch strips
2 teaspoon(s) oil
12 ounce(s) spam, cut into julienne strips
4 - eggs, or egg product substitute
1/4 teaspoon(s) dried basil
1/8 teaspoon(s) salt
1/8 teaspoon(s) pepper
- hot sauce, to taste
1/4 cup(s) cheddar cheese, shredded

Steps:

  • In large non-stick skillet, cook potatoes, onion, and peppers in oil over medium-high heat 5 minutes, stirring constantly.
  • Add spam; cook and stir 5 minutes.
  • In small bowl, combine eggs, basil, salt, pepper, and hot pepper sauce; blend well.
  • Pour over mixture in skillet. Cover. Cook over medium-low heat 8-12 minutes or until set.
  • Sprinkle with cheese; remove from heat.

A self-concocted recipe born from long nights and late mornings. A truly hearty, robust stand-alone meal. Known coast to coast thanks to wonderful friends. Likely one of my most memorable dishes according to said friends. Serve with a side of salsa, a tortilla, and your favorite glass of juice.

½ pound sage pork sausage (such as Jimmy Dean®)
1 ½ cups cubed red potatoes
½ onion, diced
1 tablespoon chopped garlic
1 cup sliced baby bella mushrooms
3 eggs
1 teaspoon parsley
½ cup shredded Mexican cheese blend
sea salt to taste
fresh cracked black pepper to taste

Steps:

  • Place sausage in a large cast iron skillet over medium heat; cook and stir until crumbly and starting to brown, about 5 minutes. Stir in potatoes; cook until starting to brown, about 5 minutes. Add onion and garlic; cook and stir until fragrant, about 3 minutes. Stir in mushrooms; cook until tender, about 5 minutes.
  • Push mixture to the sides of the skillet with a spatula to make space in the center. Crack eggs into the center and sprinkle with parsley. Sprinkle Mexican cheese blend around mixture on the edges. Cover skillet and cook until egg whites are set but yolk is still runny, 2 to 3 minutes. Remove from heat, pierce yolks and mix to combine. Season with salt and black pepper.
