A stick to your ribs thick and hearty soup, filling and very good. Easy and quick to make. A family favorite in our house! Serve with fresh biscuits.

1 ½ pounds ground beef
1 onion, minced
4 carrots, minced
3 celery ribs, thinly sliced
½ cup barley
1 (28 ounce) can diced tomatoes
2 cups water
3 (10 ounce) cans beef broth
1 (10.75 ounce) can condensed tomato soup
1 bay leaf
1 tablespoon parsley
1 teaspoon minced garlic
½ teaspoon dried thyme
ground black pepper, to taste

Steps:

  • Heat a large soup pot over medium-high heat, and crumble in the ground beef. Cook and stir until the beef is evenly browned and no longer pink. Drain, and discard any excess grease.
  • Stir in the onion, carrots, celery, and barley. Pour in diced tomatoes, water, broth, and tomato soup. Season with bay leaf, parsley, garlic, thyme, and pepper. Bring to a boil. Reduce heat, and cover; simmer for 2 hours, stirring frequently. Remove bay leaf before serving.

Number Of Ingredients 11

1 lb lean ground beef (the leaner the better)
1/2 pkg onion soup mix
2 can(s) green beans
1 can(s) Campbell's tomato soup (don't use off brand)
2 pkg 4 cheese mashed potatoes mix (sold in individual packets at the store) plus ingredients to prepare potatoes
2 c shredded cheddar cheese
salt and pepper, to taste
1 can(s) French's Cheddar French Fried onions
3 Tbsp butter (optional)
sour cream (optional)
chopped bacon (optional)

Steps:

  • 1. Preheat oven to 350 degrees F. In a large skillet brown ground beef. About 1/2 way through cooking the beef add in 1/2 a package of onion soup mix, and let it cook the rest of the way with the beef. Taste this before adding any additional salt, as the onion soup mix can be quite salty on its own!
  • 2. Drain the beef completely and pat it dry to soak up any additional grease left behind.
  • 3. While the beef is cooking, prepare your potatoes per package directions.
  • 4. I usually add in sour cream, butter, and chopped bacon to the potatoes for extra flavor.
  • 5. In a deep oven-safe dish or a 9x13 baking dish spread a layer of potatoes in the bottom.
  • 6. Layer the remaining ingredients as follows: beef mixture, green beans, tomato soup, and French's cheddar onions if you're using them.
  • 7. Finally, top with the last part of the mashed potatoes.
  • 8. Place casserole in the oven for 20-30 minutes or until heated through and the potatoes begin to get a golden color.
  • 9. At the last 5 minutes, sprinkle cheese over top of the dish. Cook until melted completely. This is an all-in-one dish and can be served with a light salad on the side.

1 1/2 pounds ground sirloin
Crumbled blue cheese, (optional)
Light olive oil
Coarse salt and freshly ground pepper
Thinly sliced cheddar cheese, (optional)
4 buns
Unsalted butter, room temperature, for buns
Sliced onion, (optional)
4 to 8 slices cooked bacon, (optional)
Sliced tomatoes, (optional)
Lettuce, (optional)
Ketchup, (optional)
Mustard, (optional)
Mayonnaise, (optional)
Relish, (optional)

Steps:

  • Divide sirloin into four equal portions, and form patties, each about 1 inch thick and 4 inches in diameter. Be careful not to overhandle the meat, which compresses and toughens it. Place a small amount of blue cheese in the center of each patty, if desired. Rub patties lightly with a very small amount of olive oil.
  • Heat a cast-iron skillet over high heat until very hot. Place patties in skillet, and cook for 4 minutes. Turn, and season with salt and pepper. Top with cheese, if desired, cover, and cook 3 minutes more for medium-rare.
  • Meanwhile, slice open buns, and toast them; spread with butter, if desired. When burgers are done, serve on toasted buns with any combination of the following: onions, bacon, tomatoes, lettuce, ketchup, mustard, mayonnaise, and relish.

1 tablespoon canola oil
1 lb ground meat (I know, the title says hamburger, but I actually use Turkey)
1 onion, chopped
4 celery ribs, sliced
1 cup carrot, sliced
2 cups frozen corn
2 cups frozen green beans
1 (46 ounce) can V8 vegetable juice
1/2 teaspoon celery seed
3 garlic cloves, minced
salt & pepper

Steps:

  • Add oil to large Dutch Oven type dish.
  • Brown the ground meat until cooked through.
  • Add onions, celery, and carrots. You can add other vegetables to this dish, but these are the main ones that I remember from the original recipe.
  • Cook until the vegetables get nicely carmelized. Add remaining ingredients.
  • Simmer for about an hour. We've rushed this and it's still good, but the longer it simmers the richer the flavor.
  • This tastes good with nice, fresh cornbread. I've even made Cheddar-Dill Bisquick Drop muffins as well. Crusty bread would work great too!

2 lb ground beef chuck
4 teaspoons Worcestershire sauce
2 teaspoons kosher (coarse or sea) salt
2 teaspoons cracked black pepper
4 hamburger buns, split
4 lettuce leaves
4 large tomato slices
4 red onion slices
Mustard and mayonnaise, if desired

Steps:

  • Heat gas or charcoal grill. Place meat in large bowl; pour Worcestershire sauce over beef and gently mix with hands. Divide meat into 4 very loose balls, then gently shape into patties 1/2 to 3/4 inch thick and about 1/2 inch in diameter larger than your hamburger buns. Slightly press center of each patty.
  • Sprinkle 1/4 teaspoon salt and 1/4 teaspoon pepper on 1 side of each patty. Place patties, seasoned side down, on grill over medium heat. Sprinkle top of each patty with 1/4 teaspoon salt and 1/4 teaspoon pepper. Cover grill; cook 10 to 12 minutes, turning once, until meat thermometer inserted in center of patties reads 160°F.
  • Serve burgers on buns with lettuce, tomato, onion, mayonnaise and mustard.
