Here in the middle of cattle country, our days always seem to be busy. This dish is true to its name-it's filling and keeps us going all morning. We also like to serve it to guests to give them a taste of true country cooking.

Number Of Ingredients 8

1 pound bulk pork sausage
1/2 cup chopped onion
1-1/2 cups shredded cheddar cheese, divided
1 package (10 ounces) frozen chopped spinach, thawed and well drained
1 jar (4-1/2 ounces) sliced mushrooms, drained
12 large eggs
2 cups heavy whipping cream
1/4 teaspoon ground nutmeg

Steps:

  • In a large skillet, cook sausage and onion over medium heat until meat is no longer pink; drain. Remove from the heat; stir in 1 cup cheese, spinach and mushrooms. Transfer to a greased 13x9-in. baking dish. , In a bowl, beat eggs. Add cream and nutmeg; mix well. Pour over sausage mixture. Bake, uncovered, at 350° or until a knife inserted in the center comes out clean. Sprinkle with remaining cheese. Let stand for 5 minutes before cutting.

1 pkg. frozen southern style hash brown potatoes, about 6 cups or 28 oz
1 pkg. shredded sharp cheddar cheese, 8 oz, or 2 cups
10 eggs, well beaten
1 cup reduced fat sour cream
1 cup skim or low fat milk
2 t. honey dijon mustard, optional
1 t. salt
1/4 t. ground pepper
sliced red onion, optional
parsley sprig, optional
mixed greens, optional

Steps:

  • 1. Preheat oven to 350. Evenly coat a 13 x 9 inch 3 quart glass baking dish with cooking spry. Evenly spread potatoes in the dish. Sprinkle with cheese. In large bowl, beat together eggs, sour cream, milk, mustard, salt and pepper until thoroughly blended. Pour over the potatoes. Bake until puffed and browned and no visible liquid egg remains, about 45 minutes. Garnish with onion and parsley and serve with mixed greens if desired. Makes 8 servings. Cooking the Costco Way

Here's a quick breakfast casserole you can whip up with ingredients you have on hand. I didn't use reduced-fat sour cream or skim/low-fat milk, but I'll post the recipe as written. I added the onions and parsley with the milk mixture instead of as a garnish. I also used a pepperjack cheese in place of the cheddar and halved the recipe. 6 eggs
1-1/2 cups egg substitute
1 cup half-and-half cream
1 cup fat-free milk
1/4 teaspoon ground nutmeg

Steps:

  • In a large nonstick skillet, cook the sausage, mushrooms and onion over medium heat until meat is no longer pink; drain. Remove from the heat; stir in spinach and 1/2 cup cheese. Transfer to a 13x9-in. baking dish coated with cooking spray., In a large bowl, beat the eggs, egg substitute, cream, milk and nutmeg. Pour over sausage mixture. Bake, uncovered, at 350° for 35-40 minutes or until a knife inserted in the center comes out clean. Sprinkle with remaining cheese. Let stand for 5 minutes before cutting.

1 large head cauliflower, stalk and stems removed, cut into florets
10 large eggs, lightly beaten
1 cup milk
3/4 cup sharp cheddar cheese, grated
3/4 cup swiss cheese, grated
1/2 teaspoon garlic powder
kosher salt and freshly ground pepper, to taste
fresh dill, chopped, garnish

Steps:

  • Preheat oven to 350º and lightly grease a 9x13 baking dish with butter or non-stick spray. Place cauliflower florets in a large saucepan 1-2-inches full of water and cover. Steam over medium heat until tender. 8-10 minutes. Drain cauliflower and transfer to baking dish. Whisk eggs and milk together in a large bowl and add cheeses, reserving 1/3 cup to sprinkle over the top, garlic powder, salt and pepper. Pour egg mixture over the cauliflower and top with remaining cheese. Place in oven and bake for 40 minutes, or until cheese is melted and bubbly and top is golden brown. Remove from oven, garnish with fresh dill and serve immediately.
