CREAMY TOMATO BASIL SOUP

This creamy Tomato Basil Soup is restaurant-quality DELICIOUS and it's loaded with hidden vegetables.

Number Of Ingredients 16

1 Tablespoon olive oil
2 14.5 ounce cans diced tomatoes (, with the juice)
2 carrots (, finely diced (about 1 cup))
1 small onion (, finely diced (about 1 cup))
3 ribs celery (, finely diced (about 1 cup))
2 Tablespoons tomato paste
4 cups low-sodium chicken broth
1 teaspoon dried oregano leaves
1 1/2 teaspoons dried basil leaves
½ cup butter
½ cup all-purpose flour
1 cup freshly grated parmesan cheese
1½ cups half and half ((or whole milk))
1 teaspoon salt
¼ teaspoon freshly ground black pepper
1/4 cup chopped fresh basil

Steps:

  • Add oil to a large soup pot over medium high heat. Once hot, add carrots, onions, and celery and sauté them for a few minutes.
  • Add diced tomatoes, tomato paste, chicken broth, oregano, and dried basil. Bring to a gentle boil and cook for several minutes, until the vegetables are tender.
  • Use an immersion blender or regular blender (you may need to do this in batches, depending on how big your blender is) to puree the soup until smooth. (This step is optional, if you like a smooth soup). Return it to the soup pot.
  • In a separate pot, prepare the roux. Add butter to the pot over medium low heat and allow to melt. Stir in the flour and whisk together constantly for about 10 minutes or until the roux is a nice golden brown color.
  • Add a big ladle full of the soup to the roux--it will start to form a thick paste. Add a few more big scoops of soup to the roux and stir well until smooth. Add the roux mixture to soup pot and stir to combine.
  • Stir in the parmesan cheese, half and half, salt, pepper and basil. Add additional oregano and basil if needed, to taste. Stir well. Cook for a few more minutes until warmed through.
  • Store tomato basil soup covered in the refrigerator for up to one week.
  • Try it served in a yummy homemade bread bowl!

3 tablespoons good olive oil
1 1/2 cups chopped red onions (2 onions)
2 carrots, unpeeled and chopped
1 tablespoon minced garlic (3 cloves)
4 pounds vine-ripened tomatoes, coarsely chopped (5 large)
1 1/2 teaspoons sugar
1 tablespoon tomato paste
1/4 cup packed chopped fresh basil leaves, plus julienned basil leaves, for garnish
3 cups chicken stock, preferably homemade
1 tablespoon kosher salt
2 teaspoons freshly ground black pepper
3/4 cup heavy cream
Croutons, for garnish

Steps:

  • Heat the olive oil in a large, heavy-bottomed pot over medium-low heat. Add the onions and carrots and saute for about 10 minutes, until very tender. Add the garlic and cook for 1 minute. Add the tomatoes, sugar, tomato paste, basil, chicken stock, salt, and pepper and stir well. Bring the soup to a boil, lower the heat, and simmer, uncovered, for 30 to 40 minutes, until the tomatoes are very tender.
  • Add the cream to the soup and process it through a food mill into a bowl, discarding only the dry pulp that's left. Reheat the soup over low heat just until hot and serve with julienned basil leaves and/or croutons.

4 large carrots (1 pound; 455g), diced (see note)
2 medium yellow onions (1 pound; 455g), diced (see note)
3 large (28-ounce/795g) cans whole tomatoes, crushed roughly by hand
4 cups (950ml) homemade or store-bought low-sodium chicken stock
1/4 teaspoon baking soda, plus more as needed (optional)
8 ounces heavy cream (1 cup; 225g)
Up to 1 1/4 teaspoons (5g) Diamond Crystal kosher salt
1/2 teaspoon (1g) freshly ground black pepper, or more to taste
1/8 teaspoon ground cayenne, or more to taste
1/2 ounce fresh basil leaves (1 loosely packed cup; 15g), cut into chiffonade

Steps:

  • In a 6-quart stainless steel pot, melt butter over medium heat until foaming, then add carrots and onions. Cook, stirring occasionally until butter starts to brown on the bottom, about 15 minutes. Add tomatoes, followed by chicken stock. Continue cooking, stirring occasionally, until quite thick, about 1 1/2 hours; adjust heat as needed to maintain a gentle simmer.

1/2 cup finely chopped onion

1 1/4 cups milk
32 ounces stewed tomatoes

Steps:

  • Cook onion and garlic in butter until soft and translucent.

3 cups chicken broth
1 cup minced fresh basil
1/4 cup butter, cubed
3 tablespoons all-purpose flour
White pepper to taste
3 cups milk
1/2 cup sour cream

Steps:

  • In a saucepan, simmer broth and basil, uncovered, for 15 minutes. In another saucepan, melt butter. Stir in flour and pepper until smooth; gradually add milk. Bring to a boil; cook and stir for 2 minutes or until thickened. Reduce heat; gradually stir in broth and sour cream (do not boil).

24 -32 ounces of diced peeled tomatoes (3-4 cans)
1 (8 ounce) can tomato paste
3 garlic cloves, chopped fine
1/2-1 medium onion
2 cups water
1 large beef bouillon cube (makes 2 cups)
4 -5 fresh basil leaves
1 tablespoon italian seasoning
1 -1 1/2 cup sour cream
1 bay leaf
pepper
shredded parmesan cheese
garlic toast

Steps:

  • In a crock pot or large pot, mix water, bay leaf and bouillon until cube disolves.
  • add tomatos and tomato paste.
  • Mix with a wooden spoon until blended.
  • Add garlic and onions.
  • Add italian seasoning and pepper to taste.
  • Add sour cream (1 to 1 1/2 cups depending on your taste).
  • Keep on low for 3-4 hours in a crock pot or pot to get the best taste, or heat on medium until hot.
  • Serve in bowls sprinkle with parmesan and add garlic toast if desired.
