1-1/2 pounds potatoes (about 3 medium), peeled and cut into 3/4-inch cubes
1 large onion, chopped
2 medium carrots, shredded (about 3/4 cup)
3 celery ribs, sliced
4 cans (6-1/2 ounces each) chopped clams, undrained
5 bacon strips, cooked and crumbled
1 tablespoon dried parsley flakes
1 bay leaf
1-1/2 teaspoons dried thyme
1/4 teaspoon coarsely ground pepper
1 can (28 ounces) diced tomatoes, undrained

Steps:

  • Place all ingredients in a 4- or 5-qt. slow cooker. Cook, covered, on low until vegetables are tender, 7-9 hours. Remove bay leaf before serving.

3 bacon slices, chopped
1 cup chopped onion
1 cup chopped celery
1 carrot, peeled, chopped
2 teaspoons dried thyme
1 large bay leaf
1 pound red-skinned potatoes, peeled, cut into 1/2-inch pieces
1 8-ounce bottle clam juice
1 cup whole milk
1 15-ounce can creamed corn
2 6.5-ounce cans chopped clams

Steps:

  • Sauté bacon in heavy medium pot over medium heat until fat begins to render, about 3 minutes. Add onion, celery and carrot and sauté until vegetables begin to soften, about 8 minutes. Add thyme and bay leaf; stir 30 seconds. Add potatoes, clam juice and milk. Cover pot, reduce heat to medium-low and simmer until potatoes are tender, about 20 minutes. Add corn and clams with juices; simmer about 2 minutes. Season soup to taste with salt and pepper and serve.

6 slices low-fat bacon, chopped
1 stalk celery, diced small
2 carrots, diced small
3 stalks green onions, chopped
4 potatoes, cubed
1 large yellow onion, chopped
2 garlic cloves, chopped
1/2 cup water
3 (4 ounce) cans minced clams with juice
3 (8 ounce) cans evaporated milk
4 drops Tabasco sauce
salt and pepper
1/2 teaspoon dill weed

Steps:

  • In heavy pot (dutch oven) saute bacon until almost crispy.
  • Remove bacon and set aside leaving bacon drippings in pan.
  • Add all vegetables in bacon drippings with clam juice, Tabasco sauce and 1/2 cup water simmering until vegies are soft, but firm, not mushy.
  • Add small amounts of water to keep vegies from scorching if needed.
  • Gently stir in clams.
  • Turn heat down very low so milk will not scorch.
  • Slowly pour in evaporated milk, gently stirring all ingredients together.
  • Add salt and pepper to taste as well as dill weed.
  • Simmer until all ingredients are warm, being careful not to scorch milk.
  • Enjoy with warm corn bread and fresh fruit.

2 slices bacon, browned and crumbled
1/4 cup flour
1/2 cup water
1/2 teaspoon salt
1/8-1/4 teaspoon pepper
1 (14 ounce) can evaporated milk
1 cup potato, finely chopped
1/4 cup onion, finely chopped
1/4 cup celery, finely chopped
1 cup half-and-half cream
1 (4 1/2 ounce) can clams, chopped
2 tablespoons butter

Steps:

  • Cook potatoes until tender.
  • Melt butter in a medium size saucepan over medium heat. Add onions and celery. Cook, stirring frequently, for 7-8 minute or until tender.
  • Add finely chopped potatoes to onion and celery.
  • Combine evaporated milk and flour in small bowl until blended; add to vegetable mixture.
  • Stir in half & half, clams with juice, water, salt, pepper and crumbled bacon.
  • Reduce heat to medium-low; cook, stirring frequently, for 15-20 minute or until creamy and lightly thickened.
