Serve this lamb meatloaf and salad at a summer picnic or packed up for lunch. It's tasty and healthy too, delivering all five of your five-a-day

a little rapeseed oil for the tin
1 onion , finely chopped
1 large aubergine , cut into slices lengthways then finely diced (about 320g)
250g pouch cooked brown rice
3 tbsp tomato purée
1 tsp vegetable bouillon powder
½ pack dill , chopped, plus extra to serve (optional)
2 tsp each ground cinnamon and allspice
250g lamb mince (10% fat)
2 large eggs
227g can chopped tomatoes
1 pack of three peppers , deseeded and roughly chopped
2 large courgettes (about 500g), halved and sliced
2 large red onions , sliced
1 tbsp rapeseed oil
1 tbsp cider vinegar
1 garlic clove , finely grated
handful chopped mint

Steps:

  • Heat oven to 180C/160C fan/gas 4. Line a 900g loaf tin with baking parchment and lightly oil it.
  • Put the onion and aubergine in a large bowl with the rice, tomato purée, bouillon, dill, spices and lamb. Mix and squash together with your hands then add the egg and mix again. Tip the can of tomatoes into the base of the loaf tin then pack the mince mixture on top and press down lightly to compact it. Cover the tin with foil and bake in the oven for 1 hr 40 mins, taking off the foil for the last 15 mins.
  • Once the meatloaf has been cooking for 1 hr, tip the peppers, courgettes and red onion into a roasting tin and toss with the oil. Roast in the oven with the meatloaf for 40 mins until the vegetables are tender and a little charred.
  • Take the meatloaf and roasted veg from the oven, leave the loaf to settle for 5 mins, then tip out onto a platter or board, remove the baking parchment and scatter with dill if using. Toss the roasted veg with the vinegar, garlic and mint and serve them with the meat loaf.

Turkey meatloaf is a favorite in our house! This healthy meatloaf recipe made with lean ground turkey is easy and delicious.

1/4 cup plus 2 tbsp ketchup (I use organic)
2 tsp Worcestershire sauce
1/2 small onion (minced)
1 tsp olive oil
1.3 lb ground turkey (99% or 93% (I prefer 93))
1/2 cup seasoned whole wheat or gluten-free breadcrumbs (I like 4C)
1 large egg
1 tsp marjoram
1 teaspoon kosher salt

Steps:

  • Preheat the oven to 350F.
  • In a small bowl combine 2 tbsp of the ketchup with Worcestershire sauce.
  • In a small skillet, heat olive oil and onion on low heat until translucent, 3 to 5 minutes, remove from heat.
  • In a medium bowl combine the turkey, onion, breadcrumbs, egg, 1/4 cup ketchup, salt and marjoram.
  • Place mixture into a loaf pan or shape into a loaf and place on a baking pan. Spoon sauce on top.
  • Bake uncovered for 55-60 minutes, remove from oven and let it sit for 5 minutes before slicing.

The BEST Healthy Turkey Meatloaf that is moist, super flavorful, and packed with hidden veggies all topped with a delicious tomato glaze!

2 lb ground turkey (I used 93% lean)
2 eggs
1/2 medium onion, finely chopped or grated
1/2 cup grated carrot
3 cloves garlic, minced
3 Tbsp tomato paste
1 Tbsp Worcestershire sauce
1/3 cup milk
3/4 cup whole wheat panko breadcrumbs
1 tsp Italian seasoning
1/2 tsp paprika
1 tsp kosher salt
1/2 tsp black pepper
2 Tbsp fresh parsley, chopped
1/4 cup tomato paste
1 tsp white vinegar
2 tsp Worcestershire sauce
1 Tbsp maple syrup
1/2 tsp garlic powder
1/4 tsp onion powder
Pinch of salt and pepper

Steps:

  • Preheat oven to 375 degrees F and spray a baking sheet (or loaf pan) with non-stick spray.
  • In a large bowl, combine all meatloaf ingredients together and mix until just combined, making sure not to over-mix.
  • Form the meat mixture into a loaf making sure that the loaf is even on all sides so that it cooks evenly and place on the baking sheet. You could also press the meat mixture into a greased loaf pan. Place the meatloaf in the oven and bake for 40 to 45 minutes.
  • While the meatloaf is baking you can make the glaze. In a small bowl, whisk together tomato paste, vinegar, Worcestershire sauce, maple syrup, garlic powder, onion powder, salt and pepper until smooth. Set aside until meatloaf is ready.
  • Remove the meatloaf from the oven and spread the tomato glaze evenly all over the top. Pop it back into the oven and bake for an additional 15 to 20 minutes, or until the internal temperature reads 165 degrees.
  • Remove from the oven and let the meatloaf sit for about 10 minutes to seal in all that flavor, serve and enjoy!

1/2 cup whole wheat bread crumbs
1/4 cup nonfat milk
1/2 cup onion, diced
1/2 cup carrot, shredded

1/2 cup tomato paste
4 tablespoons water

Steps:

  • Preheat oven to 375°F.

1 1/4 lbs extra lean ground turkey (99% fat free)
1 cup chopped onion
2 garlic cloves, chopped
1 tablespoon olive oil
1/4 cup white wine
1 egg, beaten
2 green onions, sliced
1 tablespoon spicy brown mustard
1 teaspoon low sodium soy sauce
2 teaspoons salt
2 teaspoons pepper
1 teaspoon ground sage
1/2 cup Italian breadcrumbs
3/4 cup ketchup
2 teaspoons brown sugar
1/2 teaspoon ground ginger

Steps:

  • Set oven to 350 degrees Fahrenheit. Line an ovenproof casserole or baking dish with foil.
  • Heat olive oil in medium-sized skillet. Add onion and cook over medium heat until soft and translucent. Add garlic and cook for 1-2 minutes
  • Add white wine to pan and cook for 1 minute Remove from heat.
  • In a large bowl, place turkey, onion mixture and remaining meatloaf ingredients. Using clean hands, mix until ingredients are well combined.
  • Place meat mixture in casserole/baking dish and form into loaf form.
  • In a small bowl, combine all glaze ingredients. Spread evenly over meatloaf.
  • Place dish in heated oven and bake for 45 minutes. Let meatloaf rest for 5-10 mins before serving.

¼ cup salsa
⅛ cup chopped red bell pepper
⅛ cup chopped yellow bell pepper
¼ cup chopped onion
¼ cup dry bread crumbs
lemon pepper to taste

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a large bowl combine the turkey, egg, salsa, red bell pepper, yellow bell pepper, onion, bread crumbs and lemon pepper. Mix well with hands until blended. Roll into a small loaf and place on a foil-lined baking sheet.
