Classic Gluten Free Oatmeal Raisin Cookies (Dairy Free): deliciously chewy gluten free oatmeal raisin cookies with crispy edges and sweet, juicy raisins. Wonderfully gluten and dairy free.

Number Of Ingredients 15

1 cup gluten free oat flour - if using homemade oat flour, make sure it's very finely ground (not coarse)*
1 ½ cups gluten free rolled oats
1 teaspoon baking powder
½ teaspoon ground cinnamon
¼ teaspoon ground nutmeg (optional, but recommended)
1/8 teaspoon ground cloves (optional, but recommended)
1/3 teaspoon salt
½ cup melted coconut oil
½ cup + 2 tablespoons coconut sugar
1 flax egg (1 tablespoon ground flaxseed + 3 tablespoons warm water, whisked together, set for 15 minutes)
1 ½ teaspoons pure vanilla extract
2 tablespoons pure maple syrup
¾ cup raisins
½ cup walnuts, chopped (optional)
2-3 tablespoons raisins

Steps:

  • Preheat oven to 350°F. Line a baking sheet with parchment paper or greased foil. Set aside.
  • In a medium bowl, stir together all the dry ingredients. Set aside.
  • In a large bowl, whisk together all the wet ingredients. Whisk until well mixed.
  • Add the dry mixture to the wet mixture. Using a rubber spatula, stir and fold until no flour patches remain. Fold in raisins and walnuts, if using.
  • Cover bowl and chill in the freezer for about 20 minutes, until firm throughout. If necessary, allow to thaw at room temperature until just soft enough to scoop, but still very firm and chilled.
  • Using a medium cookie scoop, scoop and drop cookie dough balls onto the prepared cookie sheet, evenly spaced apart. Cookies will spread a bit. Optionally, press raisins into cookies-this will help decrease sticking when flattening the cookies. Using a spoon, flatten the cookies about half way for thick cookies; flatten considerably for just slightly thick cookies. The dough will be a bit sticky.
  • Bake for 12-16 minutes. Mine took 14 minutes. Allow cookies to cool on the cookie sheet for about 10 minutes (on a cooling rack). Then, using a heatproof spatula, lift cookies off the sheet and transfer directly onto a cooling rack to cool completely before storing. Storing instructions below. Enjoy!

1 cup pecan halves or pieces
1 ⅓ cups light brown sugar
½ cup unsalted butter, at room temperature
½ cup shortening
2 eggs, at room temperature
2 teaspoons vanilla extract
1 ½ cups gluten-free all-purpose baking flour
1 (.25 ounce) package unflavored gelatin
2 teaspoons unflavored gelatin
1 teaspoon baking powder
1 teaspoon kosher salt
1 teaspoon ground cinnamon
¼ teaspoon ground ginger
3 cups gluten-free oats
1 cup raisins

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Line 2 baking sheets with parchment paper.
  • Toast pecans in the preheated oven until fragrant, about 5 minutes. Let cool for 5 minutes. Chop coarsely.
  • Combine brown sugar, butter, and shortening in a stand mixer fitted with the paddle attachment; beat until light and fluffy. Beat in eggs one at a time. Beat in vanilla extract.
  • Sift gluten-free flour, 1 packet plus 2 teaspoons gelatin, baking powder, salt, cinnamon, and ginger together in a bowl. Mix into the brown sugar mixture on low speed. Mix pecans, oats, and raisins into the dough.
  • Wrap dough in plastic wrap and chill in the refrigerator for at least 1 hour.
  • Drop spoonfuls of dough 2 inches apart onto the prepared baking sheets.
  • Bake in the the preheated oven until edges are golden, about 13 minutes. Cool on the baking sheets for 5 minutes before removing to a wire rack to cool completely.

the recipe on the Quaker Oats box with 1/2 less sugar and using EVOO instead of butter (no one will ever know until you tell them!) it is quick and easy to just smear the batter into a pan for bar cookies. can reduce oil to 2/3 cup. can soak raisins in bourbon for a more sophisticated taste. can substitute ground walnuts for 1/2 of flour base!

1/2 cup dark brown sugar, firmly packed
1/4 cup granulated sugar
2 eggs
1 teaspoon vanilla
1 1/2 cups Pamelas ultimate baking and pancake mix
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 teaspoon salt
3 cups Quaker Oats, uncooked
2/3 cup raisins

Steps:

  • Preheat oven to 350.
  • Beat together olive oil and sugars.
  • Add eggs and vanilla; beat well.
  • combine flour, soda, cinnamon and salt. Add to liquid and mix well.
  • Stir in oats and raisins and mix well again.
  • Drop by teaspoonfuls onto greased cookie sheet.
  • Bake 10-12 minutes or until golden brown.
  • Cool 1 minute on cookie sheet and then remove to wire rack.
  • Makes 4 dozen.

This is an oatmeal raisin cookie developed to use vegetable oil instead of solid fats. It is a slight modification of one with which I won first place in a company sponsored contest where I work.

1 cup canola oil
1 cup packed brown sugar
2 eggs
1 teaspoon vanilla extract
1 cup all-purpose flour
½ teaspoon baking soda
½ teaspoon salt
1 teaspoon ground cinnamon
¼ teaspoon ground nutmeg
4 cups rolled oats
1 cup raisins

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets.
  • In a large bowl, mix canola oil, brown sugar, eggs and vanilla until well blended. Combine the flour, baking soda, salt, cinnamon and nutmeg; stir into the sugar mixture. Mix in the oats and raisins last. Drop by rounded spoonfuls onto the prepared cookie sheet.
  • Bake for 10 to 12 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.
