Light & Spicy Turkey Sausage Breakfast Burritos image

Light & Spicy Turkey Sausage Breakfast Burritos are a healthy freezer-friendly breakfast full of lean Jennie-O turkey sausage, scrambled eggs and roasted vegetables. Grab one from the freezer for a quick protein packed meal on the go or sit down with it to enjoy a hearty breakfast.

2 c. sweet potatoes, cubed into 1/2" pieces
2 c. yellow onion, peeled and cubed into 1/2" pieces
1 red bell pepper, seeded and cut in 1" pieces
1 Tbsp. olive oil
1/2 tsp. salt
1/2 tsp. chipotle powder, omit if you prefer less spice
2 jalapeño, roughly chopped
1 lb. Jennie-O lean turkey breakfast sausage
5 oz. your choice of cheese, goat cheese or sharp cheddar are both great options
6 extra large eggs
2/3 c. milk
salt and pepper to taste
10 -8 " whole grain tortillas, I used Tumaro's low-carb wraps
Non-fat plain Greek yogurt - optional

Steps:

  • Preheat your oven to 400°.
  • Arrange the sweet potato, onion and bell pepper on a lined baking sheet. Toss wtih olive oil, salt and chipotle powder. Bake at 400° for 35 min, tossing once half way through.
  • In a large non-stick skillet over medium-high heat, cook the jalapeño for 1 minute. Add the sausage and cook for an additional 5-7 minutes until cooked through and crumbled. Set aside and let cool.
  • Meanwhile in a separate non-stick skillet, cook the eggs, milk and a dash of salt and pepper over low heat, stirring constantly until the eggs are light and fluffy. Remove from the heat and set aside.
  • To assemble the burritos, top each tortilla with 1/4 c. eggs, 1/4 c. veggies, a scant 1/4 c. turkey sausage and 1/2 oz of your favorite cheese.
  • Tuck the edges of the tortilla towards the center and roll into a burrito.
  • OPTIONAL - Add a smear of Greek yogurt on the end flap of the burrito so it stays securely closed.
  • Enjoy immediately or roll in a piece of tinfoil and package in an airtight container. Store frozen for up to 2 months.
  • REHEATING - Unwrap a burrito and heat it in a skillet over medium heat for 2-3 minutes on each side -OR- bake it in the oven in the tinfoil for 15-20 minutes.

2 teaspoons canola oil
1/2 small red onion, diced (1 cup)
1 red bell pepper, seeded and diced
1 cup drained, rinsed canned black beans, preferably low-sodium
1/4 teaspoon chili flakes
Salt and freshly ground black pepper
4 eggs and 4 egg whites
1/3 cup (about 1 1/2 ounce) shredded pepper Jack cheese
Nonstick cooking spray
4 (10 inch) whole wheat tortillas (burrito size)
1/4 cup reduced fat-free sour cream or 2 percent plain Greek yogurt
1/4 cup salsa
1 large tomato, (4 ounces) seeded and diced
1 small avocado (4 ounces), cubed
Hot sauce

Steps:

  • Heat the canola oil in a large nonstick skillet over a medium-high heat. Cook the onions and peppers until onions are softened and peppers are slightly charred, about 8 minutes. Add black beans and red pepper flakes and cook until warmed through, another 3 minutes. Season with salt and pepper and transfer to a dish.
  • Whisk together the eggs and egg whites then stir in the cheese. Spray the skillet with cooking spray, and reheat the skillet over a medium heat. Reduce heat to low and add eggs, scrambling until cooked through, about 3 minutes. Spread each tortilla with 1 tablespoon each sour cream (or yogurt) and salsa, then layer with 1/4 of the black bean mixture, 1/4 of the scrambled eggs, some diced tomato and 1/4 of the avocado. Season, to taste, with hot sauce. Roll up burrito-style and serve.

4 eggs
6 soft tortillas (warmed)
3/4 cup turkey
3 teaspoons cumin
1 1/2 teaspoons cayenne pepper
1 tablespoon water
1 slice cheese
1 tablespoon salsa

Steps:

  • 1 Warm turkey in small frying pan.
  • 2 add Cayenne, and cumin mix well.
  • N.B. add water if appears to dry.
  • 3 once mixed well add eggs and scramble all together until eggs are cooked.
  • 4 remove egg mixture into bowl.
  • 5 place a spoon full of egg mixture, cheese (per taste) and salsa (per taste) in tortilla and wrap.
  • 6 toast wrapped buritto in frying pan until tortilla is firm and holds shape.
