A protein-packed alternative to the normal chicken salad. This one is healthier, quick, and easy to make. I peeled my apple, personal preference, but feel free to add it unpeeled.

1 (6 ounce) container fat-free Greek yogurt (such as Fage®)
½ cup low-fat cottage cheese
½ cup chopped celery
½ cup diced apple
¼ cup sweetened dried cranberries (such as Craisins®)
2 tablespoons chopped onion
2 tablespoons chopped pecans
½ tablespoon Dijon mustard
1 ¼ cups cubed, cooked chicken
salt and ground black pepper to taste

Steps:

  • Combine Greek yogurt, cottage cheese, celery, apple, cranberries, onion, pecans, and Dijon mustard in a bowl; stir until well combined. Mix in chicken and season with salt and pepper.

1/3 cup nonfat or 2-percent Greek yogurt, such as Fage
1 tablespoon whole grain mustard
2 teaspoons honey
2 teaspoons sherry vinegar
1 teaspoon finely chopped fresh tarragon leaves
1/4 teaspoon celery seed
Fine table salt and freshly ground black pepper
2 breasts rotisserie chicken, cut into small cubes or shredded (About 1 1/2 pounds)
1/2 cup red grapes, halved
1/3 cup lightly toasted slivered almonds
1/3 cup diced celery
2 tablespoons finely chopped red onion
Butter lettuce, cucumber slices, rice cakes or your favorite bread, for serving

Steps:

  • For the tarragon yogurt dressing: Put the yogurt, mustard, honey, vinegar, celery seed and tarragon in a small bowl. Season with 1/4 teaspoon salt and about 1/8 teaspoon pepper and whisk to combine.
  • For the chicken salad: Combine the chicken, grapes, almonds, celery and onion in a medium bowl. Add the dressing to the chicken mixture and toss until evenly coated.
  • Serve the chicken salad on top of butter lettuce, cucumber slices, rice cakes, your favorite bread or even by itself!

2 tablespoons mayonnaise
1 teaspoon honey
1/2 teaspoon freshly grated ginger
Juice of 1/2 lemon
Kosher salt and freshly ground black pepper
1 cup 1/4-inch chunks of pineapple
2 small cooked boneless skinless chicken breasts, cut into 1/2-inch cubes
1 small Granny Smith apple, cored and cut into 1/2-inch cubes
1/2 cup fresh cilantro leaves, chopped
1/3 cup cashews, roughly chopped
4 leaves Bibb or iceberg lettuce

Steps:

  • Whisk together the yogurt, mayonnaise, honey, ginger, lemon juice and 1/2 teaspoon salt in a large bowl. Add the pineapple, chicken, apples and three-fourths of both the cilantro and the cashews. Toss to combine and serve right away or refrigerate until chilled, about 1 hour.
  • Arrange the lettuce leaves on a platter and top each with a scoop of salad. Sprinkle with the remaining cilantro and cashews and top with a few grinds of pepper.

  • In a bowl, mix all ingredients except for the pita, tomatoes, and lettuce.

  • Lay the lettuce on top of the chicken salad and add the tomatoes.
  • Refrigerate up to 4 days.

I threw this together on a warm night when I didn't feel like cooking and wanted something cool and healthy but also filling. I was amazed at how low calorie this turned out and also how much I enjoyed it. I hope you do, too! You can easily substitute the pitas with tortillas to make these more like wraps, and there's plenty of flexibility to add or subtract ingredients (like maybe red onion or fresh basil for example - warmed up with a little feta cheese melted inside is not at all bad, either, I've learned). With the 4 servings, each serving will either stuff a half of a pita super full or be just enough for 1 whole pita cut in two filled not quite so full. Your choice.

1 (12 1/2 ounce) can chunk chicken, drained (reserve liquid if desired for future use as broth)

3 large boneless chicken breasts
1/3 cup olive oil
1/2 cup lemon juice

5 cups lettuce, torn into bite sized pieces
8 multi colored sweet peppers, cut into strips
1 cup dried cranberries

Steps:

  • Heat oven to broil.
  • In a large bowl, whisk together olive oil, lemon juice and spices.
  • Add chicken breasts and turn to coat. Let stand 10 minutes.
  • Place on broiler pan and broil 5 to 6 minutes per side, basting with extra marinade, until lightly browned and meat thermometer inserted into the thickest part of the breast registers 180 degrees. Remove from oven and set aside.
  • Rinse lettuce and tear into bite sized pieces. My go to lettuce is typically endive or leaf lettuce, but you can use any. Drain and place in large bowl.
  • Rinse and clean peppers. Cut into thin slices and add to bowl.
  • Add dried cranberries.
  • Drain olives and add to the bowl.
  • Drain black beans and add to bowl.
  • Cut chicken into 1″ cubes and add to bowl.
  • Toss and serve with dressing of your choice.
  • 2 to 3 Large Servings.

1 teaspoon salt
1/2 teaspoon freshly ground black pepper
1 pound (2 small whole breasts) boneless, skinless chicken breasts
3/4 cup plain nonfat yogurt
1 tablespoon Dijon mustard
2 tablespoons freshly chopped chives
1 tablespoon freshly chopped tarragon
1 Granny Smith apple
Juice of 1/2 lemon
1 cup finely diced fennel
1/2 cup finely diced celery
2 cups red seedless grapes, cut in half
6 slices pumpernickel bread
1 bunch watercress, tough stems removed
Olive-oil cooking spray

Steps:

  • Combine salt and pepper in a bowl. Heat a large saute pan over medium-high heat. Coat with cooking spray. Sprinkle chicken with some of the salt mixture; place in saute pan. Reduce heat to medium; cover. Cook until chicken is cooked through, about 12 minutes (flip halfway through cooking time). Remove from pan; set aside.
  • In a bowl, combine yogurt, mustard, chives, tarragon, and remaining salt mixture. Core the apple, and cut into 1/4-inch dice. Place in a medium bowl with lemon juice, and toss to combine. Add fennel, celery, and grapes. Cut reserved chicken into 1/2-inch pieces. Add to salad with yogurt dressing; stir to combine. Serve on pumpernickel bread, open-faced, with watercress.
