2 cups all-purpose flour
3/4 cup sugar
2 teaspoons baking powder
2-1/2 teaspoons ground cinnamon
1/2 teaspoon salt
1 large egg, room temperature
1 cup 2% milk
1/4 cup butter, melted
2 teaspoons vanilla extract
1/2 cup chopped peeled tart apple
12 caramels, chopped
TOPPING:
1/2 cup packed brown sugar
1/4 cup quick-cooking oats
3 tablespoons butter, melted
1 teaspoon ground cinnamon

Steps:

  • In a large bowl, combine the flour, sugar, baking powder, cinnamon and salt. In another bowl, whisk the egg, milk, butter and vanilla. Stir into dry ingredients just until moistened. Fold in apple and caramels. , Fill 12 paper-lined muffin cups three-fourths full. Combine topping ingredients; sprinkle over batter. , Bake at 350° until a toothpick inserted in the cake portion comes out clean, 20-25 minutes. Cool for 5 minutes before removing from pan to a wire rack. Serve warm.

2 tablespoons canola oil
2 tablespoons unsweetened applesauce
1/2 cup nonfat sour cream
5 1/2 tablespoons brown sugar
5 1/2 tablespoons caramel topping
3 egg whites
1/2 cup all-purpose white flour
1/4 cup whole wheat flour
1/3 cup oat bran
6 tablespoons flax seeds (ground)
2 teaspoons ground cinnamon
1/4 teaspoon ground nutmeg
1/2 teaspoon baking soda
1/4 teaspoon salt
2 cups finely chopped apples (bitter)
1/2 cup chopped soft caramel, rolled in flour to prevent sticking together

Steps:

  • Preheat oven to 350°F.
  • In a large mixing bowl, beat oil, apple sauce, sour cream, sugar, and caramel topping until well blended. Mix in egg whites (can be subbed for 1 egg+one white) until the mixture thickens slightly.
  • Mix flours, oat bran, flax seed, cinnamon, baking soda, nutmeg, and salt in a small bowl.
  • Add dry mixture to wet and stir just until blended. Gently fold in apples and optional chopped caramels into batter.
  • Evenly distribute the batter into muffin cups that have been coated well with cooking spray. Sprinkle tops with additional brown sugar.
  • Bake for about 13-17 minutes, or until golden and a toothpick comes out clean.

I've never been much of a muffin maker. If I'm going to bake, I'd prefer to make a whole cake. But there is one kind of muffin that I heartily embrace - an upside-down fruit muffin. Its small, individual size encourages the fruit to condense and caramelize as it bakes. Then, when you unmold the muffin, the fruit transforms into a glistening crown of an irresistible sticky topping.

3 apples about 1 1/2 pounds, peeled, cored and sliced 1/4-inch thick
1/2 cup dark brown sugar
8 tablespoons (1 stick) unsalted butter
Pinch kosher salt
1/2 cup chopped walnuts, toasted optional
2 cups all-purpose flour
3/4 cup dark brown sugar
1 tablespoon baking powder
1/2 teaspoon ground cinnamon
1/4 teaspoon kosher salt
8 tablespoons (1 stick) unsalted butter, melted
2 large eggs, lightly beaten
3/4 cup sour cream
1 teaspoon vanilla extract

Steps:

  • Heat the oven to 375 degrees. Generously grease a 12-cup muffin tin.
  • In a large skillet over medium-high heat, stir together the apples, 1/2 cup brown sugar, 8 tablespoons butter and pinch salt. Cook, stirring occasionally, until the apples are tender, about 15 minutes. Distribute the apple slices among the muffin cups. Add walnuts, if using, on top of the apple slices.
  • To make the muffins, in a large bowl, whisk together flour, 3/4 cup brown sugar, baking powder, cinnamon and 1/4 teaspoon salt.

½ cup butter
1 pinch salt

⅛ teaspoon salt
¾ cup butter, melted

Steps:

  • Stir apples, brown sugar, butter, and salt in a large skillet over medium-high heat. Cook, stirring occasionally, until soft and syrupy, about 30 minutes. Stir in walnuts.
  • Preheat the oven to 375 degrees F (190 degrees C). Grease a muffin tin; divide apple mixture among muffin cups.
  • Whisk flour, brown sugar, baking powder, apple pie spice, baking soda, and salt together in a large bowl. Make a small well in the center and set aside.
