This is my version of Campbell's Easy Chicken and Biscuits. It makes great use of leftover chicken, and is a fast and easy meal.

1 (10 3/4 ounce) can low-fat cream of celery soup
1 (10 3/4 ounce) can low-fat cream of potato soup or 1 (10 3/4 ounce) can low-fat cream of chicken soup
1 1/2 lbs chicken breasts, cooked and cut up
4 cups frozen broccoli carrots cauliflower mix
1 cup skim milk
1/4 teaspoon dried thyme leaves
1 teaspoon dried parsley
1/4 teaspoon celery seed
1/4 teaspoon paprika
1/4 teaspoon pepper
1/4 teaspoon savory
1 (16 1/3 ounce) can refrigerated reduced-fat buttermilk biscuits

Steps:

  • Blend soups and milk in large skillet on low heat.
  • Add herbs and spices and mix well.
  • Add cooked cut up chicken and frozen vegetables.
  • Heat to warm vegetables and chicken.
  • Put in large ovenproof dish and bake in 400 degree oven for 15 minute.
  • Take chicken dish out of oven and stir well.
  • Cut up biscuits into fourths and top chicken with biscuts.
  • Bake another 15 minute until biscuits are browned.

Of course these biscuits can be made with a variety of things, but we've always made them with our Recipe #260063 or with some yummy jam in the morning. 1 cup water, warm
1 tablespoon honey or 1/2 tablespoon brown sugar
1 tablespoon yeast
1 1/2 cups whole wheat flour
1 1/2 cups golden white flour or 1 1/2 cups unbleached white flour
2 tablespoons wheat germ
1/4 cup oil
1 teaspoon salt

Steps:

  • Mix the water, honey or sugar, yeast and 3/4 cup each of the whole wheat and Golden White flours.
  • together. Let stand until light, about 15 minutes.
  • Add the other 3/4 cup of each type of flour, along with the remaining ingredients and knead lightly.
  • Roll or pat out on a lightly oiled counter top to 3/4-inch thickness. Dust top of dough with flour. Cut with biscuit cutter or glass dipped in flour.
  • Place cut biscuits on parchment paper lined baking sheets. Let rise on pan 15 - 20 minutes,then bake at 350°F until light brown, about 15 minutes.

2 cups soymilk
2 tablespoons vinegar
2 1/2 cups unbleached all-purpose flour
2 1/2 cups white whole wheat flour (can purchase at well stocked grocery stores or directly from King Arthur Flour Co)
1 (1/2 ounce) package instant yeast
1 teaspoon baking soda
3 teaspoons baking powder
1 teaspoon sea salt
4 tablespoons sugar (if using sugar free soy milk, add one more tablespoon)
1 cup non-hydrogenated vegetable shortening (Spectrum is a good brand)
2 tablespoons water

Steps:

  • Mix the vinegar with the soy milk and set aside.
  • Combine all dry ingredients.
  • Cut in shortening.
  • Make well in center and pour in soymilk and water and incorporate into mixture until dough forms.
  • Gently knead dough for a couple of minutes until smooth.
  • Roll out dough and cut circles. Fold circles in half and place on greased baking sheet.
  • Bake at 400 F for 15 to 18 minutes or until golden on top.
  • Serve with butter or Margarine (like Earth Balance) and jam and enjoy!

Steps:

  • Preheat the oven to 180C/fan 160C/gas 4. Line a baking tray with baking parchment.
  • Mix in the bowl: flour, baking powder, porridge, oats, apple and your choice of combination.
  • In a saucepan pour in the milk, agave nectar and butter. Heat until the butter is melted.
  • Add the liquid to the dry ingredients and mix. with the back of your spoon push it against the mixture to form a ball.
  • Place the mixture onto the baking tray and shape. Cook for 15 minutes or till golden brown.
  • Cut as soon as it is out of the oven. Cool for 5-10 minutes.

Steps:

  • Bowl one; Whisk together the OATS, FLOUR, BAKING POWDER, CINNAMON and SALT
  • In bowl two whisk together the COCONUT OIL, EGG AND VANILLA. Stir the HONEY into this bowl.
  • Add the flour mix from bowl 1 to the wet mix in bowl 2. Stir until the two mixes are just incorporated.
  • Fold in the RAISINS
  • Chill the dough for 30 minutes and preheat the oven to 170C
  • Drop even sized amounts of the mixture onto a baking sheet and flatten slightly, I made 8 large cookies
  • Bake for 12-14 minutes
  • After the cookies have baked, leave them on the tray for ten minutes. This ensures that they are cooked in the middle without the outsides burning.
  • Remove the cookies from the tray onto a wire cooling rack
