2 eggs
½ cup 2% plain greek yogurt
⅓ cup honey
1 teaspoon vanilla extract
1 teaspoon baking soda
1 ½ cups wheat flour
1 cup blueberry

Steps:

  • Preheat the oven to 350˚F (180˚C).
  • In a medium bowl, mash bananas. Mix eggs, yogurt, honey, vanilla extract, and baking soda into mixture.
  • Add flour and mix.
  • Add blueberries and gently fold into mixture.
  • Pour the batter into a greased 9 x 5-inch (23 x 13 cm) bread pan. Bake for about 50 mins, or until a toothpick comes out clean from the middle of the bread. (Baking times may vary, so keep an eye on the bread.)
  • Allow to cool for 15 minutes before serving.

This bread is a combination of zucchini and banana bread, and it is a wonderful way to use up old bananas and dip into that summer harvest of zucchini. The bread tastes more like banana bread than zucchini bread, but it has the added nutritional benefits of vegetables. This bread is lower in fat that the standard banana/zucchini bread because applesauce replaces some of the oil in the recipe. Still using some oil, however, will prevent the bread from getting rubbery. Experiment by using pumpkin instead of bananas during the autumn months or by adding walnuts and dates! low-fat spread, for the tin, plus extra to serve
140g wholemeal flour
100g self-raising flour
1 tsp bicarbonate of soda
1 tsp baking powder
300g mashed banana from overripe black bananas
4 tbsp agave syrup
3 large eggs, beaten with a fork
150ml pot low-fat natural yogurt
25g chopped pecan or walnuts (optional)

Steps:

  • Heat oven to 160C/140C fan/gas 3. Grease and line a 2lb loaf tin with baking parchment (allow it to come 2cm above top of tin). Mix the flours, bicarb, baking powder and a pinch of salt in a large bowl.
  • Mix the bananas, syrup, eggs and yogurt. Quickly stir into dry ingredients, then gently scrape into the tin and scatter with nuts, if using. Bake for 1 hr 10 mins-1 hr 15 mins or until a skewer comes out clean.
  • Cool in tin on a wire rack. Eat warm or at room temperature, with low-fat spread.

1 teaspoon baking powder

5 tablespoons coconut oil, melted
1/4 cup packed dark brown sugar
1/4 cup maple syrup
1 teaspoon pure vanilla extract
2 large egg whites, at room temperature
1 1/2 cups mashed very ripe banana (about 3 large bananas)
1/2 cup chopped walnuts, optional

Steps:

  • Position an oven rack in the center of the oven and preheat to 400 degrees F. Line a 12-cup muffin pan with paper liners. Whisk together the whole-wheat flour, all-purpose flour, baking powder, cinnamon, baking soda and salt in a medium bowl.
  • Whisk together the coconut oil, brown sugar, maple syrup, vanilla and egg whites in a separate medium bowl until well combined. Stir in the mashed banana. Add the dry ingredients to the wet and stir until combined. Stir in the chopped walnuts if using.

1/2 cup sweetened applesauce
1/2 cup white sugar
4 very ripe bananas, mashed
1 1/2 cups plain flour

Steps:

  • Preheat oven at 160 deg C (325 F). Grease 7X7" tin or a 9X5" bread tin. 7x7" cooks faster.

2/3 cup sugar
1/4 cup vegetable oil (I use canola)
1/4 cup liquid egg substitute or 1 large egg white
1 large egg
1 3/4 cups all-purpose flour
1 1/4 teaspoons cream of tartar
3/4 teaspoon baking soda
1/2 teaspoon salt
cooking spray

Steps:

  • Combine first 5 ingredients (mashed banana through egg) in large bowl; beat with mixer at medium speed until smooth.
  • Lightly spoon flour into measuring cup and level with knife.
  • Add rest of dry ingredients (cream of tartar, baking soda, salt) to flour and stir with a whisk to combine.
  • Add the dry mixture to banana mixture, stirring only until just moistened.
  • Spoon batter into 8x4 inch loaf pan that has been coated on bottom and 1/2 inch up sides with cooking spray.
  • Bake at 350 degrees F for 40 minutes or until toothpick in center comes out clean.
  • Cool 10 minutes in pan on a wirerack; then remove bread from pan and cool completely on rack.

1/2 cup butter
1/2 cup brown sugar, firmly packed
1 teaspoon vanilla extract
1/4 teaspoon banana extract (optional)
3/4 teaspoon baking soda
1/2 teaspoon salt
3 large bananas, cut into chunks
1/4 cup honey
2 large eggs
2 cups whole wheat flour
1/2 cup walnuts, chopped

Steps:

  • Preheat your oven to 350°F Lightly grease an 8 1/2" x 4 1/2" or 9" x 5" loaf pan.
  • In a large bowl, beat together the butter and sugar until smooth. Add the vanilla, baking soda, salt, and bananas, beating until well combined. The mixture will be fairly smooth, with some scattered small chunks of banana.
  • Beat in the honey and eggs.
  • Add the flour, then the walnuts, stirring until smooth.
  • Spoon the batter into the prepared pan, smoothing the top. Let it rest at room temperature for 10 minutes.
  • Bake the bread for 50 minutes, then gently lay a piece of aluminum foil across the top, to prevent over-browning. Bake for an additional 10 to 15 minutes, then remove the bread from the oven; a long toothpick or cake tester inserted into the center should come out clean.
  • Allow the loaf to cool for 10 minutes; then remove it from the pan, and set it on a rack to cool completely.
  • Tip:.
  • For banana-pineapple bread, drain a 20-ounce can of crushed pineapple in juice, saving the juice for another use (or to drink). Place the pineapple in a double layer of paper towels, and wring it until it's as dry as can be. Substitute it for one of the bananas in the recipe; you may need to increase the baking time by 5 to 10 minutes.

1 cup Quaker Oats
1/2 cup nonfat milk
1 cup mashed very ripe banana (about 3 medium)
1/2 cup liquid egg substitute or 4 egg whites, lightly beaten
1/2 cup vegetable oil
2 cups all-purpose flour
1/4 cup granulated sugar (or heat-stable sugar substitute equal to 1/4 cup sugar)
2 teaspoons baking powder
1 teaspoon ground cinnamon
1/2 teaspoon baking soda
1/2 teaspoon salt (optional)
1/2 teaspoon ground nutmeg

Steps:

  • Heat oven to 350°F Lightly spray bottom only of 9 x 5-inch loaf pan with cooking spray.
  • In medium bowl, combine oats and milk; mix well. Let stand 10 minutes. Stir in bananas, egg substitute and oil until blended.
  • In large bowl, combine flour, sugar or sweetener, baking powder, cinnamon, baking soda, salt and nutmeg; mix well. Add oat mixture to dry ingredients all at once; stir just until dry ingredients are moistened. (Do not overmix.) Pour batter into pan.
  • Bake 55 to 65 minutes or until wooden pick inserted in center comes out clean. Cool in pan on wire rack 10 minutes. Remove from pan. Cool completely. Store tightly wrapped.
