I love peanut butter cookies but they are always a little greasy. I came up with this healthier version and it's a little less greasy. I love it!

½ cup unsalted butter
1 cup crunchy peanut butter
¼ cup applesauce
1 cup white sugar
1 cup packed brown sugar
4 egg whites
2 ½ cups all-purpose flour
1 teaspoon baking powder
1 ½ teaspoons baking soda

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Beat butter, peanut butter, applesauce, white sugar, and brown sugar with an electric mixer in a large bowl until smooth. Add eggs and beat until smooth.
  • Sift together flour, baking powder, and baking soda in a separate bowl; stir into peanut butter batter. Put batter in refrigerator for 1 hour.
  • Roll dough into walnut-sized balls and place 2 inches apart onto ungreased baking sheets. Flatten each ball with a fork, making a crisscross pattern.
  • Bake in preheated oven until cookies begin to brown, about 10 minutes.

This is my healthified version of Recipe #461702. Of course its still a cookie and contains chocolate (if you so choose to use the chocolate chips), but you can eat a few more of these without feeling guilty. I hope youll enjoy them, too. :)

Number Of Ingredients 15

1 cup whole wheat flour (I use whole spelt flour)
1/3 cup all-purpose flour (I use spelt flour)
1 1/2 teaspoons baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
1 1/4 teaspoons cinnamon, ground
2 cups oats (I used a mix of barley, rye, spelt, buckwheat flakes and oats)
1 cup dry roasted salted peanuts or 1/2 cup vegan semi-sweet chocolate chips and 1/2 cup vegan pb chips
1/2 cup applesauce (no sugar added, all natural)
1/2 cup creamy natural-style peanut butter
1/8 cup Splenda sugar substitute
1/8 cup dark brown sugar (or 1 tbs splenda brown sugar blend)
1/3 cup non-dairy milk (e.g. vanilla soy milk)
4 teaspoons ground flax seeds
1 1/2 teaspoons pure vanilla extract

Steps:

  • In a big bowl combine flours, baking powder, baking soda, cinnamon, salt and oats. Add in peanuts or chocolate chips and pb chips and stir to combine.
  • In a second bowl beat together applesauce, peanut butter, sugars, ground flax seeds and vanilla.
  • Add the liquid to the dry ingredients and stir to combine. If your dough seems too wet to handle, add in more flour, if its too dry, add a tad more milk.
  • Drop generous tbs full of dough per cookie onto a paper-lined or greased baking sheet leaving some space between the cookies (these wont spread much). Flatten cookies slightly using moistened fingers or a spoon.
  • Bake in the preheated oven at 350°F/175°C for about 15 minutes or until toothpick inserted in the center comes out clean. These cookies are more cake-like, so they wont crisp up.
  • Allow to cool on the baking sheet for 5 minutes and then remove to wire racks to cool completely.

1 teaspoon baking soda
½ teaspoon baking powder
⅔ cup peanut butter
½ cup applesauce
1 tablespoon applesauce
½ cup brown sugar
¼ teaspoon salt

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Mix flour, baking soda, and baking powder together.
  • Mix peanut butter with 1/2 cup plus 1 tablespoon applesauce. Add sugar and salt. Mix well. Combine the flour and peanut butter mixtures together and stir well. Drop spoonfuls of dough 2 inches apart onto baking sheets.
  • Bake in the preheated oven until edges are golden but centers are still soft, 8 to 9 minutes.

1/2 cup butter
12 tablespoons ground flax seeds
1 cup crunchy peanut butter
1/4 cup granulated sugar
1/4 cup Splenda Sugar Blend for Baking
3/4 cup brown sugar
2 eggs, beaten
1/4 cup applesauce
1/2 cup white flour
1/2 cup whole wheat flour
1/2 cup wheat germ
1 teaspoon baking powder
1 teaspoon baking soda
2 teaspoons ground cinnamon
1 3/4 cups quick-cooking oats
1 1/4 cups raisins
1/3 cup carrot, finely grated
1 medium granny smith apple, finely grated, including juice

Steps:

  • Preheat oven to 350 degrees.
  • Combine butters, flax, and sugars in large bowl.
  • Beat in eggs and applesauce.
  • Combine flour, wheat germ, baking powder, baking soda, and cinnamon.
  • Add flour mixture to creamed mixture at low speed and beat until blended.
  • Stir in oats, raisins, apple, and carrot.
  • Drop by measuring tablespoonfuls onto ungreased baking sheet. (I used a medium Pampered Chef scoop.).
  • Bake for 10-12 minutges or until just brown around edges. Do not overbake.
  • Cool 2 minutes on baking sheet.

Healthier No-Bake Chocolate Peanut Butter Cookies image

1/4 cup coconut oil (not melted)
1/2 cup natural creamy peanut butter
1/4 cup honey
Dash salt
2 Tablespoons unsweetened cocoa powder
1 teaspoon vanilla
1 1/2 cups old-fashioned oats

Steps:

  • In a large saucepan over medium-low heat, add coconut oil, peanut butter, honey, and salt. Slowly stir as the ingredients melt and mix until they are completely combined and bring to a boil.
  • Add in the cocoa powder and vanilla; mix until completely combined.
  • Remove the saucepan from heat and stir in the oats until all of the oats are coated in chocolate.
  • Line a large cookie sheet with wax paper and drop the cookie mixture on by the spoonful (each cookie was about 1 1/2 Tablespoons of mixture).
  • Place cookie sheet in the fridge or freezer to allow these cookies to set up completely, then enjoy.
