Even this healthier version of Denise's cake might win First Prize at the county fair! We used natural cake mix and light sour cream with great results.

1 (18.25 ounce) package natural chocolate cake mix
1 (3.9 ounce) package instant chocolate pudding mix
1 cup low-fat sour cream
½ cup vegetable oil
4 eggs, beaten
½ cup warm water
1 cup semisweet chocolate chips
2 tablespoons confectioner's sugar for dusting on top of cooled cake

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 12-cup tube pan.
  • Mix cake mix, pudding mix, sour cream, oil, beaten eggs, and water in a large bowl until smooth. Stir in chocolate chips. Pour batter into prepared pan.
  • Bake in preheated oven until top is springy to the touch and a wooden toothpick inserted comes out clean, 50 to 55 minutes. Cool cake thoroughly in pan at least 1 1/2 hours before inverting onto plate. Dust with confectioner's sugar before serving.

1/2 cup unsweetened cocoa powder
1/2 cup dark chocolate chips
1/2 cup boiling water
1 1/4 cups sugar
1/2 cup pumpkin (puree in a can)
1/4 olive oil
2 teaspoons vanilla extract
2 eggs
1 cup whole wheat pastry flour
1 cup oat flour
2 teaspoons baking powder
1/2 teaspoon baking soda
1 cup nonfat milk
1/4 cup dark chocolate chips
1/2 cup chopped walnuts
1 tablespoon sugar
1/4 dark chocolate chips

Steps:

  • Preheat oven to 350°F Coat a spring form cake pan with cooking spray and coat lightly with flour.
  • Combine cocoa and baking chocolate in a bowl and add boiling water stirring until chocolate melts. Set aside.
  • Combine sugar, vanilla, egg, milk and pumkin puree. Add flour, baking powder and baking soda to mixture. Combine.
  • Stir in cocoa and dark chocolate chips to mixture and combine with batter. Spoon the batter into prepared pan. Sprinkle cake with topping ingredients.
  • Bake for 50-60 minutes or until wooden pick inserted in center comes out clean.
  • Cool in pan for at least 10 minutes and remove form pan. Cool completely.
  • Combine frosting ingredients and spread over cake. Enjoy!

This is a healthier version than the conventional. Be sure to use the "lighter" ingredients as listed to ensure that it is healthier. HINT: The frosting firms up as it rests. If it becomes too firm to spread, gently warm it in the microwave on medium power for 30 seconds, or until softened. This cake actually tastes better when made a few hours before serving. As soon as the cake is frosted, cover it with plastic wrap and refrigerate. Let stand at room temperature for about 30 minutes before serving and refrigerate for up to 4 days.

5 egg whites
1 1/3 cups 2% buttermilk
1/3 cup unsweetened applesauce
1 (18 1/4 ounce) box chocolate cake mix
3 cups confectioners' sugar
2/3 cup cocoa powder
6 tablespoons light butter, at room temp
1/3 cup nonfat milk
1 teaspoon vanilla extract

Steps:

  • TO MAKE THE CAKE: Preheat the oven to 350^F. Lightly coat a 13"x9" baking dish with nonstick spray.
  • In a large bowl, using an electric mixer set on high speed, beat the egg whites for 1 minute, or until foamy. Beat in the buttermilk and applesauce. Add the cake mix and beat for 2 minutes, or until smooth. Scrape into the prepared pan.
  • Bake for 30 to 35 minutes, or until a wooden pick inserted in the center comes out clean and the cake is pulling away from the sides of the pan. Cool completely in the pan on a rack.
  • TO MAKE THE FROSTING: In a small bowl, combine the confectioners' sugar and cocoa, stirring to remove lumps. In a medium bowl, using an electric mixer set on medium speed, beat the butter until fluffy. Gradually beat in the cocoa mixture, milk, and vanilla extract. Beat until very smooth. Spread over the cooled cake, swirling it for a decorative appearance.

1/2 cup packed brown sugar
1/2 teaspoon salt
1/4 cup vegetable oil
1 tablespoon vanilla extract
2 teaspoons baking powder
1 1/2 teaspoons baking soda
1 cup whole-wheat flour
1 1/4 cups all-purpose flour
1 cup sparkling water
1 cup mini chocolate chips (divided)

Steps:

  • Preheat oven to 350°F. Coat a 12-cup Bundt pan with nonstick cooking spray with flour.
  • Whisk egg beaters in a large bowl with a whisk. Gradually add the sugar and whisk until smooth. Whisk in salt, oil, and extract. Whisk in baking powder and baking soda.
  • Stir in whole wheat and all-purpose flour. Add sparkling water and stir gently until just mixed. Stir in 1/2 cup chocolate chips. Pour into prepared pan.
  • Bake for about 30-35 minutes until a toothpick comes out clean. Cool completely in pan before removing to a serving plate.
  • Optional garnish: melt 1/2 cup mini chocolate chips in a microwave safe bowl. Heat on 50% power in 30 second increments, stirring between each, until melted and smooth. Place in a ziploc bag with a tip cut off and drizzle
