This is my version of baked oatmeal with lower fat, higher protein and fiber. This is a filling and very tasty, healthy snack that is also low in sugar and fats. Yum!

2 cups oatmeal (regular or quick)
1 1/2 teaspoons baking powder
1/2 teaspoon salt
2 cups nonfat milk
3 bananas, ripe (mashed)
1 teaspoon vanilla
1/2 teaspoon nutmeg
2 teaspoons cinnamon
4 tablespoons Splenda Sugar Blend for Baking
1/2 cup walnuts (chopped)
2 tablespoons protein powder

Steps:

  • Preheat oven to 325 degrees F.
  • In a large bowl combine oatmeal, cinnamon, nutmeg, sugar, salt and chopped walnuts.
  • Bring milk to almost a boil add mashed bananas, vanilla, and protein powder together until well mixed.
  • Combine wet and dry ingredients together and mix well.
  • Pour into greased casserole dish.
  • Bake at 325 for 45 minutes.
  • Serve hot or chilled in bars.

These are cookies you won't need to feel guilty about! This recipe combines oats, hazelnuts, sunflower seeds, flax seeds and wheat germ for a nutty, tasty treat.

⅔ cup butter, softened
1 cup brown sugar
1 egg
1 teaspoon vanilla extract
¾ teaspoon ground nutmeg
1 ½ cups rolled oats
1 cup all-purpose flour
½ teaspoon baking powder
½ teaspoon baking soda
¼ teaspoon salt
½ cup chopped hazelnuts
¼ cup sunflower seeds
2 tablespoons flax seeds
½ cup wheat germ

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • In a large bowl, cream together the butter and sugar until light and fluffy. Beat in the egg, then stir in the vanilla and nutmeg.
  • In a separate bowl, combine the oats, flour, baking powder, baking soda, salt, hazelnuts, sunflower seeds, flax seeds and wheat germ; gradually stir into the creamed mixture.
  • Drop by rounded spoonfuls, a couple of inches apart, onto cookie sheet(s).
  • Bake for 8 to 10 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.

A great way to get your fiber and nutrients! You can make it up in big batches and portion it into small containers to grab and go in the morning. Adapted from Rachael Ray's Yum-O Family cookbook.

3 cups old fashioned oats (not instant)
3 cups low-fat milk (cow, almond, rice or soy)
1/3-1/2 cup honey (or 1/2 cup brown sugar)
1 cup dried cranberries
1/2 teaspoon salt
1/4 cup flax seed meal
1/2 cup toasted unsalted sunflower seeds
1/2 cup grape nuts cereal (or cereal of choice)

Steps:

  • Mix the oatmeal, milk, and 4 cups of water in a large, deep saucepan and bring to a boil over medium high heat. When it boils, quickly lower heat to very low. Stir in brown sugar, dried cranberries, flaxseed meal, sunflower seeds and salt. Cook at a low simmer for 15-20 minutes, or until very thick and creamy.
  • Stir often to prevent burning.
  • Serve with additional milk and sprinkle with a tablespoon of the Grape nuts cereal if desired, or cool and refrigerate to reheat later in the week.
