There isn't much to the shakerato: a shot of espresso poured over ice cubes and simple syrup, then shaken. But when those three elements are rattled around in a cocktail shaker for what seems like an eternity (it actually clocks in at 15 seconds), they undergo an alchemical transformation: the dense espresso, now frothy, sweet and flecked with ice, is as refreshing as it is flavorful.

4 teaspoons simple syrup

Steps:

  • Make 1 shot fruity espresso and pour immediately into a cocktail shaker with 5 to 6 ice cubes. Add 4 teaspoons simple syrup and shake vigorously for 15 seconds. Strain into a glass. Serve immediately.

Freshly brewed double shot espresso
1 teaspoon sugar
Crushed Ice
Coffee Whipped Cream, for garnish
1 1/2 cups cold heavy cream
3 tablespoons coffee-flavored liqueur (recommended: Kahlua)

Steps:

  • In the base of a cocktail shaker, mix together espresso and sugar until sugar is dissolved. Fill shaker with crushed ice, close, and shake until shaker is frosted and mixture is foamy, about 20 seconds.
  • Strain into a martini glass, top with a dollop of Coffee Whipped Cream, and serve.
  • Place very clean glass or metal bowl and metal whisk in freezer just until cold, about 5 minutes.
  • When everything is cold, place cream in bowl and begin to whisk until it froths up and starts to thicken, about 1 minute. Whisk vigorously until soft peaks form (the cream will hold a point when the whisk is lifted but will fall back into the bowl almost immediately), about 1 minute.
  • Add the liqueur and whisk until stiff peaks just form (the cream stays put on the whisk when it is lifted from the bowl), about 1 minute. Store covered in refrigerator until ready to use.
  • Yield: 1 1/2 cups

NO-BAKE CHOCOLATE HAZELNUT CHEESECAKE



No-Bake Chocolate Hazelnut Cheesecake image

Nonstick cooking spray, for the pan
One 9-ounce package chocolate wafer cookies
4 tablespoons unsalted butter, melted
Two 8-ounce packages cream cheese, at room temperature
1 cup chocolate hazelnut spread
1/2 cup confectioners' sugar
One 12-ounce tub whipped topping
1/2 cup toasted hazelnuts, chopped

Steps:

  • Spray a 10-inch springform pan with nonstick cooking spray. Place all but 6 of the chocolate cookies in a food processor fitted with the blade attachment. Pulse the cookies in the food processor until finely ground.
  • In a medium mixing bowl, combine the ground cookies and melted butter and mix to combine. Spread the crushed cookie mixture into the bottom of the prepared springform pan, using the bottom of a metal measuring cup to press into an even layer. Freeze for 30 minutes.
  • In a stand mixer, whip the cream cheese until softened, about 1 minute. Add the chocolate hazelnut spread and confectioners' sugar and mix on medium-high speed, scraping the bowl occasionally, until fluffy, about 5 minutes. Fold in the whipped topping using a rubber spatula. Transfer to the springform pan. Use a spatula to smooth the mixture in the pan. Top with the chopped hazelnuts. Break 3 of the reserved cookies and press them into the center of the cake, cut-side down, in a starburst shape. Break the remaining cookies into chunks and sprinkle them over the cake. Cover in plastic wrap and refrigerate until set, at least 6 hours or up to overnight. Unclasp and remove the side of the pan, then cut the cake with a knife dipped in hot water and serve.

1/2 cup all-purpose flour
1 envelope yeast (2 1/2 teaspoons)
1/2 cup milk
2 1/2 to 3 cups all purpose flour
1 egg
3 egg yolks
1/4 teaspoon salt
3 tablespoons sugar
Butter or vegetable oil or spray, for bowl
1/4 pound unsalted butter, melted
2 tablespoons melted, unsalted butter
1/4 cup sugar
1 tablespoon cinnamon
1 cup toasted and chopped hazelnuts
1/4 cup butter
2 tablespoons sugar
1/4 cup honey
1/4 cup hazelnut liqueur
1/2 cup chopped, toasted hazelnuts

Steps:

  • Make the sponge by mixing ingredients in bowl and letting sit for 1/2 hour.
  • In a standing mixer, fitted with a dough hook, add the sponge. Add in the flour, egg, egg yolks, salt, and sugar. Add any additional flour to make smooth dough. Place in oiled bowl, cover and set aside until doubled in volume. Punch down and let rise (covered) again.
  • Punch down and roll out into a rough triangular shape that is about 1 1/2 feet and 1/2-inch thick. Paint with melted butter. Mix together sugar, cinnamon and hazelnuts. Sprinkle on. Roll up and press into well-buttered bundt pan. Let rise until doubled.
  • Preheat oven to 375 degrees F.
  • Bake for 40 minutes. Let cool then remove from pan. Cook together butter, sugar, honey, and liqueur. Paint on top. Sprinkle with nuts.

  • Spread 3 cups hazelnuts on a baking sheet; roast at 400 degrees F until toasted, 10 minutes. Cool slightly, then wrap in a towel and rub to remove the skins. Heat 3 tablespoons olive oil in a skillet. Add the nuts, 1 1/2 teaspoons chopped thyme, 1/2 teaspoon each lemon zest and chopped rosemary, 1 teaspoon kosher salt and 1/4 teaspoon pepper; cook, stirring, 2 minutes.

1/3 cup hazelnuts (about 1 ounce)
1/4 cup extra-virgin olive oil
1 shallot, finely chopped
1 tablespoon plus 1 teaspoon sherry vinegar
2 teaspoons fresh lemon juice
Coarse salt
1/4 cup hazelnut oil or light vegetable oil, such as canola
Freshly ground pepper

Steps:

  • Preheat oven to 375 degrees. Spread hazelnuts in a single layer on a rimmed baking sheet. Toast in oven until skins split and flesh turns deep golden brown, 10 to 12 minutes. While still hot, rub hazelnuts in a clean kitchen towel to remove skins (some will remain). Coarsely chop.
  • Heat the hazelnuts, olive oil, and shallot in a small skillet over medium heat, stirring, until shallot softens, about 2 minutes. Let cool slightly.
  • Stir together vinegar, lemon juice, and 3/4 teaspoon salt in a medium bowl. Whisking constantly, pour in hazelnut oil and then hazelnut mixture in a slow, steady stream; whisk until emulsified. Season with salt and pepper.

2 cups unblanched hazelnuts (1/2 pound)
3 cups whole milk
5 large egg yolks
2/3 cup sugar
1 cup heavy cream
1 tablespoon Frangelico

Steps:

  • Preheat oven to 350 degrees. Spread nuts on a baking sheet, and toast in oven 8 to 10 minutes. Let cool completely, remove skins, and coarsely grind.
  • Combine milk and ground hazelnuts in a medium saucepan. Bring to a gentle boil, cover, and remove pan from heat. Let steep 2 hours. Pass through a cheesecloth-lined sieve, pressing hard on solids. Reserve strained milk, and discard solids.
  • Combine egg yolks and sugar in the bowl of an electric mixer fitted with the paddle attachment. Cream at medium-high speed until very thick and pale yellow, 3 to 5 minutes. Return milk to a simmer.
  • Add half of the warm milk to egg-yolk mixture, and whisk until blended. Return new mixture to saucepan with remaining milk. Cook over low heat, stirring constantly, until mixture is thick enough to coat the back of a wooden spoon.
  • Have ready an ice-water bath. Remove saucepan from heat, and immediately stir in cream and Frangelico. Pass mixture through a sieve set over a medium bowl. Place bowl in ice-water bath, and chill.
  • Freeze in an ice-cream maker according to manufacturer's instructions.

4 teaspoons sugar
1 cup ice
1 lemon strip (yellow only, no white!)

Steps:

  • Put hot espresso and sugar in a blender. Add ice and blend for 15 seconds. Serve in 2 Martini glasses. Garnish each with 1 lemon strip. It adds a zesty taste to the coffee at the end...enjoy!
