I visited the Bacardi distillery in Puerto Rico and it was a really neat tour. They had so many different kinds of rum, that my hubby looked like he was in heaven! This is a refreshing tropical drink that uses Bacardi light rum. This recipe is from Carnival Cruise Line, which is who we took our Caribbean cruise with. Enjoy!

1 ounce light rum
1/4 ounce Galliano
1/4 ounce creme de banane
2 ounces orange juice
1 ounce pineapple juice

Steps:

  • Blend all ingredients together, pour over ice and garnish with an orange slice and a cherry.

1 ounce coconut rum
1 ounce light rum
1/4 ounce key lime juice
1/4 ounce pineapple juice
1 lime wedge, for garnish

Steps:

  • Mix all ingredients in a cocktail shaker with ice.
  • Strain into a chilled martini glass and garnish with lime wedge.
  • This can be made in bulk in a glass pitcher and refrigerated until serving.

4 boneless skinless chicken breast halves
salt
pepper
1/3 cup vegetable oil
1 teaspoon minced garlic
2 lbs yellow onions, halved and sliced
3 tablespoons aji yellow paste or 3 tablespoons diced green chilies
1 cup fresh lemon juice (about 5 or 6 lemons)

Steps:

  • Season both sides of the chicken liberally with salt and pepper.
  • Heat the oil in a deep saucepan, add the chicken and sear on both sides until golden brown, about 2 minutes on each side.
  • Remove the chicken and add the onions and garlic and cook at medium-low heat until the onions are golden brown, about 10 minutes.
  • Season with salt and pepper.
  • Stir in the yellow chile and return the chicken to the pan.
  • Spoon some of the onions over the chicken, cover and cook for 10 to 15 minutes, until chile sauce has completely infused the mixture and the chicken is cooked through.
  • Add the lemon juice and cook another 10 minutes, to allow flavors to meld.
  • Slice breasts to serve.
