This is a yummy, warming casserole that is meant to be a side dish, but since it has meat in it, can also be served as a main dish. This is the version I came up with after significantly reducing some of the heavier ingredients, that were in the original version I saw on Lucy Classic Cajun & Cuisine, a PBS cooking program. But don't let that scare you - this is not a spicy dish at all. I make this often in the end of summer to use up fresh squash. If you don't have both types of squash, just use 2 of whichever type you do have.

1 small summer squash, unpeeled, sliced into thick rounds (crookneck)
1 small green zucchini, unpeeled, sliced into thick rounds
1/4 cup water
1/4 cup butter (or less, to taste*) or 1/4 cup margarine (or less, to taste*)
1/2 lb lean ground beef
1 cup sweet onion, chopped (such Vidalia, Walla Walla, or Maui)
2 large eggs
1/2 cup Miracle Whip (light is OK) or 1/2 cup mayonnaise (light is OK)
1/2 cup cheddar cheese, shredded
2 cups cooked hot white rice (I use Jasmine or long grain)
1/2 cup Ritz cracker crumbs (or less to taste)
salt and pepper

Steps:

  • Cook sliced squashes in a small pot with the water until tender but not mushy; drain and return squash to the pot.
  • Add butter and allow it to melt in the pot and sauté all together for 10 minutes, stirring occasionally, over medium to medium-low heat.
  • Meanwhile, spray a large deep skillet with nonstick spray and cook the beef and onions.
  • Drain any fat, then season meat mixture with salt and pepper to taste.
  • Add the squash to the beef using a slotted spoon, and reduce heat to low.
  • Beat together eggs, then whisk in mayo- add this mixture to the skillet.
  • Stir in the cheese and the cooked rice.
  • Pour into a large oval casserole and sprinkle with enough cracker crumbs to cover.
  • Bake in a preheated oven at 350 F for about 15-20 minutes.
  • Note: The original version of this recipe called for a whopping 1 whole stick of butter!
  • I have always used at most the 1/2 stick and as little as 2 tablespoons.
  • -it is based on your preferences.
  • I also always use real, unsalted butter.

1 yam, quartered and sliced
½ sweet onion (such as Vidalia®), sliced
1 zucchini, halved lengthwise and sliced
1 yellow squash, halved lengthwise and sliced
½ large red bell pepper, chopped
½ large green bell pepper, chopped
1 teaspoon dried oregano
1 teaspoon dried basil
salt and ground black pepper to taste
¼ cup shredded sharp Cheddar cheese
2 tablespoons seasoned bread crumbs
butter-flavored cooking spray

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Melt butter in a large skillet over medium heat; cook and stir yam and onion in the melted butter until lightly browned, 5 to 10 minutes. Mix zucchini, yellow squash, red bell pepper, green bell pepper, oregano, basil, salt, and black pepper into the yam mixture; cook and stir until vegetables are heated through and partially tender, 5 to 10 minutes.
  • Transfer vegetable mixture to a casserole dish; sprinkle vegetables with Cheddar cheese and bread crumbs. Spray top of casserole with butter-flavored cooking spray.
  • Bake in the preheated oven until topping is browned and cheese is melted, about 25 minutes.

1 cup chopped celery
2 tablespoons butter

1 cup uncooked wild rice, rinsed and drained

  • In a skillet, brown chicken and celery in butter. In a large bowl, combine soup and broth until smooth. Add the mushrooms, onion, rice, poultry seasoning and chicken mixture. 4 new potatoes, cut in 1/4-inch slices
1/4 cup butter
1 tablespoon finely chopped fresh sage or 1 teaspoon dried sage
1 tablespoon finely chopped fresh tarragon or 1 teaspoon dried tarragon
3 sweet red bell peppers, seeded and diced
1 onion, thinly sliced
1/2 cup uncooked long-grain rice
3 medium zucchini, thinly sliced
4 medium tomatoes, sliced
1 cup shredded Swiss cheese

Steps:

  • Grease a 2-1/2-qt. baking dish and arrange half the potato slices in overlapping rows. Dot with half the butter. Sprinkle with half the sage, tarragon, peppers, onion, rice and zucchini. 1 large butternut squash (about 6 pounds), peeled, seeded and cubed
1 large onion, finely chopped

An untraditional Mexican dish inspired by the fall vegetable harvest, this casserole gets raves at potluck dinners! As a main dish, this serves 6-8. As a side dish, it easily serves 12. It is a terrific accompaniment to Recipe #336333. The ingredients listed are for the lighter version of the meal. Also tremendously delicious is topping it with an additional cup of pepper Jack cheese over the sliced tomatoes. But save that for a decadent meal, because the light version is quite tasty, too!

1 (2 lb) butternut squash
2 tablespoons canola oil
1 cup chopped onion (1 large )
1 cup chopped green bell pepper (1 large )
1 1/2 cups chopped zucchini (1 medium )
4 large garlic cloves, peeled and minced
1 medium jalapeno pepper, minced
1 teaspoon dried oregano
1 cup corn kernel (fresh or frozen)
1/4 cup chopped fresh basil or 2 tablespoons dried basil
3 medium tomatoes (2 chopped, 1 sliced)
1 cup chopped kale
1 cup light sour cream
1 teaspoon salt
1 teaspoon ground cumin
1 teaspoon chili powder

Steps:

  • Preheat the oven to 375 degrees.
  • Peel the squash, cut in half lengthwise, and scoop out the seeds. Cut into pieces, and place in covered 3 quart casserole dish with a little water. Microwave for 10 minutes, and then let stand for 10 more minutes to finish steaming.
  • Meanwhile, heat the oil in a large skillet over medium heat. Saute the onion, green pepper, zucchini, garlic, jalapeno, and oregano until the vegetables are tender. Remove the pan from the heat.
  • Drain the water from the squash, and mash until smooth. Stir in the sauteed vegetables. Add the corn, basil, chopped tomatoes, kale, light sour cream, salt, cumin, chili powder, coriander, cloves, cayenne, and pepper jack cheese. Stir well.
  • Smooth out the vegetable mixture. Top with the sliced tomatoes. (Add another cup pepper Jack cheese and sprinkle with paprika if you want to go all out!) Bake for 30 minutes. It should be bubbling around the edges and golden in color. Serve immediately.

This casserole is perfect for Thanksgiving or any other fall meal. The sweetness of the squash and the potatoes are a pleasant combination. I make this recipe with apple Gouda chicken sausages from Costco® but any other chicken sausage will do the trick. I originally created this recipe by combining extras in the fridge that needed to be cooked. Now, it is a staple in our home and everyone loves it!

1 butternut squash, halved and seeded
2 sweet potatoes, halved lengthwise
2 ¾ cups water
¼ teaspoon salt
1 ½ cups whole grain couscous
5 links precooked apple chicken sausage, sliced into rounds
1 green bell pepper, diced
½ cup diced green onion
1 (12 ounce) package shredded mozzarella cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Place butternut squash and sweet potatoes cut-side down on the baking sheet.
  • Bake in the preheated oven until softened, about 30 minutes. Cool until easily handled, 5 to 10 minutes. Scoop flesh out of the skins; place in a 9x13-inch casserole dish.

ROASTED GARDEN HARVEST CASSEROLE WITH RED POTATOES



Roasted Garden Harvest Casserole With Red Potatoes image

This tangy dish was inspired by grandmother, Mamitsa, who immigrated from Greece in the early 1900's. She was a fantastic cook and a real inspiration to the whole family. It's a great hot side dish for a BBQ and easy to make for a small family or a crowd and easy to adjust to whatever is available from the garden or produce aisle. I have created all kinds of variations over the years as more ingredients became more easily available, so feel free to experiment! I cut the potatoes into 8ths, the broccoli into individual florets and the zucchini into 1/2 inch thick coins to make sure the cooking time was about the same for everything. Feel free to substitute any combination of the following cauliflower, broccollini, mushrooms, artichoke hearts, asparagus, roasted red peppers, onions, as much or as little garlic as you like, possibly some cherry tomatoes at the end for color! It's a fantastic way to take advantage of summer's bounty!

2 cups Red Bliss potatoes, cut into 8ths
1 1/2 cups broccoli florets
1 1/2 cups zucchini, cut into 1/2 thick coins
1 large lemon, peeled and juiced
1 tablespoon Worcestershire sauce
2 -3 garlic cloves
3 -4 teaspoons italian seasoning
1 teaspoon kosher salt
1 teaspoon pepper
3 -4 tablespoons olive oil
1/2 teaspoon red pepper flakes
parmesan cheese

Steps:

  • Preheat oven to 400°F.
  • Spray a 9-13 casserole with non-stick spray.
  • Clean and prepare the potatoes and veggies, dumping them into a bowl large enough to hold them all.
  • Wash and peel the yellow peel off a large lemon and add to a food processor with the juice from the lemon (being careful to remove bitter seeds), garlic cloves, Italian seasoning, salt, pepper, Worcestershire sauce and olive oil. Process til the lemon peel almost disappears, about 3 minutes. LASTLY, add the red pepper flakes and stir in -- don't process the pepper seeds.
  • Pour the lemon garlic mixture over the veggies and toss til everything is well coated. Pour out into the prepared baking dish. (Can be made ahead to this point, covered and refrigerated. Bring to room temperature before baking).
  • Bake, uncovered, for a total of 35-40 minutes til the everything is golden and the potatoes are fork tender. If adding cherry tomatoes, put them in half way through the baking process and toss through with a wooden spoon. Sprinkle with parmagiano cheese and serve.

1 lb lean ground chuck
1 cup chopped onion
1 (1 lb) can tomatoes
1 tablespoon Worcestershire sauce
2 teaspoons salt
1 lb whole kernel corn (canned)
2 cups thinly sliced raw potatoes
1/2 cup flour
1 chopped green pepper
1 1/2 cups shredded American cheese

Steps:

  • Combine beef, onion, tomatoes, Worcestershire sauce and salt.
  • Combine corn, potatoes, flour, and green pepper and layer with beef combination.
  • Bake uncovered at 375 degrees for 45 minutes; then sprinkle with cheese and bake 30 minutes more, or until vegetables are done.

2 baking apples, thinly sliced

Steps:

  • Heat oven to 375 degrees.
  • Cook sausage in 10-inch skillet over medium heat 8 to 10 minutes, stirring occasionally, until no longer pink; drain.
  • Place sausage in ungreased 11x7x1-1/2 rectangular baking dish. Arrange apple slices over sausage mixture. Slice sweet potatoes over apples.

8 large potatoes
3 bay leaves
1/4 cup butter, melted
1/2 teaspoon salt
1/2 teaspoon pepper
16 ounces sour cream
1 (10 3/4 ounce) cream of chicken soup
2 cups cheddar cheese, shredded & divided
5 green onions, chopped
1/2 cup corn flakes, crushed

Steps:

  • Place potatoes and bay leaves in a large kettle; cover with water.
  • Bring to a boil.
  • Reduce heat; cover and simmer for 25-30 minutes or until tender.
  • Remove from heat; cool to room temperature.
  • Place potatoes in the freezer for 1 hour and do not drain cooking water.
  • Drain potatoes; peel and grate.
  • Place in a greased 9x13" baking dish.
  • Drizzle with butter, sprinkle with salt and pepper; toss to coat.
  • Combine the sour cream, soup, 1 cup cheese, and onions; spread over potatoes.
  • Sprinkle with remaining cheese; top with cornflakes.
  • Bake uncovered at 350 degrees for 45-50 minutes until bubbly.

1 medium onion, chopped
3 garlic cloves, minced
1 green bell pepper, chopped
1 red bell pepper, chopped
2 carrots, peeled and cut into chunks
1 medium potato, peeled and cubed
1 medium sweet potato, peeled and cubed
1 (28 ounce) can Italian-style crushed tomatoes (or plain crushed tomatoes with your favorite herbs added)
1 (14 1/2 ounce) can kidney beans, undrained (or pinto beans)
10 ounces frozen chopped spinach
1 cup frozen corn
1 teaspoon salt
2 tablespoons peanut butter
1 teaspoon crushed red pepper flakes
1/3 cup roasted peanuts, chopped
3 cups cooked rice

Steps:

  • Saute onions, garlic and peppers in oil.
  • Stir in carrots, potato, sweet potato and tomatoes.
  • Simmer over low heat till just tender.
  • Add beans, spinach and corn and simmer for another 10 minutes. (Add some water or stock if it seems too dry or is sticking.).
  • Stir in salt, peanut butter and crushed red pepper.

1 tablespoon finely chopped fresh sage or 1 teaspoon dried sage
1 tablespoon finely chopped fresh tarragon or 1 teaspoon dried tarragon
3 sweet red bell peppers, seeded and diced
1 onion, thinly sliced
1/2 cup uncooked long-grain rice
3 medium zucchini, thinly sliced
4 medium tomatoes, sliced
1 cup (4 ounces) shredded Swiss cheese

Steps:

  • Grease a 2-1/2-qt. baking dish and arrange half the potato slices in overlapping rows. Dot with half the butter. Sprinkle with half the sage, tarragon, peppers, onion, rice and zucchini. Dot with remaining butter and repeat layering.

1 pkg. (8 oz.) KRAFT Spaghetti Classics Tangy Italian Spaghetti Dinner
1/2 cup chopped green pepper
2 Tbsp. butter or margarine
1 can (14-1/2 oz.) diced tomatoes, undrained
1/2 cup water
1-1/2 cups chopped cooked chicken
6 oz. VELVEETA, cut up

Steps:

  • Preheat oven to 350°F. Cook Spaghetti as directed on pkg. Meanwhile, cook and stir green pepper in butter in large saucepan on medium heat until tender. Add tomatoes with their liquid, the water, Herb Spice Mix and Grated Parmesan Cheese; mix well. Stir in chicken and VELVEETA.
  • Drain spaghetti. Add to the chicken mixture; mix well. Spoon into 2-qt. casserole dish.
