CHINESE HAPPY FAMILY

I would always order it in the Chinese restaurants it's called the 'Happy Family'. It is a delicious chicken and vegetable stir-fry. Now I do this at home using my indoor grill.

3 skinless, boneless chicken breast halves - cut into strips
2 tablespoons olive oil
1 onion, sliced
1 red bell pepper, seeded and cubed
1 yellow bell pepper, seeded and cubed
1 (15 ounce) can baby corn, drained
1 tablespoon white sugar
1 (16 ounce) package frozen stir-fry vegetables
1 cup water
1 tablespoon cornstarch
1 tablespoon soy sauce

Steps:

  • Preheat an indoor grill, and coat with cooking spray. Place the chicken strips on the grill, and cook for about 7 minutes. Allow them to cool slightly, then cut into cubes.
  • While the chicken is cooking, heat the oil in a large skillet over medium heat. Place the onion rings in the skillet, and cook for a few minutes. Add the red and yellow pepper, baby corn, and the stir-fry vegetables. Increase the heat to medium-high; cook and stir for about 15 minutes.
  • Sprinkle in the sugar and salt. Stir in the chicken. Dissolve the cornstarch in water, and pour into the skillet along with the soy sauce. Cook and stir until the sauce thickens.

1/2 cup boneless skinless chicken breast, cut into strips
1/4 cup pork, cut into strips
1/4 cup beef, cut into strips
1/4 cup lobster meat, cut into pieces
1/4 cup shrimp, deveined and cut into pieces
1/4 cup scallops
2 tablespoons olive oil
1 onion, sliced
1 red bell pepper, seeded and cubed
1 green bell pepper, seeded and cubed
1/4 cup broccoli, cut into pieces
1 (15 ounce) can baby corn, drained
1 tablespoon white sugar
1 cup water
1 tablespoon cornstarch
1 tablespoon soy sauce
1/2 cup shaoxing wine

Steps:

  • Heat the oil in a large frying pan over medium heat. Put the sliced onion in the frying pan, and cook for a few minutes.
  • Add the chicken strips, and cook for 1 minute. Add the pork strips, and cook for 1 minute. Add the beef strips, and cook for 1 minute. Add the lobster pieces, shrimp and scallops, mix well and cook for 2 minutes.
  • Add the broccoli pieces and baby corn; cook for 1 minute. Add the red and green pepper. Increase the heat to medium-high; cook and stir for about 10 minutes.
  • Sprinkle in the sugar and salt. Dissolve the cornstarch in water, and pour into the frying pan along with the soy sauce and shaoxing wine. Cook and stir until the sauce thickens.

3 tablespoons extra-virgin olive oil
3 garlic cloves, minced
1 fresh red chile pepper, minced
1 1/2 cups peeled and julienned turnips
1 medium carrot, peeled and julienned
1 small yellow bell pepper, julienned
2 tablespoons low-sodium soy sauce
4 1/2 teaspoons rice wine or dry sherry
1 teaspoon chile sesame oil, for garnish

Steps:

  • 1. Heat a wok or nonstick skillet over medium-high heat. Add the olive oil and swirl the pan to coat.
  • 2. Add the garlic and chile and sauté until fragrant, about 1 minute. Add the turnips and stir-fry until tender, about 3 minutes. Add the carrot and cook for 1 minute. Add the bell pepper and cook and toss until tender, about 1 minute. Stir in the soy sauce and rice wine. Cook, stirring, until the vegetables are coated. Garnish with the sesame oil. Serve hot

This is the easiest, most delicious fried chicken I've ever tasted. It is so tender, full of flavor, and it's very simple to prepare! See if you can eat this fried chicken without first peeling off and eating the crunchy skin! This is best served with Frances's Old Fashioned Collard Greens.

1 cup vegetable oil (for frying)
1 egg
1/4 cup milk
1/8 teaspoon salt
1/8 teaspoon pepper
1 1/2 lbs chicken pieces
1 1/2 cups yellow cornmeal
1 tablespoon flour
1 ounce Italian salad dressing mix (small packet)
1/8 teaspoon ground cayenne pepper

Steps:

  • Heat oil in large skillet over medium high heat.
  • Combine chicken pieces, egg, salt, pepper, and milk in large ziploc bag. Shake to combine, and set aside.
  • In another large ziplock bag (or a plastic grocery sack with no holes) combine cornmeal, flour, italian dressing mix, and cayenne pepper. Shake to combine.
  • 1-3 pieces at a time, remove chicken pieces from egg mix and place chicken pieces in the cormeal mix and shake to completely cover all chicken pieces. Take out coated chicken pieces, put into hot oil, and repeat process 3 at a time until all pieces have been coated.
  • Fry chicken pieces turning once each side is browned until chicken is cooked through and juices run clear. Drain on paper towels.

3 tablespoons honey
1 tablespoon sesame seeds
2 tablespoons soy sauce
1 garlic clove, pressed
1/4 cup cornstarch
2 egg whites
4 boneless skinless chicken breast halves, cut into 2 inch pieces
2 tablespoons vegetable oil
4 green onions, sliced
1 tablespoon sesame seeds

Steps:

  • Combine honey, sesame seeds, soy sauce and garlic. Set aside.
  • In a seperate bowl, combine egg whites and cornstarch.
  • Add chicken to egg mixture. Add salt and pepper to taste. Combine thoroughly.
  • To Freeze: Put honey mixture in a quart sized freezer bag. Squeeze out air and seal.
  • Put chicken mixture in a gallon sized freezer bag. Squeeze out air and seal.
  • Place both bags in another gallon sized bag, and label for the freezer.
  • Defrost for 24 hours before cooking.
  • On Cooking Day:.
  • Heat the oil in a skillet over medium high heat.
  • Add the chicken and cook until browned, turning as needed. (You may need to do this in two batches, depending on the size of your skillet.).
  • Pour the honey mixture over the chicken, turning to coat all the pieces.
  • Top with the sliced green onions and sesame seeds, and serve.

This is a hearty oatmeal that is baked in the oven so you can get ready in the morning instead of slaving over a stove. Plus it will please even the pickiest of eaters. All three kids (10, 4, and 2) ate in perfect silence.... It was quite nice! I hope it does the same for your family.

Steps:

  • Combine milk, oats, coconut, brown sugar, beaten eggs, golden raisins, chocolate chips, vanilla extract, and salt in a large bowl; mix well.
