Cinnamon-Apple Cake AKA Hanukkah Cake image

A very moist and dense cake with apples and cinnamon, traditionally served during Hanukkah. It's a favorite in our household, and best of all, not from a box!

cooking spray
1 ½ cups white sugar
½ cup butter
1 teaspoon vanilla extract
6 ounces cream cheese, softened
2 eggs
1 ½ cups all-purpose flour
1 ½ teaspoons baking powder
¼ teaspoon salt
2 teaspoons ground cinnamon
¼ cup white sugar
2 large baking apples, peeled and chopped

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Spray an 8-inch springform pan with cooking spray.
  • Beat 1 1/2 cup of sugar with the butter, vanilla extract, and cream cheese in a bowl until soft and creamy; beat in the eggs one at a time, beating well after each addition. Whisk together the flour, baking powder, and salt in a bowl.
  • In a separate small bowl, stir together the cinnamon with 1/4 cup of sugar. Stir 2 tablespoons of the cinnamon-sugar mixture into the flour mixture; reserve the rest of the cinnamon sugar.
  • Stir the flour mixture into the butter mixture to make a smooth batter, and mix in the apples. Pour batter into the prepared pan. Sprinkle the top of the batter with the reserved cinnamon-sugar mixture.
  • Bake in the preheated oven until the cake pulls away slightly from the edges of the pan, about 1 hour and 15 minutes. Cool cake completely on a wire rack before removing the pan and slicing the cake.

Ingredients
• 1 3/4 cups sugar, divided
• 3/4 cup (6 ounces) block-style 1/3 fat cream cheese, softened
• 1/2 cup butter, softened
• 1 teaspoon vanilla extract
• 2 large eggs
• 1 1/2 cups all-purpose flour
• 1 1/2 teaspoons baking powder
• 2 teaspoons ground cinnamon
• 3 cups chopped peeled Granny Smith apple (about 2 large)
• Cooking spray

Steps:

  • Preparation Preheat oven to 350°. Beat 1 1/2 cups sugar, cream cheese, butter, and vanilla at medium speed of a mixer until well-blended (about 4 minutes). Add eggs, 1 at a time, beating well after each addition; set aside. Lightly spoon flour into dry measuring cups; level with a knife. Combine the flour and baking powder. Add flour mixture to creamed mixture, and beat at low speed until blended. Combine 1/4 cup sugar and cinnamon. Combine 2 tablespoons of the cinnamon mixture and apple in a bowl; stir apple mixture into batter. Pour batter into an 8-inch springform pan coated with cooking spray, and sprinkle with remaining cinnamon mixture. Bake at 350° for 1 hour and 15 minutes or until cake pulls away from the sides of pan. Cool cake completely on a wire rack, and cut using a serrated knife. Note: You can also make this cake in a 9-inch square cake pan or a 9-inch springform pan; just reduce the baking time by 5 minutes.
