2 medium onions
3 tablespoons olive oil, divided
Coarse salt and ground pepper
4 minute steaks, (3 ounces each)
2 tablespoons Worcestershire sauce
Toasted country bread

Steps:

  • Slice onions into 1/2-inch thick rings. Heat 2 tablespoons olive oil in a large skillet over medium-high heat; cook onions until browned, tossing occasionally, 10 to 15 minutes. Season with salt and pepper; remove.
  • Heat remaining tablespoon oil in same skillet over high heat. Season steaks with salt and pepper. Cook 30 seconds on each side; remove. Add Worcestershire sauce and 2 tablespoons water to skillet, scraping up browned bits with a wooden spoon. Return onions to skillet; toss.
  • Sandwich steak and onions between toasted bread.

Tender and juicy steak sandwich with caramelized onions, creamy Brie cheese, and fig jam. An incredible flavor combination that's both easy and elegant!

2 beef strip steaks ((10 ounces each) about 1-inch thick each*)
Kosher salt
Ground black pepper
2 1/2 tablespoons extra virgin olive oil (divided)
2 large red onions (thinly sliced)
1 tablespoon Dijon mustard
2 tablespoons melted unsalted butter
8 mini-sized French rolls, (pretzel buns, or similar soft, but sturdy buns)
1 1/2 cups arugula
8 ounces Brie cheese (cut into thin slices)
1/2 cup fig jam

Steps:

  • Preheat the oven to 350 degrees F. Remove steak from the refrigerator and place on a plate. Season liberally with salt and pepper on both sides. Let come to room temperature while you caramelize the onions.
  • Prepare the Dijon onions: Heat 1 tablespoon olive oil in a large sautee pan over medium high. Add the sliced red onions and 1/4 teaspoon kosher salt. Cook until the onions begin to soften and brown, 5-8 minutes. Reduce heat to low and let cook, stirring occasionally, until the onions are very soft and caramelized, about 15 additional minutes. Remove from heat and stir in the Dijon to evenly coat. Remove the onions to a plate or bowl, then gently wipe the skillet clean with a paper towel.
  • Heat the remaining 1 1/2 tablespoons olive oil in the skillet over medium high. Once the oil is very hot and almost smoking, add the seasoned steaks. Do not crowd them-if your skillet is not large enough to easily accommodate both, cook them in batches. Sear the steaks for 1 minute on each side, then reduce the heat to low and cook the steak for about 6-8 minutes, turning once, until rare and a thermometer inserted in the center reaches 125 degrees F. Transfer to a plate and cover with foil. Let rest for 10 minutes, then slice into strips.
  • Spread the melted butter onto the bottom of a 9x13-inch baking dish, using just enough to coat the pan. Lay the bottom of the buns in a single layer in the baking dish, then top with the arugula, steak slices, Brie, and the caramelized onions. Spread the inside of the top buns with about 2 teaspoons jam, then lay the buns on top to complete the sandwiches. Brush the bun tops with the remaining melted butter, then cover the pan with foil. Bake for 15 minutes, just until the cheese has melted. Transfer to a serving plate and enjoy warm.

2 oranges, peels removed in large strips and reserved
1 cup bourbon
2 tablespoons maraschino cherry juice
Freshly ground black pepper
2 tablespoons unsalted butter
2 pounds hanger steak

Bourbon Creamed Spinach, recipe follows
4 pretzel rolls, buttered and griddled
1 small red onion, sliced and soaked in ice water for 15 minutes

Two 10-ounce boxes frozen spinach, thawed
3 tablespoons unsalted butter
2 cloves garlic, minced
1 small yellow onion, finely chopped, about 1 cup

1/4 cup bourbon
1 1/2 cups heavy cream
2 cups grated smoked gouda cheese

Steps:

  • For the glaze: Add the orange peel, bourbon, cherry juice and some black pepper to a small saucepan. Simmer until reduced to 1/4 cup, about 10 minutes. Your pot may flambe from the bourbon, don't worry- just wait until the alcohol burns off. Once reduced, turn off the heat and whisk in the butter.
  • Sprinkle the steak liberally with salt and pepper. Heat a cast-iron pan over medium-high heat. Add a light coat of oil and place the steak in the pan. Cook the steak almost to desired doneness, depending on thickness, 3 to 5 minutes per side. Turn off the heat and glaze the steak on all sides in the pan while flipping. Remove the steak from the pan to rest.
  • For the sandwich build: Pile some Bourbon Creamed Spinach on the bottom piece of the pretzel roll. Thinly slice the steak against the grain and place on top of the spinach. Top with some red onions and finish with the top of the roll. Repeat for the remaining sandwiches.
  • Strain the thawed spinach in a colander and squeeze liquid out with a towel. Melt the butter in a large straight-sided skillet over medium heat. Add the garlic and onions, season with salt and pepper and cook until onions are softened, about 5 minutes. Turn off the heat and add the bourbon. Stir to combine, turn heat back on to medium and simmer 1 minute. Add the cream, and cook until the cream is reduced by half, about 5 minutes. Stir in the cheese and cook until melted, and then mix in the spinach to combine. Cover and cook over low heat until the spinach is tender, 8 to 10 minutes, and then season with salt and pepper.

300g steaks
2tbsp sunflower oil
1 onion , sliced
1 red pepper , sliced
1 green pepper , sliced
2tbsp white wine vinegar
8 cheese slices
50g grated mozzarella
4 soft white sub rolls
American mustard and ketchup, to serve

Steps:

  • Trim away and discard the long piece of fat running down the side of the steaks. Cut each steak in half and put on a baking tray, then transfer to the freezer and freeze for 40 mins.
  • Heat the oil in a heavy-based pan or casserole dish set over a medium heat. Add the onion and peppers along with a good pinch of salt and fry for 20 mins, or until the onions are golden and sticky. Add the vinegar and cook for a further 5 mins. Season to taste.
  • Using a sharp knife, slice the steak as thinly as possible and pile the slices into four portions. Heat a skillet over a high heat until almost smoking. Put one portion of the steak slices in the pan in a pile that's roughly the length of your rolls. Fry for 3 mins over a high heat until some of the steak is cooked through, with pink bits remaining. Pile a quarter of the onion mixture on top, as well as a quarter each of the cheese slices and the mozzarella. Continue to cook undisturbed over a medium heat for 5-10 mins until the meat is brown and crisp around the edge and the cheeses have melted. Split one of the rolls open and carefully scoop the meat and cheese mixture into it. Repeat with the remaining meat, onions, cheese and rolls.

This is my all-time favorite recipe for hamburger steak and onions. If I'm just cooking for me, I skip the gravy (they're very juicy without) and increase the onions because I like extra with every bite! Add the gravy to turn it into a wonderful smothered "steak". I found the recipe during a web search and tweaked it. Listed cooking time is for the steaks, onions and gravy.

1 lb ground chuck
1 egg, lightly beaten
1/4 cup plain breadcrumbs
1/8 teaspoon ground black pepper
1/2 teaspoon seasoning salt
1/2 teaspoon onion powder
1/2 teaspoon garlic powder
1 teaspoon Worcestershire sauce, plus an extra dash
1 cup halved thinly sliced onion
1 tablespoon oil
2 tablespoons self-rising flour
1 cup beef broth
1 tablespoon dry sherry (don't use cooking sherry)
salt and pepper, to taste

Steps:

  • Mix together the ground beef, egg, bread crumbs, pepper, seasoned salt, onion powder, garlic powder and Worcestershire sauce. Form into 4 patties, or as many as you want, depending on how large you want your "steaks".
  • Heat the oil in a large skillet over medium heat. Fry the patties and onions in the oil until patties are nicely browned, about 4 minutes per side, or until done if not making gravy. Remove the patties to paper towels.
  • If NOT MAKING GRAVY, continue cooking the onions until they turn golden brown and caramelize. Remove onions and serve atop hamburger "steaks". Stop here!
  • If MAKING GRAVY, sprinkle flour over the onions and drippings in the skillet. Stir, scraping up brown bits off the bottom as you go. Gradually add the beef broth and sherry.
  • Bring to a boil, then simmer and stir over medium-low heat about 5 minutes, or until gravy thickens. Taste and adjust seasonings with salt and pepper as needed.
  • Reduce heat to low, return patties to the gravy, cover and simmer 15 minutes or until cooked through.
