Amish Hamburger Casserole {Sour Cream Noodle Bake} image

This Amish hamburger casserole is a comforting sour cream noodle bake that the whole family will love!

8 ounces uncooked wide egg noodles
8 ounces cream cheese, softened at room temperature
1 cup cottage cheese, at room temperature
½ cup sour cream, at room temperature
3 tablespoons salted butter, melted
1 tablespoon olive oil
1 ½ lbs. ground beef
½ cup diced onion
½ of a medium green bell pepper, seeded and diced
1 (14.5 oz) can diced tomatoes, drained
¾ cup condensed tomato soup, not diluted
1 teaspoon Worcestershire sauce
1 cup shredded cheddar or mozzarella cheese
Optional garnish: chopped fresh parsley, basil, or other herbs

Steps:

  • Preheat oven to 350°F (180°C). Grease a 9 x 13-inch baking dish; set aside.
  • Cook noodles in a pot of salted boiling water according to package instructions until just barely al dente, about 5-6 minutes. Drain and set aside.
  • Meanwhile, in a large bowl, stir together softened cream cheese, cottage cheese, sour cream, and melted butter. Set aside.
  • In a large skillet, heat olive oil over medium-high heat. When the oil shimmers, add the ground beef, onion, and bell pepper. Cook until the meat is no longer pink and the onion is translucent, about 5-7 minutes. Drain excess fat.
  • Stir in diced tomatoes, tomato soup, and Worcestershire sauce.
  • Place ½ of the cooked noodles in the bottom of the prepared baking dish. Top with ½ of the cream cheese mixture and ½ of the meat mixture. Repeat layers with remaining ingredients. Top with shredded cheese.
  • Bake, uncovered, for 25-30 minutes, or until heated through.
  • Garnish with fresh herbs, if desired, and serve!

As the title suggests, this was my Grandmother's recipe. I've tweaked the amount of cheese and sour cream depending on what I've got in the fridge and it always turns out great! My mother has suggested this was made up as a way to use up ingredients in the fridge.

1 pound ground beef
1 teaspoon white sugar
1 teaspoon salt
1 teaspoon garlic salt
2 (15 ounce) cans tomato sauce
1 (8 ounce) package egg noodles
1 cup sour cream
1 (3 ounce) package cream cheese
1 large white onion, diced
½ cup shredded sharp Cheddar cheese, or more to taste

Steps:

  • Heat a large skillet over medium-high heat. Cook and stir beef in the hot skillet until browned and crumbly, 5 to 7 minutes; drain and discard grease. Mix sugar, salt, garlic salt and tomato sauce into ground beef; simmer until flavors blend, about 20 minutes. Remove from heat, cover skillet, and cool to room temperature.
  • Bring a large pot of lightly salted water to a boil. Cook egg noodles in the boiling water, stirring occasionally until cooked through but firm to the bite, about 5 minutes. Drain and cool slightly.
  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch casserole dish.
  • Mix sour cream, cream cheese, and onion in a bowl.
  • Scoop half the noodles into the prepared casserole dish; top with half the sour cream mixture. Spoon half the ground beef mixture atop sour cream layer. Repeat layering with remaining ingredients. Top casserole with Cheddar cheese.
  • Bake in the preheated oven until Cheddar cheese has browned, 25 to 30 minutes.

I found a recipe that had similar ingredients one time on line, but changed it, and adapted it to my taste buds, and it has become a favorite of mine. This is one of those recipes that I can eat over and over as leftovers and never seem to get tired of. Everyone always comes back for seconds (at least) when this is served.

1 lb hamburger or 1 lb ground turkey
2 -3 garlic cloves, minced
1 teaspoon salt
1 dash pepper
1 teaspoon sugar
1 (26 ounce) jar pasta sauce
1 (8 ounce) package cream cheese (softened)
2 cups sour cream
6 -8 green onions (chopped)
1 (15 ounce) bag egg noodles
1 cup shredded Italian cheese blend

Steps:

  • Fry hamburger and garlic together. Drain grease. Add salt, pepper, sugar, and tomato sauce. Simmer 15-20 minutes.
  • Cook egg noodles in salted water. Drain noodles and butter them if desired.
  • Mix cream cheese, sour cream, and green onions together in small bowl and set aside.
  • In a greased 9x13, alternate layers of 1/2 of the noodles, then dollop half of the sour cream mixture. ladle 1/2 of the hamburger mixture over sour cream mixture, then repeat layers.
  • Top with shredded Italian cheese and bake 350 for 30 minutes or until browned and bubbly.

1 1/4 pounds ground chuck
One 15-ounce can tomato sauce
1/2 teaspoon salt
Freshly ground black pepper
8 ounces egg noodles
1/2 cup sour cream
1 1/4 cups small curd cottage cheese
Pinch red pepper flakes
1/2 cup sliced green onions (less to taste)
1 cup grated sharp Cheddar
Crusty French bread, for serving

Steps:

  • Preheat the oven to 350 degrees F.
  • Brown the ground chuck in a large skillet. Drain the fat, and then add the tomato sauce, 1/2 teaspoon salt and plenty of freshly ground black pepper. Stir, and then simmer while you prepare the other ingredients.
  • Cook the egg noodles until al dente. Drain and set aside.
  • In a medium bowl, combine the sour cream and cottage cheese. Add plenty of freshly ground black pepper and a pinch of red pepper flakes. Add to the noodles and stir. Add the green onions and stir.
  • To assemble, add half of the noodles to a baking dish. Top with half the meat mixture, and then sprinkle on half the grated Cheddar. Repeat with noodles, meat and then a final layer of cheese. Bake until all the cheese is melted, about 20 minutes.
  • Serve with crusty French bread.
  • To freeze: Assemble the Sour Cream Noodle Bake in a disposable aluminum oven-proof pan and seal the top of the container with the lid or heavy foil. Seal the edges to prevent freezer burn and place in the freezer.
  • To cook from frozen: Place directly in a 375-degree F oven and bake, covered, for 45 minutes. Remove the lid and bake until lightly brown and bubbly, about 20 minutes more.

2 tablespoons salted butter
1 yellow onion, diced
3 cloves garlic, minced
1 pound ground chuck
Kosher salt and freshly ground black pepper
1 tablespoon tomato paste
12 ounces egg noodles
2 1/2 cups beef broth
1 tablespoon grainy mustard
1 teaspoon smoked paprika
A few dashes Worcestershire sauce
1/3 cup sour cream
2 tablespoons heavy cream
2 tablespoons chopped fresh chives

Steps:

  • Heat the butter in a large skillet over medium heat. Add the onion and garlic and cook for 1 minute. Add the ground chuck and sprinkle with salt and pepper. Cook the meat, crumbling as you go, until cooked through, about 5 minutes. Add the tomato paste and cook for about 30 seconds.
  • Add the noodles, broth, 1 cup hot water, the mustard, paprika and Worcestershire sauce. Give a big stir and bring to a simmer. Cover and allow everything to simmer, stirring occasionally and adding up to 1/2 cup more water if necessary, until the pasta is al dente and the sauce has thickened, about 12 minutes. Stir in the sour cream and heavy cream and cook for 1 additional minute or until the pasta is tender.
  • Remove from the heat. Sprinkle over the chives and serve directly from the pan.

1 (1 ounce) envelope dry onion soup mix
½ cup dry bread crumbs
⅛ teaspoon pepper

Steps:

  • In a large bowl, mix together the ground beef, sour cream, onion soup mix, bread crumbs and pepper using your hands. Refrigerate while you heat up the grill so the flavors have a chance to blend.
  • Preheat a grill for medium heat. Form the ground beef into 8 balls, and flatten into patties.

This is my adopted recipe as of Feb 2005. I made this yesterday and doubled the recipe for DH and I. It was very moist and tasty. It made a great tasting hamburger. It would also be good with potatoes and a vegetable. I didn't use the microwave, I just fried it up.

2 tablespoons sour cream
1 tablespoon green onion, Sliced
2 teaspoons fine dry breadcrumbs
1/8 teaspoon salt
1 dash pepper
1/4 lb lean ground beef
1 hamburger bun (Hamburger bun should be split, toasted and buttered.)
lettuce leaf
1 slice tomatoes, thinly sliced
sour cream (optional)

Steps:

  • Stir together 2 T sour cream, green onion, bread crumbs, salt and freshly ground pepper.
  • Add ground beef; mix well.
  • Shape the ground beef mixture into one 3/4-inch thick patty.
  • Place the patty in a small baking dish.
  • Loosely cover with clear plastic wrap or waxed paper.
  • Micro-cook, loosely covered, on 100% power for 1 1/2 to 2 minutes.
  • Turn patty over; rotate the baking dish a half turn.
  • Micro-cook, loosely covered, on 100% power for another 1 1/2 to 2 minutes or until done.
  • Drain off fat.
  • Serve on toasted bun with lettuce and tomato.
  • Dolop with additional sour cream, if desired.
