Quick Hamburger, Rice, Tomato & Cabbage Bake image

Assemble the night before, refrigerate and bake.It is the same as cabbage rolls but not as much work.Correction 1 more cup of water added. Make sure you use DICED TOMATOES WITH ALL OF THE JUICE, A 29 OZ. CAN.

1 lb ground beef or 1 lb ground turkey
2 teaspoons salt or 2 teaspoons salt substitute
1/2 teaspoon white pepper
2 small onions, diced
2 eggs
1 tablespoon cilantro leaf
1 cup rice, uncooked
2 tablespoons brown sugar (or 2 tablespoons Splenda substitute with 1 tsp molasses)
1 (10 3/4 ounce) can tomato soup
2 1/2 cups water
1 (29 ounce) can diced tomatoes with juice
1 tablespoon allspice
1 whole head of cabbage, fresh and chopped
1 lemon, juice of, fresh

Steps:

  • In deep metal rectangular pan or 9x13 pan,cover the inside of pan with tinfoil, bottom and sides so there is enough lap over the sides to fold together in the middle to form a cover.
  • Remove core and chop cabbage.
  • Place in pan.
  • Sprinkle with 1 tsp salt.
  • In large mixing bowl, mix meat, 1 tsp salt, pepper, diced onions, 2 eggs, cilantro, rice, and brown sugar. Mix well.
  • Distribute evenly over the chopped cabbage.
  • Squeeze the lemon over the meat mixture.
  • In bowl mix soup water, tomatoes with juice and allspice.
  • Pour over the top. Take a fork and gently fork down in the layer of ingredients to make sure sauce goes down into the bottom to the cabbage. Do not rip tinfoil.You can refrigerate overnight but use more cooking time.
  • Remember to close the tin foil and make a fold in the top. This creates a steam pocket for the rice and vegetables to cook.
  • Bake 350°F 50 minutes or extra 10 minutes if refrigerated.

There are just some dishes that once you have tasted the first bite, take you back to childhood in a snap. My Grandfather would use a combination of breakfast sausage and ground beef while my mom always used a full pound of ground beef. Either way, this is a wonderful dish. It would surprise me to hear if anyone had any leftover for lunch the next day.

Number Of Ingredients 5

1 pound(s) ground beef ( you can be creative and use different ground meats)
3 cup(s) cooked, white long grained rice
1 medium onion, finely chopped
2 cup(s) shredded, sharp cheddar cheese ( you can be creative and use what cheeses you have on hand)
- salt and pepper to taste

Steps:

  • On medium heat cook ground beef and onion until ground beef is browned and onion is translucent. Drain grease and salt and pepper to taste. (Season a little heavier than normal - to season the rice)
  • Preheat oven to 350 degrees. In a large mixing bowl combine ground beef mixture, cooked rice, and 1 1/2 cups shredded cheese. Pour mixture in a greased 2 quart casserole dish.
  • Top with remaining 1/2 cup shredded cheese. Bake 20 minutes until cheese is melted and casserole is piping hot.
  • This is perfect with a side salad, or your favorite steamed green veggie.

1 pound(s) hamburger
1 can(s) tomato sauce
1/2 cup(s) onion, chopped
1/2 cup(s) green pepper, chopped
1 - bouillon cube
2 teaspoon(s) brown sugar
1/2 teaspoon(s) chili powder
1/4 teaspoon(s) garlic powder
1 cup(s) cheddar cheese
2 cup(s) instant rice
2 cup(s) water

Steps:

  • Brown hamburger with onion and green pepper.
  • Add tomato sauce, bouillon cube, brown sugar, chili powder and garlic powder and simmer 8-10 minutes.
  • Add 2 cups of water and bring to a boil. Add rice and let stand for 5 minutes.
  • Mix in cheese and put into an 8 x 8" pan.
  • Cover with foil and bake 30 minutes at 375º. Let stand 15 minutes before cutting.
