This recipe is from an old (maybe 1950's) Betty Crocker Bisquick recipe that came on the side of the box. The copy I have from my Mom was cut out from the box with the picture. There is no date on it but Betty is dressed 1950-1960's style I think.

1 c bisquick
1/3 c light cream or half and half
1 lb ground beef
2 medium onions, sliced
1 tsp salt
1/4 tsp pepper
1/2 tsp accent
2 Tbsp bisquick
2 eggs
1 c small curd cottage cheese
paprika, to sprinkle on top of pie

Steps:

  • 1. Heat oven to 375 degrees. Mix Bisquick and cream well with fork. Knead gently 10 times on surface lightly dusted with Bisquick. Roll dough into a circle to fit 9 inch pie pan. Ease dough into pan and fork edges. Saute beef and onions until meat has lost color. Add salt, pepper, Accent and 2 tablespoons Bisquick. Spread in a dough lined pie pan. Beat eggs slightly and blend with cottage cheese. Pour over meat. Sprinkle with paprika. Bake 30 minutes. Cut into wedges.

1 cup Bisquick, plus
3 tablespoons Bisquick baking mix
1/2 cup light cream, less if using milk
1 lb ground beef
1 medium onion
1 teaspoon salt
1/4 teaspoon pepper
2 eggs
1 cup cottage cheese
paprika

Steps:

  • Blend bisquick mix and cream.
  • Roll out to fit a 9-inch pan.
  • Brown onions and meat, drain if necessary.
  • Add salt, pepper and 1 T of bisquick mix.
  • Spread into lined pan.
  • Beat eggs slightly and blend with cottage cheese.
  • Pour over meat and sprinkle with paprika.
  • Bake 30 minutes at 350 degrees.

1 lb ground beef, browned
1 large onion, thinly sliced
1/4 tsp pepper
1/2 tsp Accent
Bisquick to make pie crust plus 1 Tbsp.
1 lb small curd cottage cheese
1 egg, beaten
Paprika

Steps:

  • Mix the beef, onions, pepper & Accent in a pan. Simmer until the onions are transparent and the meat is the consistency of that which you use for spaghetti.
  • Leave approximately 1/3 of the grease in the pan. Add the Tablespoon of Bisquick to the mixture including the grease to make a gravy. Set aside.
  • Next, mix the Bisquick and roll to form a 9" round deep dish pie pan. Put the dough into the pan. Then in a separate bowl mix the cottage cheese and egg together.
  • Put the meat mixture into the uncooked pie crust. Take the cottage cheese/egg mixture and spread it on top to make the top crust of your pie. Sprinkle with paprika.
  • Bake in a 350 degrees F oven for 1 hour. Remove and let stand approximately 15 minutes. Slice in wedges and serve with a light salad.

From Better Homes & Gardens Best Buffets Cookbook, Meredith Press, 1963, pg. 26. My husband brought home a couple of bags of cookbooks from the library book sale... I made this one and thought it was pretty tasty! Very similar to the hamburger, green bean, tomato soup with mashed potatoes recipes.

1 medium onion, chopped
1 lb ground beef
3/4 teaspoon salt
1 dash pepper
1 (16 ounce) can cut green beans, drained (I used a 14.5 ounce can)
1 (14 1/2 ounce) can condensed tomato soup
3/4 cup onion, finely chopped
2 tablespoons fat (I used butter)
1 1/2 cups sifted all-purpose flour
1 1/2 teaspoons baking powder
1 teaspoon celery seed
1/4 cup shortening
1 slightly beaten egg
1/3 cup milk

Steps:

  • For Hamburger Pie: Cook onion in small amount of hot fat till tender but not brown. Add meat and seasonings; brown lightly. Add drained beans and soup; pour into a greased 1 1/2-quart casserole. Place in 350* oven while you prepare the onion biscuit topper.
  • Onion Biscuit Topper: Cook onion in hot fat till tender, but not brown. Sift together flour, baking powder, and salt; stir in celery seed. Cut in shortening until mixture resembles coarse crumbs. Stir in cooked onion.
  • Combine egg and milk; add all at once and stir till dough follows fork around bowl. Turn out on lightly floured surface and knead gently 1/2 minute. Roll 1/2 inch thick and cut with doughnut cutter. Place circles of "doughnuts" on BOILING HOT meat-vegetable mixture; center with a few doughnut "holes"; bake in very hot oven (450*) 10 to 15 minutes or till biscuits are done. (Bake remaining biscuits on an ungreased baking sheet).
