Hamburger Hash, with it one skillet prep, combines seasoned potatoes, veggies, & hamburger topped with cheese for a simple toss together, yet filling meal!

Number Of Ingredients 11

2 Medium Russet Potatoes,
3 Tablespoons Vegetable Oil
1 Cup Yellow Onion, (Chopped)
1 Red Bell Pepper, (Chopped)
2-3 Clove Garlic, (Minced)
8 Ounces Ground Beef, ( 80-20%)
1/2 Teaspoon Chili Powder
1 1/2 Cups Sharp Cheddar Cheese, (Grated)
Salt
Black Pepper
1-2 tablespoons fresh parsley, (finely chopped)

Steps:

  • Preheat broiler to high.
  • Peel the potatoes and cut them into small cubes. Place cubed potatoes in a bowl of cold water, swishing them around to remove starch. Drain in a colander and rinse. Spread potatoes out paper towels and pat dry.
  • Add oil to a cast iron skillet and heat over medium-high heat. Add the potatoes and cook, stirring as needed, until the potatoes are fork tender and browned on most sides.
  • Sprinkle potatoes with 1/2 teaspoon salt and 1/4 teaspoon black pepper. Transfer to a plate and set aside.
  • Stir in the onions, red bell pepper and garlic to the skillet. Cook over medium heat, stirring until golden brown.
  • Stir in the beef, chili powder, and 1/2 teaspoon salt, 1/4 teaspoon black pepper and cook, breaking up any clump, until brown, about 5 minutes. Drain any excess fat.
  • Add the potatoes back to the skillet and mix in. Sprinkle cheese evenly over the top of the skillet.
  • Place skillet under preheated broiler until cheese is melted, about 1 minute. Garnish with fresh parsley and serve.

QUICK AND EASY HAMBURGER HASH



Quick and Easy Hamburger Hash image

I had hamburger meat thawed and didn't know what I wanted to do with it. Threw this dish together and it was a hit at our table. Super easy and tasty! Just add a green leafy salad or a green veggie of you liking and a dinner roll.

1 lb ground beef
1 small onion, chopped
1 tsp chili powder
1/2 tsp cumin
4 medium potatoes, peeled and cubed (can leave unpeeled if desired)
cooking oil
salt and pepper
red pepper flakes, optional
1 (10-oz) can cream of mushroom soup
1 1/2 c sharp cheddar cheese, shredded

Steps:

  • 1. Preheat oven to 350 degrees
  • 2. In heavy (oven safe) skillet over meduim heat; brown beef and onions. Season with chili powder, cumin, salt and pepper. Drain off excess oil or blot out with paper towels. NOTE: I used a cast iron skillet.
  • 3. Meanwhile in another skillet over medium/high heat, coat bottom of skillet with oil. Heat oil; add potatoes to hot oil. Season with salt & pepper and red pepper flakes. Fry potatoes until they start browning. They need to be almost done. They will continue cooking in oven. NOTE: If there is excess oil, slide potatoes to the side and blot excess oil up with paper towels.
  • 4. Add cream of mushroom soup to beef; stir to mix. Add potatoes and 1 cup of cheese, toss to mix. Top with remaining cheese.
  • 5. Bake in preheated oven for 20 minutes. Should be bubbly around the edges of skillet before you remove from oven. This time is based on all ingredients being hot before going into the oven.

water to cover

Steps:

  • Brown beef and onion in a large saucepan until meat is no longer pink. Add potatoes, bouillon and water to cover.
  • Cover saucepan, lower heat and let simmer for 30 minutes, or until potatoes are tender and water has been absorbed.

Move over corned beef, because there's a new hash in town! If you like hash, you are going to love this version made with ground beef instead of corned. Making a hash is basically a 3-step process: frying your meat and potatoes, adding onions and mushrooms, and then adding quick-cooking vegetables like peppers. But take a look in the fridge and use any ingredients you'd like because in the game of hash, whoever has the most ingredients wins! Top with a cayenne-dusted poached egg and green onions if you'd like.

2 large russet potatoes, peeled
1 tablespoon salted butter
2 tablespoons olive oil
1 pound ground beef
salt to taste
¾ cup diced yellow onions
¾ cup diced button mushrooms
freshly ground black pepper to taste
1 pinch cayenne pepper
1 pinch dried rosemary
½ cup diced red bell pepper
½ cup diced poblano pepper
½ cup thinly sliced green onions

Steps:

  • Cut a 1/4-inch slice off the bottom each potato so it sits flat on a cutting board. Cut some more 1/4-inch slices straight down and then cut potatoes into sticks. Turn sticks and cut across to create a uniform dice. Transfer to a bowl of cold water.
  • Combine butter and olive oil in a skillet over high heat until butter melts. Add ground beef and cook, breaking up with a flat-edge utensil, until crumbly, about 5 minutes.
  • Drain potatoes and add to the beef with a nice pinch of salt. Reduce heat to medium-high and cook, stirring occasionally, until potatoes just start to soften, 5 to 7 minutes. Smooth mixture in the skillet and press against the bottom of the pan to help everything get nice and crusty.
  • Stir in onions and mushrooms and add another pinch of salt. Cook, stirring occasionally, until onions and mushrooms have softened up and taken on some beautiful color, 5 to 7 minutes. Season with black pepper, cayenne, and rosemary.
  • Add bell pepper, poblano pepper, and another pinch of salt. Cook until peppers are tender and the rest of the ingredients are dark and crispy, about 5 more minutes.
  • Stir in green onions and cook for a few more minutes. Remove from the heat and serve.

This is something new that our family tried that I got from a magazine. We were surprised that we would all like it so much! It doesn't take very much time at all so it is great when time is limited.

1 lb ground beef
1 (3 ounce) package ramen noodles (I prefer beef flavor)
2 cups water
2 cups vegetables (frozen mixed veggies, thawed; peas and corn work perfect!)

Steps:

  • In a skillet, cook beef until no longer pink; drain.
  • Add noodles with contents of seasoning packet and water.
  • Bring to a boil; cook for 3 minutes or until noodles are tender.
  • Add the veggies and cook until tender, about 3 minutes as well.
  • Makes about 4 servings.
  • Here is another way to do it: Cook the beef as stated previously. During this time, heat up a saucepan of water to cook the ramen noodles in. Rather than just using 1 packet, use 2 packets of the beef flavor ramen noodles. When cooking the noodles, cook them without the flavoring. During this time, (after you drain the ground beef) add the veggies to the meat and continue to cook. As the veggies become cooked, add the two packets of flavoring to the beef-veggie mixture. The ramen noodles don't take long to cook, so be sure to watch them. When they are done, drain them, and add them to the beef-veggie mixture. The completed dish will have more flavor, and more noodles for the noodle lovers! Enjoy!
