Our homey ground beef casserole is a great choice for a busy family. A meatloaf-like mixture is topped with homemade mashed potatoes and cheese.

1/4 cup breadcrumbs , fine and dry
1/2 cup milk
1 pound ground beef , at least 85% lean
1 teaspoon salt
1/4 teaspoon pepper
2 tablespoons onion , minced
1 large egg
3 cups prepared mashed potatoes, or more
3/4 cup sharp cheddar cheese, shredded
Optional: paprika

Steps:

  • Gather the ingredients. Heat the oven to 350 F.
  • In a small bowl, soak the breadcrumbs in milk.
  • In a large bowl, mix the ground beef with the bread crumb mixture, along with the salt, pepper, onion, and the beaten egg .
  • Pat the meat mixture into a 9-inch pie plate. Bake in the preheated oven for 30 minutes. Remove the ground beef from the oven and carefully pour off the excess fat.
  • Top the meat with the mashed potatoes; sprinkle with cheese. If desired, sprinkle lightly with paprika.
  • Return to oven for about 15 minutes longer, or until the cheese is melted and potatoes are thoroughly heated.

1 pound lean ground beef
3 cups peeled and thinly sliced potatoes
1 (10.75 ounce) can condensed cream of mushroom soup
½ cup chopped onion
¾ cup milk
salt to taste
freshly ground pepper, to taste
1 cup shredded Cheddar cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a medium skillet over medium heat, brown the ground beef; drain fat.
  • In a medium mixing bowl, combine cream of mushroom soup, onion, milk, salt and pepper to taste.
  • Alternately layer the potatoes, soup mixture and meat in a 11x7 inch (2 quart) baking dish. Bake in the preheated oven for 1 to 1 1/2 hours, or until potatoes are tender. Top with Cheddar cheese, and continue baking until cheese is melted.

1 pound lean ground beef
Salt and pepper to taste
1/4 cup diced onion
4 medium potatoes, peeled and diced
1 can (14-3/4 ounces) cream-style corn
1 tablespoon butter

Steps:

  • Crumble beef into a shallow 2-qt. microwave-safe dish. Sprinkle with salt and pepper. Layer with onion, potatoes and corn. Dot with butter. Cover and microwave on high for 9-10 minutes; stir. , Cover and heat 7-9 minutes longer or until meat is no longer pink and potatoes are tender.

1 lb ground beef, cooked & drained
Worcestershire sauce (optional)
6 med potatoes
2 Tbsp butter
2 Tbsp sour cream
2 Tbsp cream cheese
1 small can corn, drained
1 can tomato soup
1 pkg (8 oz.) cheddar cheese

Steps:

  • Brown ground beef, adding Worcestershire sauce to taste. Drain and place in bottom of a 2 qt casserole dish.
  • While meat is cooking, peel potatoes, cut into small pieces and boil till soft. Drain potatoes; add butter, sour cream and cream cheese. Mash well, okay if lumpy.
  • Pour can of drained corn over top of meat, spread evenly. Pour can of tomato soup over corn, spread evenly. Top soup with potatoes, spread evenly. Top potatoes with cheddar cheese, spread evenly.
  • Cover and bake at 350 degrees F for 1 hour or until cheese is bubbly and golden brown.

1 1/2 lbs ground beef
1 cup chopped onion
1 (15 ounce) can whole kernel corn, drained
1 (10 1/2 ounce) can cream of chicken soup
1 (10 1/2 ounce) can cream of mushroom soup
1 cup sour cream
3/4 teaspoon salt
1/4 teaspoon pepper
1 (4 ounce) jar diced pimentos
1 (8 ounce) bag noodles, cooked ala dente (kluski style noodles work best)
1 1/2 cups soft breadcrumbs (I cut my bread in very small cubes)
4 tablespoons margarine, melted

Steps:

  • Brown meat and onion together until onions soften.
  • Add next 8 ingredients and mix well.
  • Stir in noodles.
  • Pour into 13 x 9 inch baking pan or 2-quart casserole dish.
  • Mix crumbs and margarine; sprinkle over top.

2 tablespoons butter, melted
1/2 teaspoon salt
1 pound ground beef
1 package (10 ounces) frozen corn
1 can (10-3/4 ounces) condensed cream of celery soup, undiluted
1/3 cup whole milk
1/4 teaspoon garlic powder
1/8 teaspoon pepper
1 tablespoon chopped onion
1 cup shredded cheddar cheese, divided
Minced fresh parsley, optional

Steps:

  • Toss potatoes with butter and salt; arrange on the bottom and up the sides of a greased 13x9-in. baking dish. This recipe is such a hit it's "traveled" all over the country! My mother originated the recipe in Pennsylvania...I brought it to Texas when I married...I'm still making it in California...and my daughter treats her friends to this "oldie" in Colorado.

2 pounds uncooked extra lean ground beef or ground round (90% lean)
4 pounds potatoes, peeled and sliced 1/4 inch thick
1 large onion, sliced
1/2 teaspoon pepper
1 low-sodium beef bouillon cube
1 cup hot water
1 can (28 ounces) diced tomatoes, undrained
Chopped fresh parsley, optional

Steps:

  • In a Dutch oven, layer half of the meat, potatoes and onion. Sprinkle with half of the salt and pepper. Repeat layers. Dissolve bouillon in water; pour over all. Top with tomatoes. , Cover and cook over medium heat for 45-50 minutes or until potatoes are tender. Garnish with parsley if desired.
