Pineapple-Orange Glazed Ham is a traditional Holiday gathering entree your guests will love. While this main course is typically served for the holidays, it's actually perfect anytime and leftovers are easily integrated into delicious weeknight meals that will satisfy your whole family.

10 lbs Ham (, whole or half (we used 10 lb ham))
Cloves (, whole (optional))
3 cups Brown Sugar (, packed)
2 cups Pineapple-Orange juice (, or plain OJ)
3 Tablespoons Apple Cider Vinegar ((more or less to taste))

Steps:

  • Preheat the oven to 325 degrees F.
  • Score the surface of the ham in a diamond pattern about 1/8-inch deep. Place cloves in the middle of each diamond (optional). Place the ham in a large roasting pan equipt with a roasting rack, cover, and tent with foil, and then bake for 20-minutes per pound or according to the package directions.
  • Heat the brown sugar, vinegar, and juice in a small saucepan until bubbly. Reduce heat to a simmer and cook until thickened, about 15 minutes.After about 2 hours of baking time, remove the foil and brush the glaze on the ham in 20 minutes intervals (put the ham back in the oven, uncovered, in between) until it's nice and glossy. Remove from the oven and allow to rest 15-20 minutes before carving.
  • After about half the calculated baking time has passed [See Note], remove the foil from the ham and set aside for later. Brush the glaze on the ham in 10 to 20 minutes intervals, returning the ham to the oven, uncovered, between each interval. Continue to glaze until the ham is fully heated.
  • Durning the last 5-minutes of bake time, set the oven to broil and caramelize the glaze. Be sure to continually check the ham during this 5-minutes as the glaze can easily burn during broiling.
  • Remove from the oven, tent loosely with the foil you set aside earlier, and allow it to rest for 15-20 minutes before carving to allow the juices to redistribute.
  • Serve warm with leftover glaze sauce poured over the meat as desired (optional).

One 9- to 10-pound bone-in fully-cooked smoked ham (butt or shank half)
1 tablespoon whole cloves, optional
Two 20-ounce cans sliced pineapple
20 maraschino cherries
2 cups honey
2 cups light brown sugar

Steps:

  • Let the ham sit at room temperature for about 30 minutes.
  • Preheat the oven to 325 degrees F.
  • Trim off any skin from the ham. Use a sharp paring knife to score through the fat in a diagonal crosshatch pattern without cutting through to the meat. Push the cloves into the ham, if using, placing them at the intersections of the cuts. Put the ham, flat-side down, on a rack in a roasting pan.
  • Drain the pineapples, reserving the juice. Arrange the sliced pineapple all over the ham, securing with toothpicks. Add a maraschino cherry to the center of each pineapple slice and secure with a toothpick.
  • Pour 1/4 inch water in the bottom of the pan and tent the ham with foil.
  • Roast until an instant-read thermometer inserted in the thickest part of the ham (avoiding bone) registers 130 degrees F, about 2 hours 30 minutes (or about 15 minutes per pound).
  • Meanwhile, combine the honey, brown sugar and reserved pineapple juice in a large saucepan set over medium heat. Simmer, stirring occasionally, until thickened, syrupy and reduced to about 3 cups, 25 to 30 minutes. Set aside.
  • Increase the oven temperature to 425 degrees F.
  • Uncover the pan and carefully brush a third of the glaze all over the ham. If the water in the roasting pan has evaporated, add more. Bake the ham for 15 minutes more. Brush with another third of the glaze and bake for 15 minutes more. Brush the remaining glaze over the ham and cook until the glaze is shiny and the skin is dark golden brown and crispy, about 15 minutes more. Let rest for 15 minutes.

2 1/2 pounds boneless cooked ham, sliced into 18 slices
Two 20-ounce cans pineapple slices
18 maraschino cherries
3/4 cup packed brown sugar
2 tablespoons apple juice
2 teaspoons Dijon mustard

Steps:

  • Preheat the oven to 400 degrees F.
  • Shingle the ham slices in 2 rows on a ceramic baking dish. Top each with a pineapple slice, then place a cherry in the middle of each pineapple ring. Cover with foil and bake for 15 minutes.
  • Whisk together the brown sugar, apple juice and mustard. Remove the ham from the oven, uncover and drizzle with the glaze. Continue to bake, glazing in 5-minute intervals, for an additional 20 to 25 minutes. Serve in the baking dish.

1/3 cup orange juice
1/3 cup honey
2 tablespoons orange zest

Steps:

  • Place ham in a roasting pan, bake at 325°F for two hours.
  • Meanwhile, stir remaining ingredients together in a saucepan.
  • Bring to a boil, lower heat and simmer 10 minutes.

GLAZE/SAUCE:
2 tablespoons cornstarch
1/4 cup cold water
2-1/2 cups packed dark brown sugar, divided
1 can (20 ounces) unsweetened crushed pineapple, undrained
1/4 cup lemon juice
2 tablespoons Dijon mustard
1/4 teaspoon salt
1 cup packed light brown sugar

Steps:

  • Preheat oven to 325°. Place ham on a rack in a shallow roasting pan. Using a sharp knife, score surface of ham with 1/4-in.-deep cuts in a diamond pattern; insert a clove in each diamond. Cover and bake 2 to 2-1/2 hours or until a thermometer reaches 130°., Meanwhile, in a large saucepan, dissolve cornstarch in water; stir in 2 cups dark brown sugar, pineapple, lemon juice, mustard and salt. I came up with the glaze for this ham using ingredients on hand and it's the best I've ever tasted. If you have any glaze left over, you can add it to the pan drippings with a little flour or cornstarch and make a nice sauce to accompany the meat. 1/4 cup GREY POUPON Dijon Mustard
1 whole boneless fully cooked ham (5 lb.)
20 whole cloves
12 maraschino cherries, drained, halved
1 Tbsp. cornstarch
1 can (20 oz.) crushed pineapple in juice, undrained

Steps:

  • Heat oven to 350°F.
  • Mix sugar, syrup and mustard until blended. Use paring knife to make shallow even diagonal cuts across top of ham in one direction. Repeat, making slits in opposite direction to form diamond shapes.
  • Insert cloves where cuts meet. Place ham on rack in shallow pan. Place cherries, cut-sides down, on surface of ham.
  • Bake 2 hours or until ham is heated through, brushing occasionally with 1/2 cup syrup mixture after 1-1/2 hours. About 10 min. before ham is done, mix remaining syrup mixture with cornstarch and pineapple in saucepan; bring to boil on medium-high heat, stirring constantly. It caramelizes to sweet perfection making this ham a family favorite that pairs well with any side dish!

2 teaspoons light brown sugar, packed
1 teaspoon ground thyme
1/2 teaspoon allspice
1/2 teaspoon cinnamon
Zest from 1 orange
1/4 cup crushed pineapple with juice
5 to 6 pound bone-in previously cooked spiral ham
1 cup light brown sugar, packed
Juice from 1 orange, about 1/2 cup
3/4 cup crushed pineapple with juice
1/3 cup bourbon* or pineapple juice (See Notes)

Steps:

  • Preheat oven to 350F and set out a large roasting pan.
  • To a small bowl, add the brown sugar, thyme, allspice, cinnamon, orange zest, and stir to combine.
  • Rub this all over the ham.
  • Tightly wrap the ham in heavy duty nonstick foil and place it in the roasting pan. Bake for 30 minutes covered. While the ham bakes, make the glaze.
  • Combine all ingredients in a small saucepan on the stove. Bring to a boil, and then reduce the heat to a low and allow the mixture to simmer on low for about 15 minutes, or until glaze has reduced in volume and thickened some; set aside off the heat.
  • After the ham has been baking 30 minutes, remove it from the oven, carefully peel back the foil, evenly sprinkle the 1/4 cup crushed pineapple and juice associated, reseal the foil, return it to the oven, and bake it covered for 10 minutes. When done, the internal temp should be at 140F. Tips - Don't overbake so your ham doesn't dry out. Also remember that the internal temp will continue to rise even out of the oven, so I feel safe pulling mine out at about 135F.
  • After this second baking of 10 minutes, remove it from the oven and turn the broiler to 500F.
  • Peel back the foil, and carefully drizzle the orange pineapple glaze all over the ham.
  • Place it uncovered under the broiler for just 3 to 4 minutes. Tip - Don't leave the kitchen and keep a very watchful eye on it so it doesn't burn! You want the glaze to caramelize but it can burn easily, in just one minute, and will taste terrible so be extremely careful and vigilant!
  • Allow ham to rest for about 15 minutes before slicing and serving. Extra ham will keep airtight in the fridge for up to 5 days and in the freezer for up to 4 months.
