DELI SANDWICH SPREAD / HAM SALAD
One of the favorite lunch items in our house is the ham salad / sandwich spread from the deli department. After my mom took a brief part-time job at a local grocery store deli and learned how the sandwich spread are made. I had to come up with a recipe so that I could make my own and know what went in it--and how old the ingredients were.

Steps:
- Any type of lunch meat may be used for this spread. I use bologna, boiled ham or a combination of both.
- run meat through grinder with the fine blade, or use a food processor and process until very fine.
- Boil eggs in advance and allow to chill for at least 20 minutes.
- Combine mayonnaise (or Miracle Whip), relish, onion, salt, pepper and eggs.
- Stir in ground meat to combine.
- Chill for at least one hour prior to serving.
- (My mom tipped me off that the way that they were able to get the grocery store version of this dish to look so beautiful, pink and fresh is that they add beet juice to it! So I add a bit of red food coloring if I am serving it on a buffet so that it looks more appealing.

LINDA'S HAM SALAD SANDWICH (SANDWICHES) OR FINGER ROLLS
These are a big hit around the holidays when having parties or having baby, graduation and wedding showers! This recipe uses left over ham from a smoked shoulder. The flavor is WONDERFUL, and so GOOD! This is a real treat! My gram always made it for us growing up, as she made us smoked shoulder quite often... I always helped her grind the meat, and that I was the "Big Cheese" getting to do that part LOL... Now I just use my blender, and it works like a charm, as long as you don't overload it. You can use chunks of chopped ham in this recipe, but it's not quite as tasty! Try some of my other delicious sandwiches: Recipe #52284 Recipe #218337 Recipe #52286

- Grind the ham shoulder with a meat grinder. You can use a blender for this also, just make sure you don't put in too much at a time.
- Put ground meat in a bowl and add mayonnaise, mustard, and relish. Mix well.
- Chill until ready to make sandwiches or rolls.
- When ready to make sandwiches, put a good amount of meat filling on the roll.
- Add a slice of onion, or as much as you want. I love making these with vidalia onions, they are so sweet.
- Put the top piece of bread or roll on, and serve.

INDIANA HAM SALAD SANDWICH SPREAD (NO HAM)
Its actually made from bologna but we always called it ham salad. This was very popular in the 1950's and 60's in Northern Indiana. A locally owned small grocery store in our little town still makes it for their deli case and regularily sells out. Mom made this sandwich spread at least twice a month and we never got tired of...

HONEYBEE HAM SALAD SANDWICH
The crowd was abuzz at the sight of this striped sandwich at the Bee Tea theme luncheon I hosted. You could substitute chicken or tuna salad for the ham salad. For a large crowd, make a "swarm" of bees and offer several choices. -Sheila Bradshaw, Columbus, Ohio
