3 c ground fully cooked ham
2 c (8 ounces) shredded cheddar cheese
2 celery ribs, finely chopped
1/3 c unsalted sunflower kernels
1/3 c finely chopped green pepper
1/3 c chopped dill pickle
1/3 c mayonnaise
1/3 c cup sour cream
1 jar(s) (4 ounces) diced pimientos, drained
1 tsp ranch salad dressing mix
1 tsp coarsely ground pepper
1 tsp minced fresh parsley
8 lettuce leaves
8 croissants, split

Steps:

  • 1. In a large bowl, combine the first seven ingredients. In a small bowl, combine the mayonnaise, sour cream, pimientos, salad dressing mix, pepper and parsley. Pour over ham mixture; toss to coat. Serve on lettuce-lined croissants. 14 points per croissant

1/2 head lettuce, diced
4 green onions, minced

6 plain croissants

Steps:

1 (6 1/2-ounce) can chunk ham
1/2 cup cucumber peeled, chopped
1 tablespoon mayonnaise
1 tablespoon parsley chopped fresh
dash black pepper
6 tablespoons cream cheese cream cheese with chives and onion
3 croissants split
lettuce leaves
3 oranges small (optional)
3 parsley sprigs (optional)

Steps:

  • Place ham with liquid in a small bowl. With a fork, stir together, breaking ham into smaller pieces. Stir in cucumber, mayonnaise, chopped parsley, and pepper until blended.Spread cream cheese on cut sides of open croissants. Mound ham mixture on each bottom half, top with lettuce, and top half of croissant. If desired, place one orange wedge and sprig of parsley on each of three wooden sandwich picks insert in each sandwich.*One cup diced ham can be used.Serve with celery hearts, olives, and a bowl of cherries or berries.
