This is an easy and tasty hashbrown and ham casserole that's perfect for breakfast, brunch or as a sidedish. You can use either shredded frozen hashbrowns or Southern style (diced) hashbrowns. The french fried onions can be substituted with crumbled potato chips.

- Pre-heat oven to 350°F.
- In a bowl, add all ingredients and mix until well combined.
- Pour into a 13x9 casserole dish.
- Bake for 1 hour or until top is slightly golden.
- Sprinkle top with french fried onions (or crumbled potato chips) and bake an additional 10 minutes or until golden brown.

CREAMY HAM & BROCCOLI HASH BROWNS CASSEROLE
a creamy, one-dish casserole that satisfies even the pickiest eaters. i developed this from a plain hashbrown casserole side dish recipe in one of my weight watchers cookbooks. i usually serve this with applesauce and green salad. the leftovers are great the next day for lunch. for anyone else on ww, each serving is 4 points.

- preheat oven to 350 F stir together hashbrowns and cheese in a large bowl add pepper and melted butter.
- mix well.
- add brocolli and ham.
- stir to mix.
- add sour cream and cream of mushroom soup (undiluted).
- stir until all ingredients are well mixed.
- spoon mixture into a 9x13 inch baking dish coated with cooking spray.
- sprinkle evenly with paprika.
- bake at 350 for 1 hour or until bubbly.

Steps:
- Preheat the oven to 350*F. Prepare a large casserole dish (mine is 12 X 9 X 4) by liberally spraying it with non-stick cooking spray. Set aside.
- Heat canola oil in frying pan over medium-high heat. Add ham, onion, and celery. Cook until onions and celery are soft. (Approximately 5 minutes).
- Combine the remaining in ingredients (except the paprika) in a large mixing bowl. Add the ham/onion/celery mixture to the mixing bowl. Stir well to incorporate.
- Spread the entire mixture into prepared casserole dish; sprinkle with paprika for some color.
- Bake 1 hour or until the casserole is heated all the way through and the vegetables are tender. Garnish with green onions and parsley, if desired.

- Preheat oven to 350F degrees.
- In a large saucepan, melt margarine; stir in flour.
- Add milk all at once--cook& stir until bubbly; cook 1 minute more.
- Remove from heat& stir in cheese& mustard.
- Set aside.
- Place half of the ham in an ungreased 2-quart casserole dish.
- Top with half of the hash browns& half of the cheese sauce.
- Spread the spinach on top of the cheese layer.
- Repeat layers with remaining ham, potatoes& cheese.
